    I am 15 and saw your video on pasta, I didn't know homesteading was a thing. Now I am thinking about it for my future, your videos really help with understanding different lifestyles.
    I did have chickens before but that was like 5 years ago.

      You’re 15 now 17 watching this in 2024. If you have start now. Learn to can, dehydrate start saving for a freeze dryer. Look for books on gardening, canning and preserving. I wish I would have taken the time to learn from my mom and grandmother. Now I’m 45 and doing research on the different things I can do and building my book library on these types of things. I’ve also started buying cookbooks and other books from the Great Depression era. Praying they are never needed but would rather have the books and never need them than need them and not be able to get them.

    I've been freeze drying eggs for about 2 years and my husband doesn't know it. LOL! He's been reluctant to eat anything that I've FD'ed but it's amazing how many things he's been eating that I preserved over a year ago. I try to find the best deal on eggs that I can and try to do all 4 trays with raw scrambled eggs. I also do sour cream and whole milk. When I can get lactose free whole milk from Walmart for 2.78/half gallon, I stock up with as much as I can by pouring it into extra trays and prefreezing it. I separate the slabs of milk with plastic wrap until the FD'er is ready. It's saved us so much and our FD'er has more than paid for itseIf several times over. Diced onions, peppers, jalapenos, hatch chilies, ground beef, chicken strips, peas, strawberries, blackberries, raspberries, apples - OMG - apples are wonderful freeze dried. So are mandarine oranges (Halos or Cuties). I absolutely love our FD'er. It has saved us so much money on food and saved me a lot of time in cooking. You'd have a hard time prying it from me. We preserve ingredients instead of combinations because I never know what I'm going to use them for. I'm getting plants ready to grow indoors for the winter and am looking forward to seeing if I have enough to freeze dry. Congratulations on your HRFD. They're amazing. And thank you so much for all that you share. You've had me laughing out loud at times and you've also brought up things I often wondered about. Keep doing what you're doing. God bless!

      I ordered a HRFD a couple of weeks ago and am awaiting it's delivery. 😁 Do you have any suggestions for resources to tell what you can freeze dry? I was thinking of starting out with the potatoes I harvested a couple of months ago. I don't eat them fast enough before they start going bad... and it's just me, no family to eat it up, lol...

      The potatoes do wonderful in the freeze drier! I also can a bunch they are so good to use canned also! I was wondering if whole milk is ok to freeze dry ive heard different things on that but if you can do sour cream and heavy cream must be ok! They say the fat content in it makes it not as long on shelf life ,but idk I'll have to do more research on it!

      Seeing as you’ve been doing this awhile I want to ask if the machine retains odor? Cam you freeze dry onion with something like apples or will the apple take on onion flavor etc? You know what I mean? I
      If the machine does retain odor, how do you clear the odor best before starting something else?. TIA

    Becky you can store your food long term in mason jars you’ll need a foodsaver mason jar sealer kit. You’ll be able to remove almost all the air in the mason jar without a need for oxygen absorbers and the kit is super affordable. There are two ways to use it one with a vacuum sealer which you have or two with a break bleeder UA-camr rain country demonstrates this perfectly and she has a wealth of knowledge for you to learn I think you’ll like her channel. It’s a simple and cheap addition to your homestead to make sure your food will last all winter long for sure and many years after that.

      You could go one level up from that. Still put the oxygen absorbers in, but use the vacuum seal lids too.

      You can actually vacuum seal jars inside the chamber of the freeze dryer as well. I do not freeze dry other item when I am freeze drying raw eggs with other foods due to possible cross contamination from salmonella. I clean my freeze dryer really well after raw eggs.

    I didn’t know you could freeze dry eggs!! One more bartering point with hubby to get me a freeze dryer!! My 16yr old son and I LOVE watching your videos, he wants to be a chef and I recently watched your episode where you made meals for your friend who had baby #2.       You can freeze dry just about anything. I wish I had one! There are a couple of channels that both dehydrate and freeze dry and compare them. They've even done milk.

      Awww your son wanting to be a chef ❤ I did as well. My dad pushed me to do what I wanted to a ton and I never did it.. now I'm 30 and wish I would of. That is my only regret.

    When you reconstitute the eggs let them absorb the water a bit 5 mins ,before besting and cooking. It gives the best texture and flavour.

    Becky, I have to tell you FD bone broth is incredible. 1 quart of broth per tray makes reconstituting it so easy.
    I canned up several dozen jars last year and am in the process of FD all of it. It’s much easier to store in mylar.

    There is a UA-cam channel "Rose Red Homestead" and she does a lot of powdered vegetables and adds them to her dishes. She uses both her food dehydrator and her freeze dryer

    Freezes dried eggs probably best for making French Toast or for adding to hamburger mix even for making Schnitzel.

    I am a one ingredient person, so I freeze dry one ingredient items: onions, peppers, all vegetables, non fat dairy products, Cheese, chopped tomatoes, sliced tomatoes, tomato powder. I have not yet worked with meats, because I have so much meat canned on my shelves. The one thing I like, is the ability to make meals in a jar, just adding a can of the meat I canned. QUICK, EASY, YUMMY!! I know many people who freeze dry complete meals, but I'm not there yet, may not want to be. We really like yogurt bites, too. They rock!

    Watch Retired at 40. He does a lot of experiments. Also he has some things for sale that will help you. I love mine. I’ve done onions peppers cooked hamburger with onions, herbs, veggies. I’ve been a bit busy and have slacked but back into it. I’ve had mine for about 6 weeks. You’ll love it.

    Suggestion for the “texture” issue. If you normally make 5 eggs for you and your husband, use 4 freeze dry worth and add one fresh. Maybe that would give you a more “normal” texture?

      Also I have read that putting a little salt in your raw eggs will make the texture normal when freeze drying.

    I had to watch you say "freeze the frood" like 6 times at 5:25. Lol. In all seriousness, I love love your videos. You are such a hard worker, and that motivates me so so much. I play your videos while my 2 year old and baby nap. It's a time when i just want to sit and do nothing, but your energy and work ethic get me really excited to be productive!! I love my chickens, and I'm working to figure out how to do a garden with the limited sunlight and highly acidic dirt in our yard. Every time I watch you, I end up telling my husband "we HAVE to figure out a garden. I NEED a garden." Thanks for all you do!

    I can see that you have the dehydrators on the bottom shelf as a counterweight, but I would encourage you to move that expensive freeze-dryer over to the center of the rolling cart, just so, if by chance you forget and move the dehydrators, your freeze-dryer doesn't cause the table to tip up on end and crash to the floor. Sorry - I'm a worrier and look for that sort of thing.

    I'm thinking soup mix of onions, celery, garlic, ginger, carrot, green/red/yellow bell pepper, kale, leek, cabbage. Ooh I want one. I would put that mix into roasts, soups, bakes.

    We have a Harvest Right and we LOVE it! We have stored so many meals and so much of our garden harvest this way! Our housemate likes to freeze dry soup to send to her mom and her friends! It's great!!
    Edit: This is also why we use our Vacmaster! You can load it with Mason jars and it seals the jars!

    Chives! Notoriously persnickety about being dehydrated, they do very well being freeze dried. Tomato paste is great to add some concentrated flavor without all the juice, so you can put it powdered into soups/stews/salsas if you don’t want the moisture content to get away from you. You can do the same thing with squashes, fruits and root vegetables, puréed, to sprinkle in and amp up nutrition on anything you make OR make dried baby food with them (after a chat with one’s pediatrician, of course). Really the only restriction is your imagination :)

    I have freeze dried foods in my food storage and love it! I buy mine because I don’t have anywhere to grow food. With those eggs, mixing them up in the Vitamix is the way to go. I then reconstitute them and use in all my baking 😋. They are excellent. Also, you can use the mason jars for freeze dried foods 20 years if you do t have Mylar bags. I just fill jars as full as possible to eliminate extra oxygen, then I drop in an oxygen absorber and close canning lid tightly. You will get that “pop” sound in a couple hours indicating a successful seal.

    My Freeze Dryer has replaced my dehydrator for everything but jerky. I always pre-freeze liquids, I saw too many people have disasters when the vacuum pulls before the liquids are totally frozen. Yes, you can FD almost anything but the shelf life is affected by oils. Mine runs almost non stop. Have fun, this will change your food prepping world. 😃

    My Golden buffs never stopped laying last winter but slowed down in the heat of summer . Right now I have 2 grown step kids living at home but still give away 8-9 cartons of eggs every month to family and elderly at church.

    I just recently bought the small harvest right freeze dryer I’ve been running it continually my first project was frozen greens I had in my freezer they were obviously already cooked so I purée them and then put them in the trays and put them in it was so awesome once it was done I just polarized it and put it in a jar perfect for adding to anything even pasta

    I was wondering when I would see a FD video! We just got our large harvest right freeze dryer a couple weeks ago. We are on our 4th run right now!
    You definitely need to try different fruit. We have strawberries in there now, bit have tried apple's and bananas. Love them both! Great for snacking. If you haven't yet, I recommend following Retired at 40. He has a UA-cam channel and Facebook group. Loots of great information from him! Good luck!

    I've heard to watch out for clumps when blending freeze-dried items to powder. Clumps = Moisture, it can make them unstable over time. You should try to freeze-dry some shredded potatoes, instant hash browns!

    When I went to college, I worked at a place on campus that shared kitchen space with the main cafeteria, so I learned a few things about how they operated. They mainly used the liquid eggs that come in the half gallon cartons to make breakfast in the mornings but there were 2 times over a year and a half that they had to use the powered eggs instead. The liquid eggs have that perfectly homogenous aspect that Josh mentioned where there are almost silky smooth with no inconsistencies, that's probably why as far as I know, none of the students ever noticed the difference when they have to used the rehydrated eggs. I couldnt tell the difference when I tried them as well.

    You are correct about the eggs being so powdery. They crush right up and don't need a blender after FDing. I put one tray in 1 gal mylar bag and then kinda squish the bag and it's done. I've never used the blender to powder anything I've done in 3.5 years. Having soups is one my favorite as that's what I feel will be incredible to have if the power is out or if we want to take it camping. No need to be doing a ton of prep or dishes, just add water and done. You're going to have quite an fun adventure with you machine! Congrats!!

    My 4 year old son and I watch your videos for bedtime. We snuggle and watch at least 1 before he goes to sleep. If we see a new one available he says 'Look Momma, there's a new one!'
    You are so great to watch. So eaay to understand and you make people realize that all of these intimidating things are completely possible. I live an apartment on the 3rd floor with no available space for gardens so I live precariously through yours!

    We thinly slice our tomatoes, marinate them in French salad dressing, a little pepper and salt then freeze dry them...Makes perfect tomato sandwiches in lunchboxes...no more soggy bread!

    Re watching this as just got my freeze dryer right before Christmas. I have scrambled eggs freeze drying right now. Our chickens have still been producing 15 to 16 eggs a day. I can't wait to get all things freeze dried from our garden this year. With just the two of us we have an abundance I am planting so many tomatoes this year to make paste and crushed etc.

    My favorite restaurant uses freeze dried garlic in seasoned olive oil as a dipping sauce for bread. It's the perfect match for any italian food.

    That is one thing that I don't know if I could ever afford...or really know where I would even put one. I think it is awesome what you can do with them. How great that will be like you said for your own chicken bouillon! You wouldn't have to worry about limiting your use because of the sodium and etc. because the ingredients would be great!

    We love more on freeze drying. I’m really happy the eggs did so well. This is is a good way to keep up with our chickens.
    My daughter tried her hand at making raisin vinegar. She just showed me that she actually has two beautiful mothers in it.

    Try water glassing eggs! Freeze drying is good but water glassing keeps the eggs in their original state = so many ways to use them. I use my water glassed eggs all winter long. Great video as always 😀

    Awesome video! I've been wanting one and I love that you're new to it too so the fact that you're not a pro at it yet makes it less intimidating for the viewer too! I'd love to be able to freeze dry meat products like bacon, sausage, chicken breasts, stuff like that. Suuuuuper happy to see this can be done with eggs. My son and I go through a ton and buy them from a neighbor who always has too many lol

    Our cousin has a freeze dryer, and we love it when we get to benefit from it, haha! She's constantly running it with sliced fruit for snacks for her kids, and she uses it for batch cooking too. She makes huge batches of salsa and freeze dries it. Oh, and she freeze dries milk, because only her husband drinks cows milk out of the whole family, but it's hard for him to get through a gallon of milk before it goes bad.
    There are a TON of things you can do with that, and it's amazing!

    Even when storing just for winter, I would still vacuum seal the jars if you have the capability

      I think you can seal the jars in the freeze dryer itself! I haven’t tried it yet though! And yes the bone broth powder is a favorite of mine.

      If you already have a meat vacuum sealer you can buy a jar attachment that will seal them.

    My FD should be here in the next week or so, I'm so excited! I have been working on making a work station for it this weekend. I was moving things around, like my pressure canners and water bath canners....I felt like I was cheating on them! I LOVE CANNING! But I'm thinking FD is going to be my NEW LOVE!!     WOW! Loved this video. Love your channel. I am new to food preservation and have become fascinated with it as a way to save money and not waste food. It all started with the idea of not having to toss my leftover mushrooms because they spoiled faster than I could use them. (seemed to be an achilles heel for me! ) I've just joined your channel and I'm fascinated by all the meal prepping you do to save time and food preservation to save on food waste and cost. Thank you for sharing this one. Next step...adding chickens to my backyard. Have to wait for that, don't live on a homestead yet! In due time. :)

    Also! You can remove the shelf from your freeze dryer, add 1 tray at the bottom of the curve as a shelf, put your mason jars with lids and finger-tight rings in and run the more dry setting for 1 minute to seal your jars up. So cool. I can fit about 6-8 jars at a time.... Dry goods only though.

    We have had great success with meat. Biggest tip is to cook it the way you like and slice it fairly thin. It rehydrates so well. For us this is the very best way to preserve meat.

    If you don't have/can't get a dehydrator, you can preserve whole eggs in lime water. Its included in the "6 historical ways to preserve eggs" video by the Townsends.

    I live in a tiny tiny apartment like 430 square feet. And a big reason I don’t do a lot of preserving is that I just don’t have the space to store anything. But as a vegetarian I buy a lot! Of vegetable broth to cook rice, grains, legumes, and soups! But the flavor from vegetable bullion isn’t always great and I end up getting liters of broth that take up too much room in my tiny kitchen or the jars of it’s better than bullion when I can find it. How amazing would it be to make your own cubes and save so much storage and control the sodium and ingredients! ❤️ I definitely can’t get one of those freeze dried vaults anytime soon (see storage problems) but the possibilities are still exciting!

    from what I've seen on YT people will freeze things to get ready to go in their FD. as soon as something comes out they already have the next thing to go in. Phew! So excited for your new toy!

    Apparently freeze dried watermelon is incredible. It’s one of the first things I want to try when I get my freeze dryer. Need a new house first so I’ll be waiting a while lol.

    You are going to crazy with your Harvest Right!!! I use mine for everything I possibly can. One of my favorite things Ive done was last Thanksgiving when we had an abundance of homemade Turkey Cranberry Gravy left over so I froze it in individual molds and then popped the pucks out onto the freeze dryer tray and now we had that gravy in 1 cup portions that we can rehydrate and warm up any time throughout the year. There are just so many options that you can go crazy! Oh…milk!!! You can freeze your milk (half & half, sour cream & yogurt too) and it rehydrates beautifully. No more taking up freezer space for those gallons of milk!!! 🤪

    Ok, found you a month or so ago and I am addicted!! First I love you organization of the process. The tips, like the dishwasher empty, trash can out, compost bowl….all excellent tips!!!     I wonder if youd be able to freeze dry yolks and egg whites separately, and then reuse yolks for pastries that require only the yolks, or use the freeze dried egg whites and whip them up for meringues and such

      Well, I can't say for sure, but Living Traditions Homestead have done a lot of experiments with eggs, both raw and cooked, in the freeze dryer, and the reconstituted raw eggs are exactly like regular fresh eggs, same viscosity, etc. I would say testing would be necessary, but by look and feel, it could very well be possible.

      Be sure to weigh the product before and after so that you have the same amount of water weight to add back to the freeze dried product for accuracy.

      I haven’t tried egg whites myself but I’ve seen several UA-cam videos and none of them I watched liked the results for whites alone. It seems like for many products it’s finding the right technique so that may be true in this case as well. Good luck if you try it and let us know if it works.

      Challenge with this would be in using the reconstituted eggs raw. If you feel secure in your source (salmonella free) then maybe. The safest way to use FDeggs is cooked.

    I don't have a freeze dryer but I buy freeze dried fruit (strawberries, blueberries, apples, kiwifruit) and yogurt drops and my toddler looooves them. Freeze dried raspberry/strawberry powder is perfect for baking, particularly for adding in buttercream so it doesn't change the moisture ratio. You could also make different flavoured yogurt drops with fruit blended in, yum!! I would LOVE to get a freeze dryer but the price point is not accessible to me right now.

    I feel the same way. My freeze dryer does not replace my dehydrater. I felt a little scared the first time. Now I process no problem. I love eggs freeze dried. It is awsome to have them on the shelf and no taking up all the room in the freezer. I am freeze drying strawberry slices right now and avacado chunks. I making powders, especially tomato powder. You can make tomato paste and sauce from your powder and not have to can as much tomato sauce. I still have some canned. I mostly have done individual things. I did freeze dry some soup last year and still have not reconstitued. Jars work fine for how you are using your food, but I would definely get the foodsaver jar sealer tops for wide mouth and regular mouth. You already have a foodsaver machine so geting the sealers to take the air out of the jars you are putting on the shelf will help them keep longer. I am excited to watch you use your freezer dryer. It is so much fun. You can also make gifts to.

    I make my own pancake and waffle mix using dried egg powder. I dont make my own egg powder, sadly, I have to buy as I dont have a machine. It saves so much time on a weekend morning. You could also make up wee jars or vac seal packs of omelette mix - add in some dried eggs, onions (caramelise them first), peppers etc or whatever you like in your omelette. This will free up space in your freezer. Good luck with your freeze drier. I am very envious, and look forward to more vids including this handy tool

    I have the same set up 4 ft metal table on wheels I bought to house my Excalibur dehydrator but both are white 😊 I've been dehydrating for years and bought freeze dryer jul 23rd this year I love both too! I'm building my powder stash of veggies, fruit, bone broth. Your gonna love the eggs they turn out perfect!💖

    I have a medium HR FD, too. Lasagna and cream soups (broc cheese) are a hit at my house as well as rotisserie chicken and ground beef crumbles.
