I just made the Kabocha Stew (#3). Wow! it was fantastic. Such a tasty flavor profile. So aromatic. I was so skeptical about unpeeled squash cooking in 20 minutes but boy was it flavorful.
I've seen Kabocha squash at my supermarket but never took the plunge, thank you for inspiring us! My latest squash obsession was the Delicata squash but I will try Kabocha next :) .. all 3 dishes look scrumptious, what a treat... the stew at the end looks so tempting, especially since I just bought some Lebanese Za'atar and some Baharat spice blend which I think I can try in here too. Love the rice dish with goat cheese, I made some rice pilaf two weeks ago with sautéed mushrooms and goat cheese and it was very comforting. And hope this doesn't sound weird but the Baked Omelette looks like those fancy soap slices I always wish were edible lol... brilliant idea. Thank you for providing the ingredients list with the amounts, very helpful. - Really enjoyed the music in this episode, and the whole vibe was just awesome. -kas
I see a lot of Japanese influencers cube kabocha and sweet potato and put it on top of the rice in their rice cooker after adding the water but before setting it off, figured you'd really appreciate that with your recent rice cooker love affair!

I've never made a baked omelette and I think I need to change that;) One question though, I haven't seen kabocha squash where I live, but I can get red kuri squash (it's called Hokkaido squash here). It's also dense and a bit starchy, but the skin is orange. Would it be a good substitute for kabocha? Love your videos! Cheers!

Oh great question. I know it sounds weird, but I'd probably swap in something like pineapple or mango chunks! Juicy and sweet. They'll be great against the mild creaminess of the squash.
