This is a item either you love them or hate them
Very simple to cook and make
After you clean them ( very important that u clean them good !)
Marinate them overnight with Italian dressing to hide the smell while they cooking
After 24 hours
Rinse off marinate
Recipe
5# chitterlings
1 cup chopped onions
1 cup chopped celery( optional)
2 tablespoons kosher salt and pepper
1/4 cup white vinegar
24 oz bottle Italian dressing
Add all ingredients to pot
Cook for 21/2 to 3 hours on top of stove in pot
I enjoy eating mine with hot sauce and old school cornbread

Good morning 🌞 I started cleaning Chitterlings when I was 9 years old and cleaned them up until I was 43 only stopped because my hands and wrists wouldn’t let me anymore. I ate them until I became 19 but I just stopped eating them because my appetite changed. But Chef Jeffrey stopped listening to the naysayers and continue on your journey using your gift that God has given you. You’re helping a lot of people learn how to cook and also for those of us who can cook increase our knowledge of cooking more or better. It’s more of us that got your back than not. Haven't had them in about 25 years but I love them! Didn't trust anyone to clean them like my mama did and when she passed away in 2001 I couldn't duplicate what she did so stop eating them. Love, love them with hot cornbread, cole slaw and plenty of hot sauce. Chef, you always take us down memory lane with your old school recipes. Please keep doing what you are doing. My mom use to mix in a few hogmaws, this was our new year meat, potato salad, greens, black eyed peas. Oh I forgot pig feet and white rice.😂😂

For New Years my Mom would make Hog maws pot roast potato salad rice black eyed peas cabbage stewed tomatoes. And she made hog head cheese with a 1/2 of head..

Yes mom added hog maws, we had a large family.. my family raised hogs.plus both my parents worked..shed add a little apple cider vinegar while they were cooking. The next day my mom would take some out put some in a cast iron skillet a deep one, then she fried them slowly with onions, bell pepper and celery. Then she added a can of cream of mushroom soup that made the gravy, she did this for my dad. With some corn bread we ate it up. The younger children liked it the second day. I know about chitterlings and every part of the hog 😊 ✌️🕯️💕🌻🦋🙏🙂🥰👋👣. Vee.✨
In 1968 my Meemaw took me by the hand and we walked across the railroad tracks to her friend Ms Maizie. We were invited to supper. Believe me when I say all eyes were on that old white Lady and her little red-haired girl walking in that area. Meemaw kept saying, " it's gonna be fine." Ms Maizie was a wonderful woman. She and Meemaw were friends from little girls. She made the best chitlins I ever ate. I'm an old woman now and I love your cookin. I cook country on my channel too. I'm with you on this negativity BS. I grew up on a farm in Tennessee, raised hogs picked cotton and my momma cooked chitterlings. Got a Bama Sis-in-law that does them every holiday gatherings and they are great. Keep on keeping on!
Traditional rural Chinese cooking uses the same "ingredients" with different cooking and seasoning methods. Another ingredient is the stomach, which is sliced into very thin strips and cooked in a flavorful stock. I love seeing more of the animal used in a positive way, as it IS the most respectful way to appreciate that it gave its life to sustain yours. Its only been a few years since I had chitlin prepared in the rural Chinese way.. Sadly its very hard to find and buy them for home cooking in my area. Seasoned Chitlins was a staple back on the uncle's farm. I was educated at a very young age to respect and use all the animal. Your dish looks mighty tasty.. those who are 'afraid' are missing out on a delicious meaty treat. I agree with you Chef, just delete the trouble makers. Your extended YT family love what you do and are grateful for the inspiration and education you freely provide.
Hog maws are the thin strips. You can always order both online. Hope that helps.

@@tynee123 nope it don’t change the taste or flavor whatsoever it’s not noticeable it masks or completely depletes any type of stench that would be there otherwise.. and to be honest Italian dressing is actually an amazing marinade on any meat so if anything it could only season and enhance the flavor if the dressing was to be present, but even when Italian dressing is cooked on meat it taste nothing like the dressing would on a salad it acts no different then the all purpose seasonings in your cabinet try it out on some baked chicken first if you’re Leary of using it.. hope this helps

Growing up my Mother , Sister & I would clean & wash fresh chitterling from the hog that my daddy killed for our family....After we stop having hogs we still cleaned 4 or 6 of the red buckets with white tops of chitterlings for my mother to cook for family , friends & neighbors....I like to eat chitterlings with cornbread , greens & rice with hot sauce on the chitterlings ! I grew up eating chitterlings on New Years Day! Haven't cooked them in a few years, but when they're done right, they're delicious. We like ours boiled first then battered and fried.
My husband has an old big almost broke crockpot that he cook our chitterlings in!! Chef Jeffrey he's got them thawed, cleaned, and ready to put on for tomorrow. Thank you for sharing old school food favorites. They are very expensive in Nashville TN. Aunt Bessie were $35 for 5 lbs, we use the red bucket Smithville I found for $13 a bucket and now those same buckets are $17. We only eat them for New Year's tradition. I don't sound Caesar dressing in my chitlins didn't smell it and I cooked with it along with my bell pepper onions and celery bay leaf hot sauce seasoning salt garlic lots of garlic you talking about some kind of good

I haven't had any in maybe 20 years. Use to eat 5hem alot growing up. My mom made 50lb for thanksgiving every year, and everyone in the house ate them. If I decide to revisit and cook some, I appreciate the dressing idea and will definitely give it a try. THANK YOU CHEF

I find the best way to clean them is while they are partially frozen. ( Your unwanted parts just peel away) I was taught if you if you smell crap they weren't clean good! 🤣😂 My first pot i ever did I had to throw them away 🤣😂 it was God smelling awful!!! Great video and I agree with you 100% if you don’t like em just move on I’ve never ate them I have sold thousands of them over the years I was a meat manager for 50 years for a Grocery store company in Southeast Texas and most of my career was in ethnic stores which I loved they have a distinct smell ever year I would sale a 100 cases of chitlings,50 cases of pig feet, 20 cases of mawls, tripe, and so on I learned many years that I eat things that other people don’t like at all and they would tell me White boy are you crazy and we would have a big laugh because we would make sour kraut cooked with pork ribs and nothing can stink up your house anymore than that lol so you keep being you my friend the only thing we would call them was well you know it was sh-Tlings and by the end of the day your hands would smell the same and we would wash them in vinegar and water with hand soap afterwards brings back good memories too Happy New Year to you and your Family and Friends sorry this was so long!!

Hello Jeffrey! Just wanted to let you know that I'm right there with you. I LOOOOVE CHITTLINS!! I have never run from the smell. In fact, I love to smell them cooking. I plan on trying your recipe at least once but I have to have the smell. I clean and wash mind, then salt them down for about 45 minutes to an hour it get rid of the slimy residue and any residual bloodlines, then rinse and soak in fresh water for about 30.
I drain well, add to pot with Texas Pete hot sauce, black pepper, red pepper and a splash of white vinegar and, salt if need. Man, that's GOOD EATING!!! I never add water. They make there own juice.

At first, I used to tell her and big mama that I didn't like them mainly based on seeing them being cleaned and the smell. But then, one Christmas they were on the table at my aunty's house and I decided to try them. Because I was taught you don't have the right to say you don't like something, if you've never tried it before. So, I just got a small amount with some cornbread and hot sauce. My mom & dad was born and raised in the south. My mom would cook chitterlings every year for the holidays. My oldest sister and I would fight over them, my dad would eat them too. We eat them every New Years with some how maws,candied yams, black eyed peas,and cabbage or collard greens. They did us wrong this year I got clean chitlins and I paid $20 this year how do you go from $9 to $20 and how do the bucket go from 4,99 to 6,99 to $40 they know a lot of black people cook them for years it's a enormous come up for them , and I hope they don't enjoy that money 🤑💰🤑.

I love chitterlins, I fix mine with celery, onion and peppers and chicken stock, salt, pepper plus water, cook for 3 hours absolutes delicious. Thank you for sharing this episode 🙏🏽 ❤️

When I was growing up in Mississippi I used to watch my momma cook ALL the time. When I first watched her cook chitterlings it was a hard no for me because of the smell. She told me alright try them fried. I was like if I don’t want them boiled I shol don’t want them fried! But I trusted her and I tried them fried and I e been in love with them every since! Fried and boiled! Thanks for this marinade idea! Can’t wait to try it! I could eat a whole pot by myself! And please don’t let complainers get under your skin! I didn’t complain and I’m in love with me some chttlins as we say down here in the south! I don’t care what nobody says! Thanks again! Happy New Year!
One of my favorite cousins used to marinate his chitt'lins in that Italian dressing before he
cooked them. I used to gladly eat his chitt'lins. Nobody else tho'.

GM Chef, love chit ter lings, as we would say. My mother use to cook them. She would leave hers whole. She would cut them after cooking them. I haven't eaten r cooked any in years. Main reason lazy & didn't like the smell. My son love them too. I cook some for him bout 4 years ago& he ate most of them & put the rest N the freezer for another time. My mother like you was raised on a farm & grand dad raised pigs, chickens & cows etc. Grew his own veggies & everything. We use go there when were growing up. Helped in the garden & other things that grand dad ask r showed us. You had to learn, this is what my grand dad told us, & we did my siblings and I. TYFS. Be blessed. Don't worry bout the gator mouths. If they don't like what they see r hear, keep if moving. Enjoy the rest of ur day. 🍽🤗❣

My husband and I love chitterlings too, it took us forever to find some in South Carolina, my husband loves Aunt Bessie’s. I’m recovering from a stomach virus so we’re not having them for New Year’s like we planned, but thankfully we’ll hopefully have them next weekend ❤
I pulled this back up to say when I graduated in 1973 one of my friends invited me to her house after the commencement to eat and that was my first time eating chitterlings I put black pepper and hot sauce with light bread😀😋 it was so good 😊❤️. It has been years since I have eaten some this made me want some 😊

I cleaned and fixed my batch of chittlins for the first time this year for my eldest nephew. He said they were SOOO good!!! Believe it or not, it was kind of therapy for me to clean them. And surprisingly enough, I must have got a pretty good batch cause they didn’t smell too bad!!
