Also found my love for thrift store shopping and in turn, found a bargain dutch oven that ive recently been cooking with. I decided to make this for my family today. All I can say is delicious, the meat was so tender and juicy. Better than a restaurant lamp shank by far. Thank you Mike.
Amazing! This guy is a culinary genius. You can tell he cooks from the heart. Is the reason you only lightly brown the shanks in the dutch oven because they're going under the broiler later? Have you experimented with browning them more initially to add more fondue to the sauce?
I have experimented with more browning and found this method to work best for me especially if using the broiler in the end. I go the extra distance on the broiler primarily to add a little crispyness to the edges.

Lol, I was in a Greek restaurant two months ago and ordered the Lamb Shanks. When the waitress bought my order, it caught the attention of a gentleman at the next table. When he ordered his, the waitress told him I had the last one.
Looks delish!!*! It looks like it needed to cook a little longer though. If it had truly been fork tender, you could’ve pulled the bone out without any resistance.

Should have browned those shanks for way longer. They were not brown they were sort of pale gray. Browning is flavor!

I try to buy lamb shanks from our local grocery store here but they don't have even a fraction of meat on the shanks. Your dish came out amazing BTW.

Should not need broiling. Just be sure to correctly caramelize those shanks. Remember you pour the souce over the shanks when done anyways.
