    Why not par cook the meats first and then use the rendered fat to roast the potatoes? Seems like a lost chance to add flavour

      You could totally do that. Just toss the potatoes in the chicken and sausage fat instead of olive oil. May have to adjust your salt level.

    If there was a timer, or a clock at the bottom left side of the screen, just to give an indication of how long something was, say, fried.

      Yeah, raw ground pork's still gotta get up to 160F.

      Color is not a good indicator of whether a sausage is cooked. Ground meat in sausage does not always change color when cooked - so long as it has reached a temp that kills bacteria, it is still safe to eat. If the meat has browned prematurely, you would not be able to tell by color when the sausage is cooked.

    I literally have nothing against guys wearing nail polish. At all. But coming from the service industry, any time i see someone on the line cooking with painted fingernails... I cringe. Hard. Recipe looks great tho.

      I'm sure they used meat thermometer on it. You don't have to overcook sausages just as long as it's in the right temperature range you're okay. You don't have to make your meat turn into charcoal.

      @@givememore4free Right, I get that, and I understand that they lowered the min cooking temp on pork recently, but that's ground pork sausage, that pink in there would still make me nervous. It can be cooked fully and still juicy without being charcoal.

      I'm not a fan of pink inside sausage. I don't incinerate mine but I brown them outside &no pink on the inside. that's just me. my aunt likes them pink &isnt dead yet so I'm sure it's safe lol

    I made it last night. Used boneless skinless thighs and turkey Italian sausage (out of laziness on both). It was FULL of flavor and very easy to put together. Loved it and will absolutely make it again!

      nopes. I'm Italian& planning to try mine Ricks way next.
      the way I do it normally, my potatoes usually get kinda mushy &my sausage ends up a bit overcooked. next time, the potatoes are going on a sheet pan &ima add the browned sausage towards the end.
      I'm not too proud to learn new trix!!!

    Something I've noticed with a lot of Rick's videos is that he rarely mentions what times and temps he's using. I know it's all in the written recipe, but it would be nice to have in the video too.

      Oven temps are normally 350 for most recipes.

      @@slimydick23 if its a gel mani, it won't chip. also this isnt a commercial kitchen.
      I wear nail polish& have NEVER once got a chip in my home cooking. there is such a thing as being careful &observant. ugh ffs

    I could never work there because I'd be fatter than I already am. I will try this dish because the garden is pumping out the peppers this time of year. (I also make a lot of fajitas this time of year too)

    1:28 Doesn't the FDA Food Code specify that anybody wearing nail polish in a professional kitchen MUST wear gloves when handling food?
    Granted, this isn't meant to be served in a commercial manner per se, but Rick still seems to be sacrificing basic professional safety habits just to peacock.
    Food looks good though, so that's something.

    I'm so curious about Rick's mani. When I was in a kitchen, Chef would lay into me for having a scrap of polish! Is it gel? I gotta know!!! (Plus the colours great so like, you know, slide me that colour name)
