- So here it is, we've had requests for us to post our recipe for CHILLI OIL. Here it is in all it's glory. Hope you enjoy this recipe for Probably The BEST CHILLI OIL Ever
These amounts will give you a fairly large containers worth of sauce, if you want less just halve the amounts.
Here's the recipe:
400g Shallots
500g Dried chilli
400g Garlic
400g Dried shrimp
1.5-2 Tbsp Salt
50g Coriander seeds
1L Rice bran oil for deep frying
200ml Rice bran oil to use in the blender
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

That looks sooooo good. At my local Thai restaurant I found that if you put this in the coconut soup it's great. Also if you can find a batch that has sat for about a week or two or longer, the oil part of the mix gets more and more red... if it gets too red it's too hot, but a perfect red-orange oil is the best. Noodles, fried rice, soups, you name it. I'm for sure gonna make this recipe. Thanks for sharing!

THAT RICE BRAN OIL IS HARMFUL WHAT ARE U TALKIN ABOUT?
@@ohigho9717 soory if i sounded rude i wasnt saying it in that way, i should have took off the caps, but i was only saying it in a joking way just being friendly. But in my opinion i would use maybe a different oil option, i never knew some oils are harmful than other and they cut them with other cheap oils. But again about the comment sorry.
Why would you not use rice bran oil? As someone else mentioned please put your point across in an informative way rather than just saying it's harmful. Here are a few points to consider when choosing an oil.
1. You want a high smoke point, so that you can use it at high temperatures and for frying. Rice bran oil can be used in this manner.
2. You want an oil high in polyunsaturated fats and monounsaturated fats, these are the good fats that can lower cholesterol and decrease your risk of heart disease and type 2 diabetes. Rice bran oil is higher in polyunsaturated fats than olive oil whereas olive oil is higher in monounsaturated fats.
3. Rice bran oil is high in vitamin E meaning there is greater antioxidant activity than olive oil.

I was introduced to the wonder that is chilli oil when covid lock-down started. I have been trying various recipes since as I’m addicted to it. I’ve never seen a recipe using the dried shrimp and the roasted coriander seeds. So I can’t wait to try this at home. I stocked up on fresh Lady Bird chilli a few months ago and dried it myself in anticipation of making homemade chilli oil with only Thai chilli (I can’t find Thai dried chilli where I live). Thank you for sharing your recipe, it looks wonderful. ❤ Alberta 🇨🇦.
you can find some on amazon that I think are quite expensive, otherwise check your local Asian supermarket. Let us know how you get on Sarah, or get some Thai birds eye chilli and dry roast them yourself.

Thanks for sharing the recipe. I make my own chili sauces too. The dried shrimp ingredient is a great idea to add flavors to the sauce. I don't know about dipping already oily shrimp crackers in the oily sauce - too much oil on the bite. Best use of the sauce is in noodle soups and other less oily dishes so you get a nice balance.
It was all I had to hand lol, I actually like it with aromatic duck
It's a side dip and not a soup. Try eating a large soon in a mouthful, most folk would regret it.
It looks like it's done with a lot of love.

Chilli oil is a favourite, have two types in the fridge right now, I add it to way too many foods! (Lasagne works superbly!)

I always put chili powder in my pasta sauces and/or drizzle chili oil (different kind) over it, so this would most likely work as well.
Definitely, I love chilli powder and chilli infused olive oil, on my pasta.

fantastic! thank you for sharing :). it has the exact color and consistency i like to see, sends me drooling! question... are the dried shrimps rehydrated before frying? I've heard they need to be rinsed and soaked, as part of its prep for recipes.
No need to rehydrate before frying, sometimes for namprig pao some recipes call for the shrimps to be dehydrated, but it's not really necessary. Glad you enjoyed the video.

Yes, Sue, any kind is fine, we used rice bran oil as it's better for you than seed oils.

Looks like KRUPUK, aka Shrimp Crackers, are used to dip into chili oil at video's end.
I L❣️VE krupuk (kerupuk, shrimp crackers, but they're really a side interest; an auditorially textural side-entertainment that comes with shrimp 🦐 flavor. Crunch. Yum.
I agree with another commenter that dipping a fried dipper into an oily "dip" is excessively... oily
Yes they're krupuk, and as previously mentioned I didn't have anything else to dip into it at the time. Short of taking a spoon of it, thought a cracker would be the better option. I also love krupuk 🙏

I made this at home, and cut the recipe in half. 250g of chilis was way too spicy. I used only 100g and thats still quite hot for me. Next time I make this, I will try 50g of chili
I cook noodles with a chill garlic ginger scallion base plus light soy dark soy and oyster sauce plus a few other things,
I've been looking to make a pre made version as I don't always want to peel all the garlic and alot her stuff especially as I add loads of garlic, usually a whole head and a large piece of ginger,
I'm thinking of modifying this recipe but I'm not sure weather I should only do the ginger garlic and onions and chill and throw the sauces in as well after they've cooked,
It would be nice to have the whole set up pre done in 1 jar for late night noodles as I often pre cook the ground beef/chicken and bag them and throw them in the freezer,
