This is the science behind the process. You stop the germination process by drying the seeds which are full of amylase and grind them (just like they do with malting of barley). Then mix the amylase-rich ground sorghum flour with the ground and cooked cassava to convert cassava starch to simple sugars which are then fermented by natural yeasts. After 3 days the mixture is distilled to recover the ethanol/alcohol. It is interesting to note that distilleries use the same process but in their case they germinate barley to produce the amylase enzyme, then they dry and grind the sprouted barley to what they call malt or malted barley. The amylase rich malt is mixed with other starch sources and the starch is broken into simple sugars and then yeast is added to ferment the sugars. Distillation is then done and the alcohol is put in casks to mature.

One can use germinated millet or sorghum which is a natural yeast for making local brew (Arege) in Acholi Language
