Ingredients:
-3 guajillo Chiles
-2 chile ancho
-1 yellow onion about 1 cup
-1/4 cup garlic cloves
-2 tbsp Mexican oregano
-2 tbsp black peppercorn
-1 tbsp cumin
-1 tbsp sesame seed
-1 bay leaf
-1 lbs pork butt
-2 quarts chicken stock
-salt to taste
-lime juice to taste
(Garnish)
-cabbage
-cilantro
-avocado
-radish
-tortillas
-sour cream

YEESSSSSS! Frickin Menudo please! I grew up on that too. Pozole was only a christmas/new year soup. Menudo was life! My parents first lied to me when I was a little girl about the tripe & said it was chicken. I always asked for “chicken soup”. Then my dad finally told me what tripe was & I told him I didn’t care! 😂

My mother in law is 100% from mexico mexican. She makes THE BEST PAZOLE. Period. I've tasted other peoples. I've tried it at restaurants, but, she makes it the best.
Just wanted to say that I finally mustered up the courage to make Pozole today for mi suegra who is from Mexico. I really hope I'm successful, because I made albondigas and she liked it :) Thank you for showing me ways I can cook!!!!!!!!
My FIL is all Midwest American but he has traveled all around Mexico and made my all time favorite soup, Pozole. It was 5+ years ago and I still think about it. Such a perfectly flavorful soup!
As a mid-level culinary student, your videos are so inspiring to me. In every video you either teach me something new, or reiterate something I was taught at work or school. As always, great and informative video! And please make Menudo. We worked with tripe in butchery class a couple weeks ago, and I'd be interested to work see another way to work with it.

I was the opposite, grew up with pozole cause my grandpa prefers it over menudo. I prefer it, but if someone offers me a good menudo I'd never turn it down. Let's see the menudo matt!!
Loved menudo as a kid but started leaning more towards the pozole spectrum in adulthood. Definitely would love to see a video on menudo.

Same base, i just switched The pork for chicken and was still awesome. The lime juice at The end is what makes it truely special

I think you should make menudo. My Filipino in-laws introduced me to Dinuguon which is a pork offal and blood soup. It has become one of my favorite dishes.
If you don’t try making it for your show… you’ll never know what people think. And if they don’t like it, at least they’ve been exposed to the idea of it!

Looks so good. Tripe is awesome. You should make the video. Also Don’t you kind of want some reduction in the broth? Pressure cookers are cool for speed but besides speed I see no other advantage. I enjoy putting braises in the oven. I even cook chili in the oven now. Gets the top browned.
You def want the reduction when on the stove top. When in a pressure cooker you get to use less liquid.
@@acooknamedMatt Gotcha. I don’t have much experience with them but having fall apart meat in less than an hour is appealing.
I would love to know your approach to using that breville hob. I know you can adjust the temperature by individual degrees of heat, but does the type of pan effect it? How do you know what exact temperature to cook things at, and then memorise them? Fascinating piece of kit!
