Sisters make Sardinian pleated potato-filled ravioli called culurgiones! | Pasta Grannies

- Dina, Delia and Emma share their grandmother's recipe for culurgiones - they're a little bit different to the others we've filmed (I love how there isn't one recipe). This pasta definitely benefits from being a team production.
Halved quantities are: 1 kilo of floury potatoes, 750g spicy cheeses - preferably a mix of sheep and goats cheeses, 250g of fresh salted cheese like feta, 1 tablespoon of lard, 1 tablespoon of chopped mint. Then for the pasta dough, you'll need 500g of durum wheat flour/semola rimacinata, a tablespoon of lard, and about 250ml of water. - Фільми й анімація

Vicky I just want to thank you for taking on this labor of love and sharing it with the world. I became very ill this year and really struggled to eat, and as a result, I lost a lot of amount of weight, became dangerously anemic, and was exhausted and nauseous all the time. I’m so lucky my husband made many of the staple dishes in your videos and in your cookbooks. I was able to eat pastina in broth and cheese, pasta and beans in soups, simple gnocchi, and my favorite, Cresc’tajat with beans. They all helped add some much needed nutrients but were still mild and simple enough to not make me more nauseous. I’m so grateful you and all the lovely and generous pasta grannies for sharing such delicious recipes that are relatively easy to make and feed both your body and soul.
I’m back in the kitchen again, and can make a few of these dishes on my own again. They are absolutely delicious, and do not require fussy or hard to find ingredients or are a complicated recipe. Thank you again for this labor of love, as many of us really appreciate it.

A few years ago I was on Sardinia for a work workshop, and on one day a few of us had a food course in local restaurant, and there we tried to make culurgiones. The nonnas there spoke only italian and were really lovely. But not matter how often they showed me how to make to culurgiones, I cloundt manage to "fold" them corretly. Luckily for us, they did know how to do it, so that the whole crew could enjoy this. A great memory. And therefore one more reason to really love this episode. Thanks a lot for your great work Vickie.

Wonderful! I spent a few weeks every year in this area of Sardinia and I loooove the food there. The traditions are still strong there and every village has different colors of festive cloths. I can only recommend to go there! Thanks for this wonderful video.

"Oh.... another culurgione recipe....... okay...." I thought. But this is so great. The relationship between the sisters and the culurgiones themselves looked wonderful.... I'm getting to the point that you could start a subsidiary "Culurgione Grannies" and I'd wait impatiently for each new episode.
Hopefully we haven't found all the culurgiones variations yet! I find even if we the same recipe (eg lasagna) there's always something different, which always delights me! 🙂🌺 best wishes, Vicky

Some of the most beautiful, elegant pasta I've seen. The pleating is just gorgeous and the final shape makes them absolute world of art.

yeah, there's something about pasta and potato; this afternoon we filmed tortelli filled with mashed potatoes, leeks and cheese and then deep fried (in lard). Delicious. 🙂🌺 best wishes, Vicky

I love the pleating, and I love that one can't do it very well! They look so much like several different kinds of Asian dumplings; I wonder if that was an influence, much like pasta.
They are very similar to Polish pierogi and Ukrainian Russian vareniki.( practically the same.)
They are also made with potato fillling, potato and cheese, or potato with fried onion and finely chopped and sauteed forest mushrooms during lent.
Other common fillings are cabbage(sauerkraut) and onion, or tvorog which is like cottage cheese.
Even sweet fillings fruit fillings, like prunes or cherries are often made and eaten as dessert. And they even look the same, half moon form.
We also make dumplings with this kind of pasta dough with meat filling, called peljmeni and manty, but they are usually shaped differently, and are the most common national food in Siberia and all over Russia.
The Tatars who ruled over the Russian lands for almost 300 years brought them to Russia and they got the idea from the Chinese. Germany has their form of Ravioli, called Maultaschen.
This type of dumpling are my favorite food!

@@manofreddi4166I am an American from Pittsburgh, Pennsylvania and even we Italian Americans love pierogi. My grandparents were immigrants from Calabria and they lived among Poles, Russians, Ukrainians and Slovaks. They must have traded a lot of recipes.

They look like polish version of dumplings called "pierogi ruskie". Mam mother also used to add mint, farmer cheese and potatoes for stuffing. Only instead of larks, we are making onion or pork cracklings (polish term - skwarki) for glaze.

Hi you have provided another great film! You had a fragment that was telling us to use half potato half cheese. I assume you meant it in volume instead of weight?
yes, but more importantly the mashed potato should taste assertively cheesy, ie our ladies use their tastebuds not the scales and add cheese until they get the flavour they want! 😀🌺 best wishes, Vicky
To me culurgiones are the most difficult pasta to make, but I even struggle tying sourdough and pain de Campagne neatly.
