Could you just harvest them as you need them? Leave others in the ground, then dig them up as you need them. Can they stay in the ground when it freezes, or does that ruin them?
I plant a lot more sweet potatoes than I ever intend to harvest. During the growing season they shade the ground and crowd out weeds. In the fall, I simply leave the tubers in the garden to compost over the winter to add organic matter to the soil.

We are watching with great interest your sweet potato harvest. Those are some giant sweet potatoes. We live on the west side of Indianapolis in Wayne Township, just three miles from the Hendricks County line.
Yes we amended it with potting mix , composted cow manure , grass clippings , leaves , bone meal , and organic tomato and vegetable fertilizer thanks for watching friend 👍
If you have a buddy who has a large garden you should borrow their spading/potato fork for the day. Looks like you got a really nice crop from your square foot garden space.
Great harvest. That's the best looking Georgia Jets I've seen. I'm in upstate South Carolina and they split badly and often grow round or turnip shaped. It's the only sweet potato variety I've grown that does that. My garden soil is a sandy loam over a stony clay subsoil. It's perfect for growing sweet taters, just not Georgia Jet. I grew Bayou Belle, Orleans, Evangeline, Murasaki, Burgundy, and White Triumph this year. Bayou Belle had the highest yield with almost 250 lbs. from 22 plants, in a 25 ft row. I grow them in ridges that are about two foot wide at the base, tapering to a foot across the top. The Bayou Belle was harvested at 97 days after planting. I had a lot of taters that were over four lbs. each. I harvest them big because the vast majority of my taters are cooked and fed to my feeder pigs. I also grow a lot of Irish potatoes and feed the majority to the pigs.
Wow friend now that's a harvest , I wish we didn't have so much hard clay soil here ours would probably do a little better we didn't have the splitting issue you have mabe your humidity and rainy conditions don't suit this variety I'm originally from NC and worked alot at the coast in SC I know how humid you guys have it thanks for watching 👍

Oh wow why didn’t I ever think of growing my sweet potatoes that way!! I’m gonna do that next year. :0) I don’t know if you know this, but the leaves are edible too, and they’re very delicious and nutritious.💕 My vines stretch far and wide out of my raised beds. I really like this idea of them going up the house that safe so much. Space. I have all kinds of flowering vines growing up my house. Guess I never thought to do that with my sweet potatoes. So satisfying to watch you pull these beauties out of the earth! The large ones are gorgeous - but even the small ones, seasoned and roasted whole, will be delicious!
To be fair, you'd also have to count the space used against the wall, where the majority of the green growth was. That means you could not duplicate this result on an acre of continuous ground since most of hte space was used vertically. If you did another row just like this one, the back row would be completely shaded by the first, meaning it's not repeatable for an acre of land. Farming is about land use, and this was a good use of vertical space that would otherwise not be used for growing. In a field of potatoes, of course vertical space is worthless, since it would shade out horizontal space.

After watching this, I’m going to keep trying. I grew my first slips this year, had nice vines so was very excited! Then went to harvest this week and pulled out micro potatoes 😂. Maybe as a side dish to a micro green salad, lol? They were the size of my pinky fingernail. It may be too cold where I live, we will see next year.
I would suggest amending your soil with composted cow manure and bone meal from your big box store I also add grass clippings , leaves , and potting mix because potatoes are heavy feeders hope this helps and thanks for watching 👍

Thank you. I see a mistake that I and many others make. Your vines grew up so you didn't have all those small fingerlings all over the ground. Your vines focused on the main plants. ';D
Wow, what a harvest!! Good nutrition! I like to mash them up with an egg while still hot, some heavy cream, chicken bouillon paste (Superior Touch), a dash of mace or nutmeg, some chili powder, salt, pepper, and use an immersion blender to puree them thickly. This is easy. Another way is to chop and steam them then stir fry with Swiss Chard from your garden - the rainbow colored chard. Use Indian five spices (Panch Phoran), chopped onion, fresh garlic and you have a superfood dish. Of course you could roast them in the oven and sprinkle with chicken wing sauce (see recipe online), yum! How do you replant? Just cut the top off or the whole tuber? How do you store them in pantry? There is nothing like fresh potatoes! They are so crisp. Then you realize those in the store were put in freezers from last year. Try baby white potatoes freshly dug up. Steam them, and toss in a mayo and apple cider dressing, along with mustard, salt, pepper, red onions chopped. So good!!
We cure and store them inside for the winter I just uploaded a video on my channel of how we do this so we can store them and eat them all winter and spring then we use the largest one's to make our slips to plant next year , I also have a video on our channel of how we make our own slips from the last year's sweet potatoes check them out if your interested and thanks for watching friend 👍
Sorry to hear that Julie are you starting your sweet potatoes from slips ? That's the only way sweet potatoes will form potatoes , unlike regular potatoes where you plant the seed potato to get more potatoes , sweet potatoes must be grown from a slip which is a vine off of a sweet potato I have multiple videos in my playlist on my channel that shows how to easily make your own sweet potato slips from a sweet potato if your interested . WOW!!!!!!! May I suggest that your next year batch be growing in cardboard boxes. Fill all that great soil into cardboard boxes, surround the boxes with some chickenwire fencing to make sure it all stays together. Your struggle with that one large one at the beginning I was expecting to see a groundhog tugging on the other end! 😆 How do you store them to last all year? I'm in zone 5 or zone 5b in upstate NY. I'd love to have 95 lbs of sweet potatoes to last the year. Nice job by the way!
We store them in the warmest room in our home for 4 to 6 weeks to convert the starches into sugar then we close off the heat register vent in that room to cool the room and store them there all winter out of direct sunlight I will be uploading a video this week on curing them and storing them thanks for watching 👍

I'm growing them here again this year and the vines are now growing into the gutters lol I'm pulling them down every couple weeks and I will be doing another harvest video by October 1st so stay tuned friend 👍

We grew ours in raised beds this year. Only needed my hands to dig them out. The soil was so loose and fine. And no voles munching at them like they have before when we planted them in the ground. We’re out in the country. Lots of wild animals
This harvest video had no vole damage the Second sweet potato harvest video I believe had some vole damage in a few , I have a video in my playlist on my channel of growing them in a compost pile last year and all I had to do to harvest was grab the vines and pull them out of the compost pile very easy harvest check it out if your interested thanks for watching 👍

My vines stretch far and wide out of my raised beds. I really like this idea of them going up the house that safe so much. Space.

I just happened across your channel, and l am AMAZED at the size and number of sweet potatoes you harvested! Ì love growing sweet potatoes from such a small soace. My first sweet potato garden was also on the side of my house in a bed about 5 x 8 and harvested 84.4 lbs. of HUGE, BEAUTIFUL potatoes from that small space! I filled up 4 5-gallon buckets. That is an exceptional yield of 78 tons per acre. The US average yield in the last three years was 10 tons per acre.

To be fair, you'd also have to count the space used against the wall, where the majority of the green growth was. That means you could not duplicate this result on an acre of continuous ground since most of hte space was used vertically. If you did another row just like this one, the back row would be completely shaded by the first, meaning it's not repeatable for an acre of land.
Farming is about land use, and this was a good use of vertical space that would otherwise not be used for growing. In a field of potatoes, of course vertical space is worthless, since it would shade out horizontal space.
I love how you trained the vines up the house. Sweet Potatoes can over take a whole yard, so it’s a great space saver.

After watching this, I’m going to keep trying. I grew my first slips this year, had nice vines so was very excited! Then went to harvest this week and pulled out micro potatoes 😂. Maybe as a side dish to a micro green salad, lol? They were the size of my pinky fingernail. It may be too cold where I live, we will see next year.
I would suggest amending your soil with composted cow manure and bone meal from your big box store I also add grass clippings , leaves , and potting mix because potatoes are heavy feeders hope this helps and thanks for watching 👍

Wow! Those have to be the largest sweet taters I’ve ever watched someone harvest! Amazing job !
Wow, what a harvest!! Good nutrition! I like to mash them up with an egg while still hot, some heavy cream, chicken bouillon paste (Superior Touch), a dash of mace or nutmeg, some chili powder, salt, pepper, and use an immersion blender to puree them thickly. This is easy. Another way is to chop and steam them then stir fry with Swiss Chard from your garden - the rainbow colored chard. Use Indian five spices (Panch Phoran), chopped onion, fresh garlic and you have a superfood dish. Of course you could roast them in the oven and sprinkle with chicken wing sauce (see recipe online), yum!
How do you replant? Just cut the top off or the whole tuber?
How do you store them in pantry?
There is nothing like fresh potatoes! They are so crisp. Then you realize those in the store were put in freezers from last year. Try baby white potatoes freshly dug up. Steam them, and toss in a mayo and apple cider dressing, along with mustard, salt, pepper, red onions chopped. So good!!
We cure and store them inside for the winter I just uploaded a video on my channel of how we do this so we can store them and eat them all winter and spring then we use the largest one's to make our slips to plant next year , I also have a video on our channel of how we make our own slips from the last year's sweet potatoes check them out if your interested and thanks for watching friend 👍

Sorry to hear that Julie are you starting your sweet potatoes from slips ? That's the only way sweet potatoes will form potatoes , unlike regular potatoes where you plant the seed potato to get more potatoes , sweet potatoes must be grown from a slip which is a vine off of a sweet potato I have multiple videos in my playlist on my channel that shows how to easily make your own sweet potato slips from a sweet potato if your interested . WOW!!!!!!! May I suggest that your next year batch be growing in cardboard boxes. Fill all that great soil into cardboard boxes, surround the boxes with some chickenwire fencing to make sure it all stays together. Harvesting will be much easier. thank you for sharing your successful sweet potato harvesting and congratulations on that big bounty!!

How do you store them to last all year?
I'm in zone 5 or zone 5b in upstate NY. I'd love to have 95 lbs of sweet potatoes to last the year.

We store them in the warmest room in our home for 4 to 6 weeks to convert the starches into sugar then we close off the heat register vent in that room to cool the room and store them there all winter out of direct sunlight I will be uploading a video this week on curing them and storing them thanks for watching 👍

@@chrisparker146 thanks for watching and commenting , I had several comments saying they weren't real , one person said i bought them from the market and stuck them in the ground lol , I do have video's on our channel showing how I prepare the soil to get huge sweet potatoes but some people just don't want to put in the hard work or effort . I'm growing them here again this year and the vines are now growing into the gutters lol I'm pulling them down every couple weeks and I will be doing another harvest video by October 1st so stay tuned friend 👍

We grew ours in raised beds this year. Only needed my hands to dig them out. The soil was so loose and fine. And no voles munching at them like they have before when we planted them in the ground. We’re out in the country. Lots of wild animals
This harvest video had no vole damage the Second sweet potato harvest video I believe had some vole damage in a few , I have a video in my playlist on my channel of growing them in a compost pile last year and all I had to do to harvest was grab the vines and pull them out of the compost pile very easy harvest check it out if your interested thanks for watching 👍
