    You guys have no idea how much joy you bring to me on a daily basis!… I totally locked onto your UA-cam program several months ago and have devoured them!       @@cxoot in a world where I am constantly being rushed, I personally enjoy taking a minute to sit back and relax and enjoy their videos. I think it’s a perfect length video. The quiet and peaceful sounds of the outdoors without all the sound pollution is lovely to hear, even if it’s from my phone or TV.

    I like to dry the celery leaves and some stalks and then grind into a power to use as a flavouring and to make a celery salt. You should give it a try.

      That's what I do Alex. it makes the best celery salt. When I get the fresh leaves I also make a lovely pot of soup as well as several stews and casseroles (which to us Aussies is basically stew but done in the oven, stew is done on the stove top). The flavour of the leaves is intense. Michelle

    My mom always used the celery leaves in her home made spaghetti sauce, never wasting anything. I do the same, loving the flavor of the celery in the sauce. Beautiful stock! It’ll make wonderful recipes!

      The leaves are the best part of the celery plant, they infuse such a delicate flavour, my Nonna would make the most amazing tomato salad using the celery leaves and the heart of the plant, so yummy

      I know there are a ton of nutrients in those celery leaves. I would use them for a layer in that permaculture and to feed the chickens since the storage space in limited and winter is already hitting Alaska.

    I love y'all's channel. I prefer how you introduce your goal, tell what you will do, how to go about it, get 'er done and show finished "product". Many channels aimlessly wander or spring from one thing to another and show no real accomplishment. That's their prerogative, but I often find them tedious and skip through or not finish. Congratulation of a quality channel that is a good teaching tool for others who wish to live sustainably and try to lightly touch the earth. Keep on keeping on. Joy Giles

    Di you keep the celery leaves, I buy celery with lots of leaves and use that in my soup as well. You would have a mother load of celery leaves once dried.

      I am not a fan of parsley, but I like to use celelry leaves as a replacement.

      I threw my celery leaves in a cotton pillowcase and hung it in my basement to dry. Smells so good. I am putting them into jars now. I saw this somewhere to dry flowers and leaves so wanted to try it. It worked!

      I think its envy. I know I'm envious but not jealous, well maybe just a little. I'm so grateful they share with us and I can forget all the negativity for a short period. I stretch it my rewatching it a couple of times.

    Also I can't wait to have my own little backyard farm, I think soup, sauces and broths will be the main way I preserve my food. Especially since soup is great for wintertime.

    Gosh, another great video! You guys work so hard. Whenever I see celery I am reminded of my mother who always put celery leaves in the oven - the oven had a pilot light and the heat from it worked as a dehydrator. You always had to check the oven for random celery leaves before you did any baking!
    Your videos are a joy to the senses - the crunch of the celery, the vibrant colors of the vegetables; I could almost smell the dirt in the garden and feel the icy coldness of the well water.

    That looked so good. I don't have a pressure cooker, and I miss out on so many things. What I can't water bath I freeze what I can. Some things don't work well for freezing though. I do the best I can though. Never tried cow boy candy though. May be next year! The one thing I canned that I should have done more of is salsa! Keep up the good work. Stay warm this winter.

      Hi SalLee, I hope you see this. There is a channel called "Make it Make," where she interviews American Amish community members. They waterbath everything - meat, vegetables, etc. Even low-acid veg like green beans, they waterbath. Most things are about 3-4 hours and a good glug of vinegar to add acid. Another channel called RoseRed Homestead also goes over WBing everything. It is possible, and I hope this encourages you to try things you're missing. I don't mean to take away from this excellent channel, but to share information. Have a great day.

      @@susieast450 I do love it. But we also got a couple dozen of each, berry (mixed), apricot, peach, elderberry, huckleberry, raspberry and apple butter. Not to mention elk, deer, homegrown beef, plus all types of veggies. Not to mention all the dry storage goods hehe. Food shortage, where? lol wish people understood how easy it is to be self reliant.

    I gasped when you trimmed & dropped those celery leaves. Save those celery leaves, old time recipes that call for soup leaves, mean celery leaves. Hand em to dry. We dehydrate and grind for seasoning. And make beau monde with them. Tasty stuff!

    I sell just the leaves--once people tried them as a flavoring, they're one of my hottest items. Cook them all together, even if you want to cut them off first. Fish them out before canning. They'll never be chicken food again.

    Dried Celery leaves are a great seasoning in soups and stews. We even use them as a salad green.

      SEDDY KHAN we do not consider it wasteful, our garden soil is living and it needs to be amended, hence why we leave roots and give back the parts of the plants we do not consume. Sometimes it is preference, many times we feed our chickens with our produce and sometimes it is just because of the sheer volume of produce we generate. It was the soil, nature, and organisms that are responsible for the produce and why we feel the least we could do is return some of the nutrients.

    My husband and I live in southwest CO just 20 miles from AZ. in the San Juan Mountain Range at 7,650 feet.... we love watching your channel... we just discovered it a 4 months ago and we enjoyed so much of what you are sharing we went back to the very beginning of your videos. We are preparing to move back to the midwest, Nebraska and are looking forward to having a garden again .... as we live in the High desert here and without a grow dome not much does well here. You are so impressive with all you cooking, gardening, building etc. Thank you for sharing your life with us all!

    Being a senior citizen, I’m on a limited income. So I dry by bunches hanging or in the oven with only the light left on. It may take a little longer to fully dry but the taste is the same. 😁

    question for you guys/any botanists here... Say you live here at your beautiful place for 10... 20... 30.. years, and continue to grow and harvest these fruit and veg. What happens to crop yields over time? Do the nutrients in the soil eventually deplete/become used by growth? What can one do to "futureproof" against soil that may produce lesser yield over time? Just curious.
    Do you add nutrients back into the soil via other methods like manure or compost? Thanks!

    You got me hooked on making celery stock this season when I saw your video from last year, thank you! Always had more than I could use "fresh" and gave away alot. Now, it's a different story and will plant even more next spring. I threw in some of my extra leek as well and froze the stock. It's awesome.

    Ack! You can also dry slices and dry and pulverize the leeks. I have limited space so tiny fridge, tiny freezer and few closets to store anything. Since I love the flavors of summer I can still get the tastes of my favorites throughout the winter with the minimum need of space. A little pinch of this or that adds loads of flavors and memories.

      @@RatTaxi I have a 1970s era Ronco dehydrator that I added a solar powered fan to. Load it up and it makes (relatively) short work of drying out anything during the hot summer months.

    Love watching you guys....lived in Alaska for 6 years....had the wrong partner...you guys really work well together...love the trips and the every day stuff... My favorite are the fishing trips....Your garden is wonderful...Good for you guys.....i live in CA now and I put thick rubber bands around my canning jars to help stop breakage during earthquakes, They act as bumpers. During the shaking. I've had no breakage....you might want to try that there....God bless you both!

    I've never tried canning soups and stock. I think it's a great idea when you have a surplus of veggies that won't store for long.

    Awww, Loved the wishbone. I always thought though that the one that got the broken winning bone made the wish after. I actually like it this way :) Yummy broths and stocks wow that is so much work you both make it look so simple. But bravo to you because it is not. hugs

    When you were draining the celery for stock over wire it reminded me of Immokalee Salad. During the Harvest Festival in Immokalee, Florida, plywood and 2x4’s are nailed together and placed over sawhorses. Ice is placed over the plywood and then harvested veggies are cut into chunks over the ice. Some of the best tasting tomatoes and cucumbers are grown in that area of Florida. Fave this video is the Potato leek soup and if course a stroll down memory lane.

    Your garden just looks awesome. I have been trying to learn to garden for several years now, without much success. Have been watching you and planning for next year.
    I do awesome with Aerogardens though. Got my herbs and lettuce started for the winter a couple of weeks ago - I do love watching the plants come up!

    Holy cow! Love those big ol' stock pots! Reminds me a lot of the large pots (graduated to Kegs when we started doing all-grain batching) we do home-brew (BEER) in.... then those herb "socks" are a lot like the hop bags we use to keep all the hops from pluggin' things up when you drain/empty the keg(s) into your carboy). I know I've mentioned this before, but continue to ENJOY/LOVE the way y'all do your videos.... just working and talking together like normal instead of talking AT the camera/us constantly like so many channels do.... meh... lol. Sooo, I guess Eric won.... the wishbone thingie.... since I didn't see any NACHOS at the end of this video..... HI-larious!.... LOL! ;-)

    Oh I forgot to say to also dry your mushrooms. When they are dried I pulverize them into a fine powder (I use a herb/ coffee grinder).. so easy to add a pinch or two for a great fast bang of flavor in stews, soups and even eggs!

    Exceptional stock and soup...why no celery leaves though?! I find them an awesome seasoning especially with certain salads; chicken, potato, etc... you could dehydrate the leaves even without using electricity. No judging here, just wondering. 🤪 ❤

    Everyone is hyping up dried celery leaves, Im Puerto Rican, so I have never tried that. Sounds fun, I have a dehydrator, definitely going to try it based on thr comments.

    The leaves are the nutrients in it. Chop the leaves up and use in smoothies.

    I have to say that you 2 impress me when I was a kid. We grew up in the sticks ! We hunted we fished and had a big garden . Whit 14 kids that was our life and never did we go hungry ! We milked our cows had fresh milk every day life was a venture . With 7 boys plus my father hunting we would take at least 20 deer in a season . canning was a family thing everyone pitched in . I'm glade to see someone out there like to live like this keep up the good work stay safe and God Bless.
