Similar to something I have been doing for years - I cook up onions, carrots, sometimes some canned pumpkin, or chopped squash, and some red peppers. Cook it for 15 minutes, add tomatoes and cook for a few minutes; then puree. Kids have no idea there are veggies in it and they eat it.
Until they are cooked to your liking, that will be different each time , for each person, lots of factors in play there. You dont have to cook the veggies in large pieces like this, but it does have an effect on the flavor. You can dice and saute them as well.
Although I forgot the red peppers, I made a version of your sauce with minced chicken. It was wonderful. Cannot wait to make this with the peppers. Thank you!!!
Until its done my man, jk, depends on what you want and how, open lid, closed lid...in the video he says 200c, i wouldnt leave it longer than 15 mins with no lid that way, skip the oregano too thats little kids stuff
Jamie or anyone still responding to this post, can you tell me if adding mushrooms or olives would be OK, or would they not be compatible with the taste of the other vegetables? I love both mushrooms and olives in my sauce.
Absolutely.... just about any and every vegetable, including pumpkin... these tomato sauce from scratch dishes seem intimidating but really theyre hard to screw up

I think minimum would be 15 mins, it must cook and sugars out of vegs.
The longer the better, when I do it I leave them in for at least 30 to 40 min at a slightly lower heat
