In case there are non FGC people here, Ken has enough resources to do a combo into super3 (deals more dmg than super2), which probably would have killed, but instead chose super2 because of the relation to the iconic match between these 2, that took place years ago. He likely would not have lost either way, but it is still somewhat of a risk to take to not just finish off the opponent.
Daigo didn't have lethal either way, but he did have checkmate with oki. Super 2 has the most relevant oki here -> st.hp xx di for guaranteed stun. Super 1 would have lost corner, Super 3 doesn't have the right oki. Mostly though daigo could have just done anything that gave corner oki, Super or no.
