Blueberry Jam - Low Carb/Keto Friendly

  • This is a recipe and walk through on how I make my low carb/keto, no sugar added, blueberry jam. Please read the ingredients list below for any possible allergens that may affect you. The nutritional card I have in this video represents my ingredients, as close as I could get using the online tool that generated it for me. Your exact numbers may differ slightly. The estimated net carb per serving (1 Tbs) is 2.2g. However, I always encourage you to do your own calculations as your ingredients may differ slightly from mine. I hope you enjoy this recipe.     Ingredients:
    2 cups blueberries, frozen
    2 Tbs sweetener, I use granular monkfruit - amzn.to/2Z8PZFe
    1 tsp fresh lemon juice

    Can’t wait to try! Been looking for a recipe without xanthan gum.
    Can I replace the blueberries with strawberries? Also, how long does this last in the fridge?

      Yes, I have replaced the blueberries with strawberries in making this. I fine I have to cook them down a good bit to keep it from being runny, but that's just if you want to use it as a jam. When I use it as a strawberry topping, I don't mind it being runny. I hope you love it!

      That is correct! 😀 Letting it simmer cooks out a lot of the water in it and it thickens right up, I let it sit in the fridge overnight and it's perfect! Thanks for watching!

    Doing this, when it's finished cooking, jar it straight away, it creates a vacuum seal while cooling down, last forever just about

      I find the jam doesn't need it. My jelly on the other hand, that uses gelatin. Hope you try it out, it's very good!!!
