      Oh, you will be. This channel is getting ready to charge monthly. I saw a notice of it a few weeks ago. They must be moving slowly in order to get us used to the idea. It is a good channel but I certainly don’t watch it as much as Amazon prime, Netflix or BritBox.

    With the supply chain weirdness, figured I better learn how to bake. Unsure why I’ve been so intimidated by it.
    Found Erin after a brief “how to bake bread” search on you tube & so happy I did!
    Beginning to look at my baking education as a fun adventure instead of a million ways I’ll probably goof it up.

    3:25 "Or 45 grams of ice water" - one of the many reasons I love Erin. I don't have to look for any converter, she just gives us the measurements immediately in both imperial and metric. ❤️🙏

      It’s such an annoying UA-cam trope to do that. Anyone can make a conversion, I am not a native English speaker and I was raised metric in the civilized world but if I know enough English to watch an American baking video I can make the conversions also mass for liquids is a ridiculous thing volume only

      @@Max-dg5gj Sure I can make the conversions but why do I have to? Who's being hurt when creators do it the way Erin does here - providing both options. I get that there are a lot of Americans on the internet. I'm all for having imperial units stated. But when you provide both then everyone's happy (apart from you even though I still don't quite understand why).
      And I still feel like weight even for liquid stuff is easier. It's just one scale, no more dishes for volume measurements that you'd have to wash.

    Nothing I love more than Erin spreading truth about pie dough recipes and especially the hydration aspect. Almost every other on youtube contains bogus tips that don't make any sense

    Every time I watch Erin talk about a thing (be it pies, layer cakes or probably even if she were to make an episode about carrots), I feel like I never want to bake or eat anything other than that thing for the rest of my life! Thankfully, I have her wonderful book, and I might just go bake a delicious savory pie now.

      I love pasties, a good beef pot pie. Do you have any pizza or tomato pie; tuna or salmon pies. I'm crazy for cherry pies; 🍒🤪 apple 🍎, peach, and apple with berries. No 👎 raspberries. I must be the only one on the planet who doesn't like raspberries, so it's a good thing I bake. Oh! Pumpkin or butternut squash 🥧🥧 pies.
      In honor of my sister, a good coconut cream pie.

The empanadas I like are from the S.W. region of the U.S., especially New Mexico. Baked (usually pumpkin) or especially deep fried.

    Erin, You are a marvel! I love every episode you make. Of course I have your cookbooks. I read them the same way others read novels. I recall making hunza pie back in the '70s. It was heavy but delicious. You have just inspired me to bring it into the 21st century and that can only be a good thing. Again thank you so much.

    I just have to say. Thank you so much for posting these videos. I'm a pie person, 100%. I absolutely love pie. I prefer it over cakes. I've watched your fruit pie video. Since I have come up with my own basic butter crust recipe. I perfected my lattice apple pie recipe. As well as my apple and plum galette. My husband and I have been in pie heaven lately. Your videos have been SO incredibly helpful and I'm excited to try a savory pie. I have a couple of ideas already.

    Baking raw dough in a cast iron was an amazing tips. I make quiche a lot and baking off the pate brisee before hand was always the most annoying part. I heard this tip in your video and thought NO WAY have I been wasting my time but sure enough I was, it worked great! I still have some perfecting to do but this is how I will make quiche going forward. thanks for the info!

    I am super excited to make a cheddar cheese pie crust with an amazing apple pie filling! My only issue is that my pie doesn't come out so easily from my metal plate. I think because the juices run out a bit and caramelize to the pie plate. Any tips?

    I grow my own tomatoes and I love the idea of a tomato tart. I have never made one that I thought worked. Even when I try to let them sit on paper towels they still make for a very watery filling

      In my book, The Book on Pie, I roast the tomatoes for a few of the pie recipes first. This concentrates the moisture and flavor, and makes a less watery filling! 💛
