For the flat faces part (with the jagged lines) you can select all those faces in edit mode and the hit "I", then type 0.01 or 0.005. I know in this video here you do it differently for the sculpting mode, but I thought I'd share this tip here for anyone who might need it on another project.

one tip that's a bit less confusing than compound paths for me is to select the whole letter including the hole, hit shift-M for the shape builder tool, and then you can just hold option so you see the minus sign by your cursor and click the hole to make it subtract from the shape
make sure when sculpting with the smooth brush that under brush settings direction is set to "+ smooth" not "- enhance." took me a good hour to figure out why the smooth brush was behaving totally differently for me than in the tutorial

in the sculpting part you can mirror your actions so you don't have to sculpt on both sides, only the front.
