You two always put a smile on my face. Living in Morton, Illinois (Pumpkin Capitol of the World) my wife and I enjoy similar recipes with the addition of a can of unseasoned pumpkin purée. It adds some texture and seems to bring the chili up a notch. I love your videos and energy.

I just made this tonight!! It was super simple and it’s simmering now. To cut out the sodium, I skipped all of the aminos/soy sauce/etc. and I added 2 tablespoons of coconut sugar for the tomato acidity and a little sweetness balance. Oh I added 10oz of frozen corn too 😋 Thank you! I don’t usually try too many recipes online and this was an easy one for me. Now I have lots of yummy vegan chili for a few days too :) 😊
This looks so incredible! 🙌 Small tip- something I’ve been doing to get a more “meaty” texture, is smash 1/4 to 1/2 of the chickpeas. It really thickens it up, and gets that texture right on point! 🙌💛🤤 … also, try it with a sweet potato… #gamechanger 🙌😂

Wow, what an interesting and different spin on chili. I never thought to add tofu to chili. I grew up in a cold environment so chili is the ultimate comfort food for me & I’m on a mission to eat more protein & my iron level is chronically low, so this chili is perfect. Thanks! 👍

Chili and Lasagna are my favorite meals. I love making chili in my pressure cooker. I saute the veggies first with some water. Then add all the other stuff like fire roasted tomatoes, corn, and beans. Cook for about 25 mins on high, and it is delicious. It always pleases the meat eaters in my family too. Great video! BTW... Your lasagna recipe is the one I have been using the last few years for Christmas. Thx 😉

Edit: made it! I added a jalapeño and used extra beans (out of tofu). Put in slow cooker for 3 hours. YUM so good! I’ll make a batch tomorrow for meal prep, it looks gorgeous. Do you think it can be frozen? Maybe the second time I make it I’ll try an Instant Pot version.

I make a very similar chili, but will definitely try crumbling tofu into it. Never done that. Fire roasted tomatoes are also my secret ingredient! They are WORTH IT. I also add some frozen spinach & corn near the end. I always have those in the freezer and the more veggies the better

Perfect! I use veggie broth instead of plain water and I’ve always used red lentils but I hav some tofu in my fridge so I’m using it!

I’ve made with Gardein plant based ground beef but I’ll have to try tofu next time. I’ve also sometimes added a bag of frozen chopped spinach.
