Very nice car and build, but I would still prefer a 351 Windsor based Stroker w/aftermarket engine management. You can get over 100 more cubic inches and a sound that no coyote motor on this Earth will ever be able to match period.
Sound is preferential. I personally love the coyote over the Windsor when it is done right. The gen 1s seem to sound the best with just a muffler delete.
Sweet car sweet build you should trim your brake pedal or swap it out for the manual trans pedal that’s smaller….I’ve hit the clutch hard but accidentally hit the brake pedal and you know bad things happen:). But what I did was bought the brake rubber pad only and trimmed the Pedal itself to fit easiest way just thought i would throw that out there.
You need a different brake pedal. 67/68s had like 3 different types of pedals if I remember correctly. You need the manual brakes/ manual trans pedal. Right now you have an auto pedal lol. If you know that already you can just ignore me lol, just figured I'd let you know.

I’m building one myself, ‘67 fastback and a gen 3 coyote which is why I found your videos! How does the manual brakes feel? I’m wondering if it’s good enough, I know some people add hydro boost. Also, are you planning on doing power steering? Some people do the EPAS since they don’t want to install a power steering pump on the coyote. I haven’t decided which way I want to go.

I did the American Auto Wire upgrade kit on my 67 myself ,and I can attest it is a really nice kit 👍
