Peruvian here, you did pretty well! Mixing Tiger's Milk with Pisco is veeeery traditional but rare nowdays in Perú, but Panther's Milk is actually made with the juice of Black Clam ceviche (is black, like a Panther). Love your channel man, keep it up!

I love red onion & have never found them to be bitter. That being said, I'm going to try removing that center and giving them an ice water bath. I'm interested in tasting the difference. Thanks for the tip!

I had Ceviche at this amazing little Peruvian restaurant in Patterson NJ, where they didn't even speak English, and it was even better than most Michelin star restaurants. It had a ton of PAPER THIN sliced red onions, piles of super thin slivers of very hot chilies, and was completely drenched in lime juice. The Ceviche in your thumbnail doesn't even look close - onions way too thick, and, not enough variety of fish/octopus/squid etc.

Snowydaze - that totally makes sense with the parsley and habanero but those could easily be substituted with cilantro and rocoto (if avail). What about the aji though? I know the aji Amarillo isn’t a staple for Peruvian ceviche but I have seen it made with that before in Peru. The difference however was they ground those peppers into a paste fresh which I’m sure is even that much better! This seemed like the best sub for getting a hint of that Peruvian pepper flavor although I know it can be made without.
It is a peruvian american ceviche, peruvian ceviche doesnt have that kind of sweet potatoes, no parsley, no habanero, our sweet potatoe should be steamed, you can use cilantro and aji limo or rocoto instead, but your video was nice,
