- STIR FRY Sauce For Everything | BASE Sauce For MEAT | NOODLES | RICE
Here's our base stir fry sauce that we use in the restaurant, you can use it by itself for noodles meats and veggies to save time at home. Or you can add extra ingredients such as chilli and basil for gaprow. Just 3 or 4 Tbsp will make every dish taste amazing.
Here's the recipe:
300ml Oyster sauce
100ml Thin soy sauce
3 Tbsp Sweet soya sauce
4 Heaped Tbsp Coriander, garlic, and black pepper mixture prepared in the pestle and mortar ( check out our chicken wing video for how to do this)
• THAI chicken WINGS fri...
1 Large Tbsp Palm sugar
100ml water
some vegetable oil
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.
Good luck and let us know how you get on.
Enjoy!!!!!!!

Going to try it in a couple of hours, have been looking for a decent base sauce for my stir fry. Edit a day later , I made it and it’s fantastic and stored in the fridge for next time I make a stir fry . It’s going to be used a lot in my house the way it sticks to the broccoli and other veg is so nice 👍
Sweet let us know how you get on
@@FitousThaiKitchen I have edited my original comment 👍 and it’s definitely a winner
@@paulb8603 Good job Paul, glad you enjoyed it 👏
Looks good, I’ll have to give it a try. The Thai Maekrua brand of oyster sauce is what I use for my Asian cooking, though my recipe developed after tweaking recipes of marinading/noodle/stir fry sauces for East and Southeast Asian dishes has more of a Chinese flavor profile that can be modified with kecap manis (sweet, dark Indonesian soy sauce) and sambal terasi added to be suitable from Malaysian/Indonesian dishes. The basic ingredients are sesame oil, Chinese black vinegar, shaoxing rice wine, superior light soy sauce, dark soy sauce and oyster sauce. For marinading, oil and tapioca starch plus a drizzle of water is added.
Nice sounds good Scott, we have a lot of Malaysian customers and they certainly prefer a sweeter profile for their sauces.
Thank you for sharing ❤🎉

You're very welcome, Antonia. Thanks for watching.
Tried this today, and was very good. We added Galangal and Chinese Five Spice, and then replaced the Coriander Roots with it's stems instead (a lot of it!!). Also replaced Water with home made Chicken Stock, and added some aged Dark Vinegar. This will definitely be a go-to for us!! Thank you.
Sounds great, I'll have to give that a go.
Delicious.
It was!
Lovely!
Thanks Mark, thanks for the support.
I know how to make this sauce but the idea that it CAN be prepared and kept in fridge never don on me. I think I'll make it for my daughter who doesn't know how to cook Asian food.😄
I see 3 Buddies, palm sugar, sweet soy...I like it. I think I would sub out the regular soy for a quality fish sauce. Definitely going to try a variation on this with the Thai chiles I'm growing.
Cool let us know how you get on
Will be making this for sure.

Is sweet soya sauce different from sweet soy sauce. The bottle I found says sweet soy sauce and same brand and video. Thanks for sharing!
Exactly the same, just different spellings between the USA and Europe. Thanks for watching.

I try to give thanks every day.
Looks delicious
Thank you Micheal check out our other sauces, for more options.
Can you use with fried rice
Yes definitely just use less, maybe just a Tbsp, depending on how much rice. Add it bit by bit. Thanks for watching.
Wow yummy and delicious ma'am. Beautiful sharing. I'm a new support ma'am.ka tons vlog po.and full Watching nrin kta idol ❤
Thank you Antonio, thanks for your support
So if you’re doing a stir fry, at what point do you add this. From the first? Having cooked the stir fry, into the wok? Or in a bowl to add after serving?
Hi John, you can either use it as a marinade for your protein and then add a bit of water, or you can add it directly to the wok once your protein is almost cooked.
Where do you find coriander root? I love Asian food And have Eaten quite a bit of authentic Japanese and Chinese.
Difficult to find that's why for a lot of recipes we have to use the stem of the plant. Otherwise grow some 😉
How much corriander to put in?
As much as you like or you can follow the link for the chicken wing recipe
When using the sauce in stir fry dishes, do we have to add water ?
Thank u.
No unless the meat is drying out a bit or you want to flesh the sauce out a bit more or you want the consistency to be thinner. Thanks for watching
I know it smelled good in that kitchen
Definitely, it's always smelling amazing
Do you have the written recipe (not the video)? Thanks
I'll put on the description today or tomorrow and place it on here as well.
I have been unable to find Coriander root anywhere, and I live in Seattle a pretty big city. None of the Asian or even specific SouthEast Asian markets carry it. What can I use as substitute, will powder coriander root spice work?
You can use coriander stems and the leaves as a substitute, the flavour won't be as strong but it will still taste great. In the UK you can find it in asian supermarkets but it's expensive.
Thanks madam I am Indian I like Chinese food
Can you put this in the freezer too?
Yeah definitely, I'd use an ice cube tray, couple of cubes would see you right
The coriander , did she use the roots or just the stems?
She used the roots but you can use the stems instead if you cant get the roots.
Love Oyster sauce, unfortunately I have become extremely allergic to shell fish. Any substitution ideas?
Yeah, definitely, you can get vegan oyster sauces that are made from mushrooms. You can use the one in this recipe

@@FitousThaiKitchen OH MY GOODNESS I HAD NO IDEA! THANK YOU, YES, I AM SHOUTING!!!!!! FOR JOY!!!!
I would add chilli
Me too! The great thing about this sauce is that it's your base sauce, then depending on the dish you're making you would add different ingredients such as Chilli, lemongrass, ginger etc. Enjoy and thanks for the suggestion.
Is the coriander fresh green or coriander seeds
Coriander root is best otherwise fresh coriander stems and leaves are fine.
A delicious sauce made with soy sauces...
Thanks for watching
What brands did you use
We used Maekrua for the oyster sauce, and Healthy Boy for the sweet soy sauce and light soy sauce.
Thank you Fitous Thai. Much appreciated
You're very welcome Jane
It smells and tastes delicious, even through my iPad 😅
Hahaha I'm sure it does Tony
Where do you get these ingredients?
Depending where you live, most decent Asian supermarkets will have them. In the UK, most large chain supermarkets will have some options. If you're in a remote location with no options, then amazon will have options for you.
*W Ymmmmm..* 😋😋😋
It really is, give it a go
Same base sauce, do they have the same taste😊
Sorry i dont understand your question
Fill a 2-liter bottle, with that sauce, in the fridge!!! Thank You! Good job!
Great idea!
You mean if it’s for everything, that means including vegetables stir fry as well? Thanks.
Yes exactly!
Hi, pardon my ignorance, can we use coco sugar instead of palm sugar? Or any recommended substitute in the absence of palm sugar? Thank you.
Yes, absolutely, in fact coconut sugar has more nutrients, is healthier and is less processed than palm sugar. If you don't have either if these you could use brown or white sugar just use it sparingly.

Thanks for your speedy reply, greatly appreciated. Thanks for sharing your knowledge.
Eagerly watching from The Philippines. ❤️
@@vgcdigitalworld8494 you're very welcome, we have a lot of Filipino customers here in London, thanks for your support.
@Fitous Thai Kitchen Thank you. I have coconut sugar. Don't know where to find palm sugar. Could I use coconut oil, as well? Don't use so-called vegetable oils. Very unhealthy.
@cherylforfang8671 coconut sugar is fine and is actually better for you so is coconut oil. I also prefer coconut oil, but unfortunately, it's not financially viable in a restaurant. In fact we used coconut oil in our latest video that will be released on Tuesday. Thanks for watching.
👍👍👍💖
Thanks for watching
Xo sauce next please
Xo sauce is not really a thing in Thailand, but we'll see what we can do.
Iam not a fan of coriander.
What could I use instead
If you don't like coriander, no need to use it, the coriander is used to enhance the smell more than anything else. enjoy, and thanks for watching
@@FitousThaiKitchen
thank you 🌹
ok
When base is done, cooked and mixed add sweet chilli sauce as main ingredient and some lemon juice mixe cooke and enjoy .
Add sweet chilli sauce? Okay not my thing, but how did it work out?
Just try and see for yourself
If it works for a busy restaurant, it must be good
I have never been able to find coriander root at any of my local Asian markets. They are all small markets with very little fresh produce.
Yeah, you can either grow your own or just use the stalks that are somewhere in between the leaves and the roots. You can find roots in London but as you say sometimes the quality Is poor and its expensive.
Just grow Cilantro and let it go to seed. Now harvest and rinse to be roots well
Yup good advice
Coriander root?
Yes Barbara the root of the coriander plant, the Root has a different flavour to the stem and the leaves, the stem also has a different flavour to the leaves.
Find out more here:
thaifoodparadise.com/what-is-coriander-root/
I wish the recipe was actually IN the video or description.
It is in the video
What is thin soy sauce
It's the same as light soy sauce, some brands label them as thin and some label it as light. It will be the same as the one that you find on the table of most Asian restaurants. Thanks for watching.
