I presume you use a scale to weigh your ingredients. I do this as well. Cut measurements will work as well but people are inconsistent. If you sift the flour than spoon and into the measuring cup it will be about 4 ounces. But most folks just cram it in to the into the flour canister and get 5 1/2 ounces and then they wonder why things don’t work.

@@nathanjustus6659 I much prefer recipes - especially for baked goods - that are in grams, Nathan. And, Yes, I use a digital scale. When I do use a measuring cup, I do as you describe, I scoop the flour as lightly as possible into the measuring cup, and then I whisk off the excess flour with a bamboo chopstick, as Beatrice Ojakangas taught us while making Danish Pastry with Julia Child. 😄

@@christophert.7635 Yes I do similar. I think it gives you the best measurements. Otherwise I will also use ounces as well depending upon the recipe. If I’m going to take the time to bake some thing I wanted to come out right and have reasonable assurance that it is right. I don’t use any recipes off the Internet anymore than use flour. This is because they say one cup of flour and don’t specify how they do the measuring. Even for cookbooks unless they’re using weight measurements I don’t use cookbooks from after 1960 because prior to 1960 they told you to sift the flour and lightly spoon into the measuring cup so you knew how they were measuring.
