This looks delicious. I remember the chicken & dumplings my mama used to make. There were NO leftovers in our family of four! Speaking of Food Porn, in 2013, I went through chemotherapy for a tumor that I had. I stayed with my dearest friend who insisted on taking care of me while I underwent chemotherapy and then radiation treatment. While going through the chemo part, I was hooked on the food network. If I was awake, it was on. When I had to sit in that chemo-receiving chair all day, during the treatment days, the food network was on. My friend said that it was Food Porn, since I couldn't eat anything, but could at least watch it. 😂 I would watch Paula's programs, and then pull up the food network on the computer to get those recipes. And now, I'm still watching Paula and collecting her recipes; but no longer taking chemo, which means I CAN make those recipes and Eat that food.
I'm a thin rolled dumplin fan. A super easy dumplin cheat is to get a pack of flour tortillas, slice them however big or small you like (I do 3/4" inch squares), toss into a baggie with a cup of flour, bring your broth and chicken to a boil, sprinkle a handful of of tortillas pieces on top, lightly stir, and repeat until they're all in...and boom! Done!

we are from Maine and my mom and grandmother did the dropped ones. Fluffy on the inside, yummy. The first time I saw a "rolled" dumpling, I thought that they were making wide noodles.
I’m here in east TN. I make the drop buttermilk biscuit type of dumplings. Chicken broth, a can of cream of chicken soup & my drop biscuit dough or I have even thawed frozen biscuits & cut them into quarters & use those.
Yes! Someone told me recently to use the frozen Pillsbury Southern Butter Biscuits...& I was not disappointed...tasted homemade! I always had a problem with my dumplings dissolving, until I learned NOT to stir them AT ALL after dropping them in...& also NOT to boil...only very gently simmer them. Don't stir them after done either.
My grandmother in Mississippi made drop dumplings. The great-grandmother in New Jersey did the same. Saying that, yes I think the 'slippery' dumplings, rolled out, are more common in the south. They also used poultry seasoning. Diabetes killed my dumpling eating though. Maybe someday! Congrats Michael! I'm down over 40 lbs and off diabetes meds. My fasting jump started that plateau in the weight loss area. A little work, goes a long way. 😀

I was born in Kentucky, raised in Tennessee, and now live in Florida, I always roll my dumplings from scratch, and taught my daughter how to make them, and she makes them the same way, and never do I put vegetables in my dumplings.
My family always made dumplings with can biscuits. My Nanny would always roll them out an pinch them off in her broth, an we are from south Arkansas!! I only love dumplings made out of biscuits. My husband's mother made her dumplings an rolled them out thin as paper. My husband doesn't like my dumplings cause they are too thick for him, so I have to make 2 kinds of dumplings when I make them. They kind I make for him are too thin for me, I just can't eat them. Lol Both families are from the south! So Paula you may be wrong on the Yankee dumplings. Lol
Grandma did the rolled dumplings. Momma used can biscuit dough and cut the biscuits into pieces with scissors and added them to the chicken mixture. They were both really good. Grandma grew up in the early 1900s. My momma was born around the depression so when momma had us in the 1960's she did the can of Pillsbury biscuits which were smaller biscuits back then. No flaky or bigger biscuits with butter were offered back then. I know people who used Bisquick. NOT FOR ME!!! Also if you added small cuts of potatoes and onions you could make a chicken stew or chicken pot pie. Chicken Pot Pie would require a pastry dough or puff pastry. I have been a fan of yours since your first show on the Food Network Channel and I am still a fan.

I love both but mainly grew up on drop dumplings. My oldest sister went to culinary school years ago and learned how to make the best drop dumplings I've ever had. She passed away about a year and a half ago and I wish so much I would have gotten her recipe for drop chicken and dumplings. She also made some wonderful rolled dumplings too but her drop dumplings were simply delicious 😂!! I looked all round our town online for frozen dumplings especially the two brands that you mentioned Paula and could not find them. It kept coming up potstickers or frozen Asian foods lol. So I have to make my own after all which I don't mind at all. Btw I'm from Oklahoma Paula. We love our chicken and dumplings especially drop dumplings!
I sympathize with Michael, I am on a low carb diet so I understand the torture! So why I am watching this? Lol. When I reach my goal I plan to treat myself at least on weekends. I grew up on rolled dumplings. I still can't make myself believe the frozen ones are as good, but I'll give it a try. I still prefer to boil a whole chicken, the broth is so much better. I also add a can of cream of chicken soup to give it that much more flavor. But it is nice to know the shortcuts. I put the chicken in a crockpot overnight and by morning it is falling apart. Being from the northeast, I prefer drop dumplings. When properly made they are so light and fluffy (better than biscuits). I feel bad for Michael having that tasty food in front of him, and not being able to eat it.

Y’all are so funny together! I’m a southern cook but the older I get, the more I have to look for easier ways of doing things. For my chicken and dumplings or chicken and dressing, I do my chicken overnight in my crockpot. Comes out perfect and ready to go first thing in the morning and you still get that good homemade broth. I’m going to have to try those frozen dumplings.

The “ rolled out” dough is in Chicken Pot-Pie . “ Dumplings “ are the drop type biscuit dough in broth. Of course I am from Lancaster County, Pennsylvania. Even though both my parents families are from southern states, my Mother made the “ Dutchy” kind.

I have always made drop dumplings (in NW Georgia) but prefer rolled ones. I’d never had a rolled dumpling until I was maybe in my 30s and by then my son preferred my drop dumplings.
My mom’s family was from Huntington, West Virginia, and we all make drop chicken and dump;ings. I never knew about the kind Paul’s makes. No veggies ar involved … just broth and chicken. I always add cream of chicken soup.
Rolled dumplings 100%. When I need fast chicken and dumplings I buy (raw) flour tortillas and cut them into strips dust them with flour. I buy a rotisserie chicken chicken stock and everything else 😋 and its a quick yummy meal
Shoot, my c&d is a 2 day affair. The night before, I fry chicken thighs then put them in the crockpot, add water and turn on low. The next morning, I strain it all, rinse the crockpot and put the broth back in. I sauté my onion, carrot and sometimes celery then add to pot. I pick the chicken off the bones and shred it then bag it. I mix my dumpling dough and put it and chicken in fridge. An hour before dinner I put the broth and veggies in a large pot on the stove, add seasonings, bring it to a boil then add the chicken. Bring to a boil again then drop in my dough by spoonfuls. Fluffy dumplings and chicken made in the PNW. Never had rolled, that's fat noodles to me, not fluffy dumplings.
Thank you for another great video! Here in the UK I’ve always used shredded beef suet, flour, salt and water for my dumplings. Roll into balls and place on top of the stew for bout 20 minutes.
My mom use the drop biscuit in her dumpling and at the end she would add green peas about 1/2 cup to add a little color!! We live in Clemson,South Carolina and both grandmother did the same.
No way in hell do I have time to make my dumplings from scratch. I'm in Mississippi and I simply thaw frozen biscuits, not canned, and drop pieces of them into my pot when ready. No mess, no time and it's EVERY bit as good as made from scratch.

I make drop dumplings. I use to boil the chicken then debone but now I roast my wholefryer chicken in my dutch oven first, then debonair and put it back in the juice, and add a box of chicken broth and a half carton of water and bring back to boiling. It's good.
Ok there is another hack for the rolled dumplings. You drop cut up flour tortillas into the broth. Tortillas are the same ingredients as dumplings and-they cook up the same way. People have been shocked when they find out what they are eating. Can’t tell the difference.

I like my dumplings somewhat in between the flat and the puffy. Too flat, and they are like noodles. Too puffy, they are like biscuits. Somewhere in the middle is the sweet spot.

My Louisiana family always rolled out the dumplings. To me that's the only real chicken and dumplings. Dropping balls of flour is the same as using a can of biscuits. You're just eating chicken and biscuits. Which is delicious but it's not dumplings.

I make chicken and dumplings in my instant pot. I use the pre made pie crust that is rolled up in a box from the cooler section at the grocery store as my dumplings. So if you can't find the frozen dumplings at your store, try the pie crust and just cut into pieces. Enjoy 😊
My VERY SOUTHERN grandmother did her Chicken and Dumplins as drop biscuit dumplins, too. Most of what she made is so similar to your old recipes. I don't think she did ANYTHING the yankee way :). I've been doing the rotisserie chicken and Mrs. B's frozen for chicken and dumplins for a few years.

This isn't her original way from 15+ years ago, it's a simplified alternative to her traditional recipe. She also has a video on the way her restaurants prepare it. Some recipes are developed since she was diagnosed diabetic. The title "easy" is just another way to prepare this dish without the all the extra time required.
Rolled called pastry here in NC/SC line and always in stewed chicken.. Drop dumplings were used in fresh garden peas or stewed fruit (flour ones) or corn meal ones (string beans or greens).
Okay I never heard of that but that's how I do mine with biscuits I love having chicken and dumplings occasionally I don't make them all the time but it is delicious

I sympathize with Michael, I am on a low carb diet so I understand the torture! So why I am watching this? Lol. When I reach my goal I plan to treat myself at least on weekends. I grew up on rolled dumplings. I still can't make myself believe the frozen ones are as good, but I'll give it a try. I still prefer to boil a whole chicken, the broth is so much better. I also add a can of cream of chicken soup to give it that much more flavor. But it is nice to know the shortcuts. I put the chicken in a crockpot overnight and by morning it is falling apart. PS, I love the turquoise blouse, that is your color Paula! Love seeing you and Michael cooking together. You two are a sweet couple.
Being from the northeast, I prefer drop dumplings. When properly made they are so light and fluffy (better than biscuits). I feel bad for Michael having that tasty food in front of him, and not being able to eat it.

Y’all are so funny together! I’m a southern cook but the older I get, the more I have to look for easier ways of doing things. For my chicken and dumplings or chicken and dressing, I do my chicken overnight in my crockpot. Comes out perfect and ready to go first thing in the morning and you still get that good homemade broth. I’m going to have to try those frozen dumplings.

I come from Pennsylvania Dutch country, and we roll our dumplings, and call it Chicken Pot Pie. We also do the drop version with potatoes.

I will definitely give these frozen dumplings a try. I usually spend a half a day making them too. That's why we don't have it that often.
The “ rolled out” dough is in Chicken Pot-Pie . “ Dumplings “ are the drop type biscuit dough in broth. Of course I am from Lancaster County, Pennsylvania. Even though both my parents families are from southern states, my Mother made the “ Dutchy” kind.

I have always made drop dumplings (in NW Georgia) but prefer rolled ones. I’d never had a rolled dumpling until I was maybe in my 30s and by then my son preferred my drop dumplings.
My mom’s family was from Huntington, West Virginia, and we all make drop chicken and dump;ings. I never knew about the kind Paul’s makes. No veggies ar involved … just broth and chicken. I always add cream of chicken soup.
Rolled dumplings 100%. When I need fast chicken and dumplings I buy (raw) flour tortillas and cut them into strips dust them with flour. I buy a rotisserie chicken chicken stock and everything else 😋 and its a quick yummy meal
Shoot, my c&d is a 2 day affair. The night before, I fry chicken thighs then put them in the crockpot, add water and turn on low. The next morning, I strain it all, rinse the crockpot and put the broth back in. I sauté my onion, carrot and sometimes celery then add to pot. I pick the chicken off the bones and shred it then bag it. I mix my dumpling dough and put it and chicken in fridge. An hour before dinner I put the broth and veggies in a large pot on the stove, add seasonings, bring it to a boil then add the chicken. Bring to a boil again then drop in my dough by spoonfuls. Fluffy dumplings and chicken made in the PNW. Never had rolled, that's fat noodles to me, not fluffy dumplings.

Here in the UK I’ve always used shredded beef suet, flour, salt and water for my dumplings. Roll into balls and place on top of the stew for bout 20 minutes.

My mom use the drop biscuit in her dumpling and at the end she would add green peas about 1/2 cup to add a little color!! We live in Clemson,South Carolina and both grandmother did the same.
No way in hell do I have time to make my dumplings from scratch. I'm in Mississippi and I simply thaw frozen biscuits, not canned, and drop pieces of them into my pot when ready. No mess, no time and it's EVERY bit as good as made from scratch.
I've just got to go with your quarantine cooking chicken and dumplings video. I don't trust any freezer dumpling. Momma still makes em by hand rolling them out. So good! Louisiana born and raised.

My mom was born n raised in Georgia but moved to Idaho after marriage. All I ever knew growing up was drop dumplings and still make and prefer them.
My mother made dumplings out of Bisquick and dropped them into the boiling broth.
I make drop dumplings. I use to boil the chicken then debone but now I roast my wholefryer chicken in my dutch oven first, then debonair and put it back in the juice, and add a box of chicken broth and a half carton of water and bring back to boiling. It's good.
Ok there is another hack for the rolled dumplings. You drop cut up flour tortillas into the broth. Tortillas are the same ingredients as dumplings and-they cook up the same way. People have been shocked when they find out what they are eating. Can’t tell the difference.

I’m a lover of the drop dumplins, Texas born & raised!!..... however, when I’m in a hurry (or just don’t want to do all the work), I use a can of biscuits! Just cup them into chunks, cook for 20 mins and done. So delicious!

My grandma always did drop dumplins from scratch. We cook the whole chicken in oven and use broth from it and cook vegetables. My grandma grew up in Smithfield area in Virginia. I live in Matoaca (Chesterfield) Virginia.
I like my dumplings somewhat in between the flat and the puffy. Too flat, and they are like noodles. Too puffy, they are like biscuits. Somewhere in the middle is the sweet spot.

My Louisiana family always rolled out the dumplings. To me that's the only real chicken and dumplings. Dropping balls of flour is the same as using a can of biscuits. You're just eating chicken and biscuits. Which is delicious but it's not dumplings.

When I make chicken and dumplings, I use Jiffy biscuit mix and drop them by spoonfuls in the broth. I am from NE Ohio. I don't like noodle-like type. They're too gummy.
My grandma was a fabulous cook and very conscientious about sodium, nutrition, and quality. She used that “wet base” all the time!

My mother in law introduced me to the wet bases and I've never looked back. A little beef base added to a crockpot roast, potatoes, and carrots...so good!!
my secret is the ham version. Great in beans and green veggies, any dish with seasoning meat. I make the best collards...
We're from Northeast & my MIL made dropped dumplings. My Mom etc never made anything like this...I became the cook in the house at 8. So I never made chicken & dumplings until I saw my MIL make them .

Actually Paula, your original recipe, from years ago, is the one I learned with. Then one day I didn't have the energy to make the rolled dumplings, so I cheated and made...........Yankee dumplings. Pretty dang good, but not the same. Yankee dumplings? That's not fair!!!

I flatten can biscuits and l would cut them in small strips. But the last I made, I pulled off in small pieces.
I always made drop and made it even simpler by using can biscuits cut into fourths. I dont remember ever having rolled till I ate them at cracker barrel. Im from E. TX.

I make chicken and dumplings in my instant pot. I use the pre made pie crust that is rolled up in a box from the cooler section at the grocery store as my dumplings.
So if you can't find the frozen dumplings at your store, try the pie crust and just cut into pieces.

My VERY SOUTHERN grandmother did her Chicken and Dumplins as drop biscuit dumplins, too. Most of what she made is so similar to your old recipes. I don't think she did ANYTHING the yankee way :). I've been doing the rotisserie chicken and Mrs. B's frozen for chicken and dumplins for a few years.
I use lots of pepper and no veggies (like my grandmother's). I eat it on cornbread.

I never make drop dumplings and won't be using any frozen dumplings in a box. thank you very much.. Mine are made from scratch, rolled thin and cut in strips, dropped in my broth to cook til not doughy. Oh Paula, you have changed in your cooking too much dear.
This isn't her original way from 15+ years ago, it's a simplified alternative to her traditional recipe. She also has a video on the way her restaurants prepare it. Some recipes are developed since she was diagnosed diabetic.
The title "easy" is just another way to prepare this dish without the all the extra time required.
Rolled called pastry here in NC/SC line and always in stewed chicken.. Drop dumplings were used in fresh garden peas or stewed fruit (flour ones) or corn meal ones (string beans or greens).
When I make dumplings I use Paulas’ biscuit recipe. I’m from TN and people go nuts over them. Love ya!
