Very helpful info. We’ve been in Argentina and Uruguay last 5 weeks so just recently started drinking Mate. We were also told to start with cold water first o activate the Mate and cut down on the bitterness. Biggest contributor to bitterness we found was the hot water. Warm water worked much better than hot water. Again thank you for the video.

Thanks so much, David. Good to hear that you're in the Southern Cone. I hope you guys are enjoying yourselves. That's right, lower temps, and the initial inclusion of cold water, will decrease bitterness. Also, try exploring mates that are naturally less bitter such as Liebig, Playadito, Union Suave, Pipore, etc. If you ever want to join our little mate group, please check t.me/circleofdrink Saludos!

The first yerba i bought was a strong paraguayan paraguayan one, definitely very dusty and bitter. The first time i tried it i couldnt drink anymore after a coulpe of sips, the next day i could drink a little bit more and with every day it felt less and less bitter - after a week of drinking it the bitterness didnt bother me at all. Going on for a month now.

I will attest. I was one who tried yerba mate, different brands at that, both smoked and un-smoked leaves. I could not stand it. I tried masking it with honey, sugar, lemon, sometimes even other spices such as anise, cinnamon, etc. I really could not palate it. Here I am ~2 years later, and I love it.
Albeit I have yet to try a good ol' gourd again. I still have my gourd and bombilla, but instead I've been french pressing it and drink it straight with nothing added. I'm afraid if I go back to more traditional methods, I will taste that bitterness again and be turned off. But for the past few months, french pressed yerba mate has been my go to for a nice caffeine boost. Never get that jittery feeling like I can get from strong coffee, and it's just pretty pleasant tasting and refreshing, even in warm weather.

bitterness sometimes can be due to
    1. putting too much yerba in the mate
    2. water being too hot
    3. leaving the water to soak into the yerba too long

mate is not bitter. not sure why people think that. its plain tasting. if it's bitter to you, it means it's good for you. your taste buds have been programmed to like salty and sweet foods/drinks. and look what happened to the people of the US ): this mate has over 195 vitamins. just drink it people!

I found out something interesting about why some people respond so strongly to bitterness. They literally have more taste buds on their tongues - there is a greater density of taste buds in the case of about 20% of people, which translates to well over 1.5 billion worldwide, or close to seventy million in the US alone.

I just weigh out 1 gram of yerba mate ground up powder. I put it in a giant capsule or 2 smaller capsules. Then just swallow it. Feel energy after about 30-45 minutes. If I'm in a hurry I just put the 1 gram of yerba mate powder into half a glass of orange juice then swallow. Either way the bitter taste problem is eliminated. I've been consuming yerba mate like this for about 15 years. Good luck & have a great day all!
