You could always grate the carrot. Balsamic vinegar is sometimes used instead of Chinese vinegar (with a squeeze of lime). If you are not comfortable using a knife on the melon peel you could use a potato peeler. All the best to you and yours.Rab

It's interesting that you're using watermelon instead of cucumber. I made a summer drink from watermelon and black grapes and it had a similar flavour to cucumber but with some natural sweetness. No sugar added. I wasn't expecting that. It was very refreshing and hydrating served with ice.

I’m just watching a UA-cam video from Cool Daddy showing some incredible Uzbekistan cuisine (sword shashlik in fact); it’s incredible food and equally impressive preparation and cooking. This is what YT should be about - not what some might term total shite from Easy Chinese Cooking. It is extremely difficult to believe this woman has actually cooked anything in her life and it’s embarrassing to see this on YT. Don’t waste time with someone who cannot cook, have a look at KeefCooks, DaMalat, Kenji or Marion’s Kitchen - the list is endless. Food Wishes is great too. For Chinese dishes Spice N’Pans and Sue & Gambo or for takeaway style Chinese have a look at Khoan Vong, Alex Wilkie or Ziangs.
