    I just love the vibe of this restaurant, from this video it seems like people regularly visits the place but it's also never get too crowded, which is perfect. Just a peaceful and cozy restaurant.

    What I really admire about this kitchen is how quiet it is, no screaming chefs hurling abuse at eachother, just experts calmly getting on with their tasks. Just goes to show that you don't need abuse and military style discipline to make amazing food.

      I think it's partly because a lot of those dishes are really simple and don't require as much coordination to make as many other dishes.

      Military style discipline as you say is required when everyone in the team isn't doing the best they can. Japanese ppl in general only do what's required of them and they do it well. They discipline themselves, and when everyone works to the best of their ability, the end product becomes miraculous.
      Plus, more japanese dishes require a lot of experience. Experience that's only gained by ppl putting their heart and soul into the food, all day. This makes it almost guaranteed that a GOOD japanese restaurant, is a DAMN GOOD restaurant by global standards

      I just googled the website of the restaurant and "translated" some of the prices. It's not that expensive, to be honest. The most expensive item i found was an 8 course meal, wich is around 65 Euros. I mean, that is money, sure. But for eight lovingly prepared courses that seems more than fair and is far away from the pricerange of the majority of the MIchelin-starred restaurants.

    I really enjoy watching chefs at work like this without commentary or cutaway for interviews. I don't understand a lot of the prep I'm seeing, but it's still amazing seeing the love and effort they put into their prep and service.

      @@evanjones3826 in a professional kitchen, pans get used a lot and will develop a seasoned-look or patina. Cast iron or carbon steel will have it. It’s not something that washes off. If a restaurant has pristine pans, they either just opened or they will close soon.

    This is Japanese culinary art & craftsmanship at it's best. The devotion to craft, the masterful precision, the attention to detail and refinement, is amazing. I don't care if it doesn't have michelin star, because it certainly should have it.

    They grind their own flour! Watching a master of their craft in any field is a satisfying experience but the fact that a restaurant is blending and grinding their own flour blows me away!

    The way he prepared the eel is what blew me away most in this. Everything else I could have a crack at (even the noodles) but he handles that eel in a way that must take years of practice.

    This restaurant doesn't have a Michelin star, it's just featured in the guide which is a huge difference

      @@L337Kelly getting into the guide means it was reviewed or considered by one of their reviewers as great. You still have to be good but it isn't a rare prestigious award. To get even a single Michelin star is many of their reviewers agreeing together based on many meals and full consideration of what the restaurant has to offer. Getting a single star let alone two or three is a rare and exclusive thing.
      Now don't get me wrong, being featured in the guide is great and I'm sure this place is awesome. Even many places featured in the guide have gone on to be awarded stars after further consideration. Just pointing out being one of many featured in the guide isn't the same thing as having a star.

      @MogwaiInjustice True, though 1 Michelin Star is a reward that can be debated as prestigious. Since the Michelin reward is definitely not distributed equally in countries like Japan.

    I lived in Japan for 5 years (mainly around Tokyo) and I have to say, the food is the best I’ve ever had. I think the reason is that the Japanese take such pride in their work in restaurants. I’ve never been to this place though, it looks great.

    Ça a l'air très bon et plutôt "exotique" pour un français comme moi. Il y a plein d'endroits qui ne paye pas de mine et où la cuisine est excellente. C'est une bonne chose de les mettre en avant.
