Our cookbooks link: www.bonitaskitchen.com/cookbook
Ingredients:
1 pound lean ground beef ½ pound ground pork or turkey
2 tbsp flour ½ tsp black pepper
1 tsp sea salt 1 tsp onion powder
1 to 1½ tsp garlic powder, or fresh clove 1 tsp ground Italian seasonings
½ tsp ground coriander 1/8 tsp cayenne pepper
Method:
In a bowl, add all ingredients and work it together by hand or by a mixer with hook. After knead seasoned meat with hand by folding the meat to work it more together and all combined.
Do this in the bowl or on the counter.
You will need 8 x 4 inch pan, 1 metal skewer, foil wrap.
First, take the meat and put on foil wrap and form a long rolled log. Wrapping with foil. Take the metal skewer and poke through both ends, then pinch the side around the skewer and put in the fridge for 1 hour to overnight until all seasoning got time to marinate and the spices build more flavours.
Then remove from fridge and place on 9 x 6 inch pan, long ways so skewers are resting on the sides.
Then preheat oven to 350ºF and place pan on centre rack and bake for 1½ hours or until baked. Depending on your oven! Internal temperature is 180ºF
When baked remove from oven and place on cooling rack for 5 minutes or until room temperature, this would be easier to shave small slices of meat from donair log.
Or bake in the Air fryer if you have a rotisserie attachment, set unit to the rotisserie temperature and start.
Cook until the internal temperature is 180ºf and baked.
Then put donair log on your cutting board, let rest for 5 minutes. Then thinly slice long ways.
Serve on flat bread, taco wraps, or regular bread, chopped tomato, raw onions and slivers of lettuce.
DONAIR SAUCE
Recipe:
½ cup milk ½ cup water
1½ tsp garlic powder ½ tsp sea salt
1 tsp canola or vegetable oil 2 tbsp cornstarch
2 tbsp vinegar 2 tbsp white sugar, more to taste
Method:
In a small saucepan on medium heat, add milk, garlic, sugar, sea salt, oil and slow mix together.
"Then a vinegar and whisk well. "
Then add to a measuring cup water and cornstarch, mix well and slowly add to saucepan stirring until thickened.Taste sauce and add more sugar or garlic to your taste……
Bonita’s Special Note:
This recipe is a viewers request, it’s not a NL traditional recipe but it have been available here in a few restaurants for over 30 years or more. The younger generation got use to this spicy seasoned meat served on flat bread and topped with a sweet donair sauce. This is not anywhere close to the original donairs and sauce recipe, but a mixture of spices that taste close to the donair I remember eating. Enjoy!
I apologize in advance if anything in this video is not clear or misread, please follow my recipe when making this dish.

Thank you so much for this, we also discovered you can make Donair Sauce by using 1 can sweetened condensed milk, ¼ cup vinegar and ½ tsp garlic powder, stir well, refrigerate overnight. Delicious
Thats lovely and I can see that working great, but if you don't have condensed milk just follow our recipe. Please check back after you make it and let know what you think. :) Bonita
@@bonitaskitchen I will because your way would be a lot less sugar
Making it with condensed milk is how I do it as well, it’s so quick to put together!
@@ShaunBMcKinnon it definitely tastes good and much better anytime it is made at home.
This is the way I learned to make it as well
That looks great. I always have a hard time eating donairs … I finally just started eating them open on a plate with a knife and fork.
So good I had to watch this again! Thanks again Bonita and Raymond !!
Aw!! So lovely and thank you for doing that. The taste is so lovely and it's hard to only have one donair..... Enjoy to the fullest!! :) Bonita
learning something new today - never heard the word donair before! Looks good 👍
Nice! I'm glad to help. This was a viewers request recipe and a tasty way to make donairs at home. Of course in restaurants they are made on a rotisserie and much bigger and cooked longer. This is just a small batch and a tasty meal. I hope you get to make some and enjoy. :) Bonita
definitely a Nova Scotia/Halifax delicacy. There are even donair pizzas that are fun too!
Donair pizzas are great!
Donair pizza + garlic fingers is life. I miss it so much living in Ontario
Your presentation is just so great ….looks delish…..never saw it made in a home kitchen….thanks so very much. Massachusetts
Thank you and I'm so glad you enjoyed our NEW recipe. Homemade is always the best and you enjoy! :) Bonita
A very unique recipe. I too had never heard of a Donair. Here in Chicago the loaf would be a beef/lamb base with a thick Greek yogurt 'savory' sauce served on a pita bread. I'll definitely give this one a try. The sweet garlic sauce sounds interesting. Thanks for sharing the tasty goodness.
Thank you so much for stopping by, this is not a traditional recipe but one that have been around in our area for the past 20 years or more. The younger generations have enjoyed this type of sandwich for quick and tasty lunches and meals. It is very tasty and can be served on pita bread or between two pieces of bread. I hope you get to make some and enjoy. :) Bonita
Thank you for introducing me to something I hadn't even heard of. Definitely need to try this. Like another viewer said, it reminds me of a Greek recipe.
Yes indeed its a lovely recipe and not our traditional food. It was from other places and have been introduced to our cultural in restaurants and grocery stores. Our younger generations have enjoyed this type of fast food here for many years. This is just a recipe I put together for anyone to try making it at home for a taste of what it is. This was also a viewers request to help them make it at home to share with their friends and family....... Enjoy Bonita
This dish is unfamiliar to me. Looks so good!! Thank you..
You are very welcome and thank you for stopping by. Enjoy Bonita
Love you Bonita! I grew up in Sydney, Nova Scotia but live in Halifax now. A lot of people don't understand the difference between a "Gyro" and a "Donair". I guess the real difference is that a donair has a very sweet and garlicky sauce, and a gyro has more of a tzatziki sauce. I know I much prefer a donair! I worked at a Pizza Delight in high school and we used condensed milk to make our donair sauce. I used to make it in 5 gallon buckets! We used to use condensed milk, garlic powder, and vinegar. The vinegar would separate the milk solids and make a delicious creamy sauce.
That is good to know! I love using condensed milk for recipes. Thank you for your lovely message and tips on the history of these tasty little wraps. We also like to send our thoughts and prayers to our neighbours in Halifax and surrounding communities that is affected by these forest fires. Our Province have been having RDF ever sense spring came in and if we thought we could send this weather to you folks we would. Please God you will change for you folks soon. Hugs from all of us here! Bonita
I’m definitely going to try this recipe…thank you Bonita! (And Raymond of course 😉🤭)
Aww! I'm so glad you enjoyed our NEW recipe today. It is indeed a lovely fast food recipe and very tasty. Enjoy Bonita
Is this the meat that is in a gyro? I never new it had a name, that looks delicious !
I’m recovering from a knee replacement surgery and my appetite is not great. I want to try this when I can.
Thank you for another fine video.♥️👍🙏🤓
Thank you so much for stopping by and I'm so glad you enjoyed our NEW recipe today. It may be the same as gyro. They serve this type of meat in a few places, grocery stores and restaurants here in NL. This is NOT a traditional recipe but a viewers request to learn how to make it at home. Hope you enjoy and all the best for a speedy recovery. Bonita

Tasty looking donairs. Cheers, Bonita and Raymond! 👍👍✌️🇨🇦
Thank you :) Bonita
My Mother used to make this with a variation. She would add, I believe 1 tsp. of Liquid Smoke, then bake it slow in the foil. We would take it on long car trips as it chilled and stayed well in the cooler. It was always good.
Oh my that is so lovely. Thank you for sharing your lovely story about your childhood. I always say food is about memories of time spent with love ones. Enjoy our recipe to the fullest!! We post a new recipe every Sunday if you wish to stop back. :) Bonita
beauteous
Hi Bonita. Love Donairs and sauce. I really enjoyed your twist on this deliciousness. Casey has been craving these lately will have to make some soon. I hope you had a wonderful weekend and thank you for sharing your awesome way of making donair at home.
I’m doing the foil way rotisserie like you did there next time I do
Aww! You are very welcome Jerri-ellen, I'm sure your style of making donairs is lovely. Nova Scotia and across your East Coast Province makes pretty good Donairs too. This is not something we grown up with but our younger family just loves them. Have a wonderful week and have a wonderful Easter weekend. :) Bonita
Bonita...I'm a huge fan of your channel. I think this might help Raymond with the sauce...if you make your recipe again. To get authentic sauce try this. To make the donair sauce, use
1 (12 fluid ounce) can evaporated milk
* 1/3 cup white sugar
* 2 teaspoons garlic powder
* 5 teaspoons white vinegar...don't mix it in until you read below!
Mix together the evaporated milk, sugar and garlic powder in a large bowl. Stir VIGOURSLY until the sugar dissolves completely. THIS NEXY STEP IS CRITICAL...follow exactly....whisk the mixture quickly (the mixture should be frothy at this point) and while whisking add the vinegar ALL AT ONCE....continue to whisk for 5 more times AND STOP!!!!! If you continue to mix, or add only a little at a time it will be runny...let the vinegar do it's thing (whatever chemical reaction it is...) Do it like this and you will have a thick sauce that is the right consistency and is sweet....without being too sweet. It is best used the same day.
Hi AND THANK YOU SO MUCH FOR STOPPING BY AND WELCOME!!! I will give your recipe a try the next time we make it. Sounds lovely and thank you for sharing it with us and our viewers. Have a lovely day!! :)Bonita
❤
Raymond, you have nothing to complain about.
Haha right! :) Bonita
You said traditional is with lamb could I try both??? What meats with lamb? I love you pumpernickle bread. We eat it all the time. This looks delicious.
Hi and thank you so much for your message and for stopping by, I guess if you go to your local grocery store they would be able to help you get the ground meat you would need. You can use both or even use whatever ground meat you have. Thank you for making our bread recipe. Enjoy Bonita
Will be making this for sure this winter in Ontario . Can you use Virgin Olive Oil instead of canola or vegetable oil ? Would that make a big taste difference ?
Hi and thank you for your message, you can use any of those oils and it would be ok. I use EVOO all the time but I always say use what you like. This is a lovely meal and enjoy to the fullest. :) Bonita
It’s common confusion. Donairs and sauce are a traditional Halifax food, but people expect to find them across Atlantic Canada
It's not available everywhere, I guess in some places where this type of food would be enjoyed it will be available. We have it in many restaurants and grocery stores here in NL. But I had a request from a viewer who loved having these Donairs when living back home and she wanted to make it for her friends and family away. I'm sure she will be so excited to add this recipe to here menu. Thank you once again Jacki for stopping by and have a lovely day. :) Bonita
@@bonitaskitchen thank you Bonita! I’m a Haligonian living in Toronto and I love your channel because you make many familiar foods that I miss and are comforting to me. I hope you keep making this wonderful content!
@@jackiw7 Aww! You are very welcome and we so appreciate you letting us know you are enjoying our channel. We love sharing our recipes with you and all our viewers. Have a Happy Easter Weekend. :) Bonita
Doner sandwiches originated in Turkey. Turks immigrated to Germany and it became popular there. The Greeks have a similar sandwich: the gyro (pronounced: yee-roe). In the USA, during the 1970s, Greeks immigrated to the USA and they bought pizzerias, where they sell gyros. How doners became popular in Halifax, Nova Scotia, I don't know.
Yes and thank you so much for sharing that info with us. We knew it was popular in Halifax and as well here in NL. This is more popular with our younger generation then our elders. We enjoy making this every so often. Thank you so much for stopping by, enjoy to the fullest. Bonita
They were brought by Lebanese people who couldn’t find traditional ingredients at that time, so they made the best of what they could find, and this variation has become traditional Halifax cuisine
@@jackiw7 -- That makes sense. Thank you.
Can you show us hunterbeef recipe
