This is of course more than likely just an easter egg with no more meaning behind it, but I do like your theory at 4:46. Either mr. West Dickens or someone else found the wagon, fixed it up and took it to New Austin. It seems more likely to me that someone else did it, and West Dickens got his hands on the wagon later. Maybe some Del Lobos came looking for Flaco, decided to take the wagon to New Austin, and lost it for whatever reason while over there. A horse may have died, it may have broken down again, or perhaps West Dickens even convinced them to give it to him as payment for one of his "cures". We do have to ignore the muddy timeline with this theory of course, but I think it's pretty plausible.

I think some dialogue can only be triggered if you fail or restart the level. I failed one level and accidently restarted and then seen the dialogue is unique again.

It should be noted that they did kinda screw up the canon of RDR with the "Washed Ashore" chance encounter, which would make Bonnie MacFarlane about 12 being pursued for marriage by a middle-aged balding guy, if this encounter is done as Arthur. I suppose it might be a little more acceptable if it is done as John, if that is even possible, but it's pretty hard to avoid as Arthur.
It’s physically possible that doesn’t really break canon, they still break the timeline in many other ways, for example the ranch is completely different than what she describes it in the first game. Tumbleweed goes from functional to complete burnt husk in 4 years. And the reverse is true for most other places.

I remember playing RDR1 and Bonnie, mentions Sadie Adler in a conversation. I swear I remember that in one of the hidden dialogues. First time I played RDR2, I was doing one of the missions in Valentine and it just happened to be around Midnight when I did it... I ended up killing a lot of people on that mission and in the crossroad through the fog as I was running I seen the faint glimpse of the Grim Reaper holding a scythe on his horse. One of the greatest scenes I ever had in a video game. It fit so perfectly, but I've yet to trigger that event again. I tried a number of times and don't know what set it off
