BENIHANA’S CHICKEN FRIED RICE Recipe | Wok With Me

    Ingredients:
    - 2 cup white rice (cooked)
    - 4 oz chicken breast (boneless, skinless)
    - 4 tbsp garlic butter, plus more to taste
    - 2 eggs
    - 1 cup onions
    - ¼ cup carrots
    - ¼ cup green onions
    - 2 tbsp soy sauce
    - 2 tbsp sesame seeds
    - Salt, to taste
    - Pepper, to taste
    Garlic Butter Ingedrient:
    - 8 tbsp unsalted butter
    - 4 cloves minced garlic
    - 2 tsp lemon Juice
    - 1 tbsp soy sauce
    Steps:
    1) The day before cook/steam your rice according to your brand’s instructions.
    2) Spread your rice out on a plate or sheet pan and let your rice dehydrate overnight in the fridge.
    3) When ready to cook, make the garlic butter by mixing 8 tbsp room temperature butter, 4 cloves minced garlic, 2 tsp lemon juice and 1 tbsp soy sauce.
    4) Cube your chicken. Clean your knife and cutting board.
    5) Dice up your onions, carrots and green onions.
    6) Heat oil in a wok/pan.
    7) Add your cubed chicken breast and fully cook it. Season with 2 tbsp garlic butter, salt and pepper. Once fully cooked, remove and set aside.
    8) Heat oil in a wok/pan.
    9) Sauté your onions and carrots until golden brown. Remove and set aside.
    10) Heat oil in a wok/pan.
    11) Add beaten eggs to the hot wok/pan. Scramble them until slightly underdone.
    *Eggs are added to the hot wok first to prevent the rice from sticking to the wok/pot.
    12) Add white rice (1 to 2 days old). Use your ladle or spatula to break apart and spread the rice grains. Mix everything via flipping or using your cooking utensil.
    *Fresh rice is too moist, clumpy and has a soft texture. If all you have is fresh rice and your fried rice addiction is too strong, I recommend spreading the rice out on a sheet pan to cool down and dry for half an hour. The rice should be cool to the touch before adding.
    13) Add your cooked chicken breasts. Mix everything via flipping or using your cooking utensil.
    14) Add your cooked onions and carrots. Mix everything via flipping or using your cooking utensil.
    15) Add your green onions in the last minute or 2 of cooking. Mix everything via flipping or using your cooking utensil.
    16) Add 2 tbsp garlic butter (plus more to taste), salt and pepper.
    17) Add soy sauce. Mix everything via flipping or using your cooking utensil.
    18) Top it off with sesame seeds. Enjoy! Please like, comment, share and subscribe!

    I did my best with an electric wok. It was my first time. It actually turned out pretty darn good. I think the garlic butter is a silver bullet

    I haven’t tried this yet but this is the best I’ve seen so far as far as steps in adding ingredients don’t think I will try flipping the wok or my food will end up on floor

    Looks very good...ive eaten at bennis probably 75xs, only difference i see is your carrots arent cut quite as small. Wish i had that outdoor flame cooker, that thing is awesome.

    Superb video. Could you please do a video on your cooking setup? Like the cooking rig you have and how many btu's it has? I've tried making fried rice and it comes out soggy. Maybe not enough heat, too much oil or the rice wasn't old enough? Anyways, thanks for the video.

    Another great vid! Thanks for sharing Matt. Any tips you can give us on how you prepare your white rice for making fried rice? Also, curious what kind you use?

      Absolutely and thank you! I use medium grain Jasmine rice. I cook it the day ahead, let it cool for an hour in the pot and then transfer it to baking sheets. Then I let it dry on the counter for a few hours and then move it to the fridge uncovered to dry overnight. A few hours before I'm ready to cook, I take it out, let it come back to room temp and break the clumps into individual grains with a rice scooper.

    Hi! I just got a new carbon fiber round bottomed wok, and was wondering what burner you use. I also was wondering if propane or natural gas is better for wok cooking! Can’t wait or your feedback!

    Matt, if I screwed up on the rice and need to make a new batch of dried rice fast, after cooking what's the best way to dry it quickly?

      Layarion leave it spread out on a plate like he does and air flow...like a fan 😉 in about 1 hour should have that dried texture you need to keep rice from becoming broken or mush. 💜

    What is the purpose of adding a ladle of oil to the wok and then dumping it back into the metal container?

      When we cook with a small pan, most of us pour a little oil, pick up the pan and twirl it spread the oil around. With a heavy wok, using the ladle and dumping the excess is a safer and more time-efficient way of spreading the oil around the wok (:

    Pro tip. Roast garlic in oven at 325 for 30 minutes and then mash garlic before adding whipped** butter

      It's a hollow handle so it dissipates most of the heat. It'll only get too hot to handle when you cook a lot of food for extended amount of time. And thank you 🙂

    Hi Matt i'm just curious but can you tell me what gas type you are using,,I'm assuming it's propane...I'm learning a lot from you as regards to technique etc..Takes years and years to get to that level hopefully someday I can be half as good...Again another quality dish.. Just wish I was there to sample some coming straight of the wok...

    ok i have to ask, why are you putting oil on, and then dumping that same oil...but then putting that same oil back on?

      The initial oil is to coat the whole wok surface with oil and then you dump the extra oil back into the storage container. That way you don't have to put a little oil, pick the heavy wok up and turn it to spread the oil. It's a faster and safer way to spread the oil around the wok (:

      Pan frying chicken directly on the wok can get pretty sticky. It takes a lot of patience so we just did it on the nonstick
