Here in the Philippines i observe that my clients are suffering from poverty they are complaining of headache but i behind that is due to shortage of foods . Im also intersted to cassava flour to augment food source and can be use for animal feeds also . But we have no machineries to process it
The flour said gluten free on the package but the lady said she mix 70% cassava flour and 30% wheat flour. Only cookies and chinchin are 100% cassava. Or did I misunderstand. So is the bread 100% cassava or is it mixed? Its important not to mislabel gluten free due to health issues for celiac patient.

People use all purpose flour but kassva is best. Why kassva is best because of flavor and softness of pakoda. Great information, you should package Cassava-Starch as a substitute for Corn-Starch (it works).
Yes in the US it’s known as tapioca starch. Used a lot in gluten free baking
