After they are dry, I will blanch them in salted water, for a minute, then dry them again. this makes them softer and yummier. I tried it with some last year. This is effectively a blanch, but at a different stage, and they don't become cooked at all. the salt probably also helps to preserve them. I leave all my figs whole too. after about 6 months, some of them have started to develop fine sugar crystals on the outside, which does not detract from their flavour; kind ion like fruit leather.
Blanching stops enzyme actions which otherwise cause loss of flavor, color and texture. In addition, blanching removes some surface dirt and microorganisms, brightens color and helps slow vitamin losses. Ice bath stops the cooking process.
did yours get a slight green tinge on the skin after drying? Mine did and I wondered if it was mold setting in? the taste was okay. Mine are green figs, not the black mission figs.
Did you use sea water to blanch the figs, or add a ratio of sea salt per liter of fresh water prior to blaching? I saw UA-cam tutorials that used sea water and, or add sea salt to water before blanching the figs.
I hope someday my trees produce enough for me to even consider drying them. I haven't even reached "sharing" levels yet.

I would say a few months. They never seem to last that long without being eaten!
I dried a loit last season, and they are still fine, so at least 1 year. I did not blanch them; just dried them.

I don't have a temp setting on mine, just "on".

It depends on the size of the pieces and your particular dehydrator. I normally let mine run over night.
