  • Simple Quick Family Favorite Sweets for the Holidays
    Pie Crust
    5 cups of flour
    1 lb lard
    1 tsp salt
    ¾ cup lukewarm water
    2 TBSP vinegar
    Cut the lard into the flour and salt mixture and the vinegar in to the water. Add the wet ingredients into the dry and mix until everything comes together in a ball. There is enough dough here to make 3 double crust pies. For this video I cut the dough ball into 4, placed each ball into a plastic bag and then into the fridge until I was ready to use them or at least 20 minutes.
    Prize Butter Tarts
    1 egg beaten
    1/3 cup butter
    1 cup brown sugar
    1 tsp vanilla
    2 TBSPS of milk
    ½ cup raisins
    ½ cups chopped walnuts (optional)
    Mix all of the ingredients together and then spoon into prepared tart shells. Fill 2/3 or ¾ full and bake in a preheated 450-degree oven for 8 minutes and then reduce the temperature to 350 degrees and cook a further 15 to 20 minutes.
    Butterscotch Squares
    ¼ butter
    ½ cup smooth peanut butter
    1 cup butterscotch chips
    8 oz bag of multi colored marshmallows
    Line an 8 X 8 inch dish with waxed or parchment paper. Put the butter, butterscotch chips and peanut butter into a large microwave safe bowl and heat in the microwave for about 40 second, stirring half way through. Immediately upon removing from the microwave add the marshmallows and mix through. Dump into your lined dish and press down. Refrigerate at least 4 hours before cutting into squares.
    Shortbread
    1/c cup of corn starch
    ½ cup icing or powdered sugar
    1 cup flour
    ¾ cup of butter
    Mix the dry ingredients together. At this point you can either add the butter and place on a stand mixer or mix the butter in with a wooden spoon. Shape the dough into 1-inch balls. Place about 1 ½ inches apart on ungreased cookie sheet; flatten with floured fork. Bake at 300 degrees F. for 20 to 25 minutes or until the edges are lightly browned.

    While my friend's are computerizing their recipies I cannot part with the old handwritten ones pages all darkened and tattered. Many are handwritten by my grandmothers and aunts most of whom have passed on. These are some of my most precious treasures.

      I am like you, I love the dark, stained cards and pieces of paper that make up my collection. I think my recipe box is filled with more memories than even I know. I have recipes from both my side and my husband's which is extremely special as I never got a chance to meet his mamaw (his most favorite person besides our girls) so to have a recipe in her hand writing is priceless.
      I am making my oldest a Christmas gift from a hand written recipe from my box to hang on her kitchen wall. That way she will have the recipe and a custom wall art piece.

    Oh how I miss my Canadian butter tarts!.Grew up with them. As someone else mentioned, my mother made "rolly pollies" with any left over pastry-just rolled out the scapes , spread with jam then baked. I can't tell you how many times I burned my tongue on those as a child!!😂 I love your channel and you are so lovely! Thank you. God bless and Merry Christmas. 🙏😊🎄

    Gmorning Colleen. I had to chuckle when I watched this today, Boxing Day, cause I made all three of these for Christmas. My butterscotch square recipe is a tad different with added nuts. We love them and always make them. I also can’t imagine life without butter tarts and whipped shortbread. Thanks so much ❄️🇨🇦❄️

    The Canadian butter tart looks absolutely amazing but I absolutely love butterscotch so the butterscotch confetti have my mouth watering!!! I'm definitely going to try to make these!!     Hi, I’m from the UK, I’m a new subscriber…..thanks for your lovely recipes, I would have liked to see you make the filling for the butter tarts…..we use scales to measure everything here, they make it so much quicker, it looks such a pain to have to put your butter in cups then scoop out etc, measuring also make the bakes consistent every single time, so much less washing up too. ……scales aren’t expensive either…..I recommend them to everyone, I promise they will make your life so much easier xxxxx

      Hi, I bought a kitchen scale about 1 year ago because a few bakers' online recipes were using weight measurements for ingredients. For sure it makes it easier to replicate recipes. The problem is that very few recipes I seek are presented using weight measurements. Then there's always the sifted or not and packer or not etc. When I started baking a cup was any cup (a mug or a teacup) and a tablespoon or teaspoon was whatever spoon I grabbed out of the drawer and they were all different sizes. As an adult I actually use measuring spoons and cups. Old recipes complicate the situation even further.... what the devil are pinches, knobs, size of an egg, generous cups and then there's until the batter or dough looks airy, frothy, lumpy, or elastic? I've not found any conversion tables to use. Does anybody out there know how to convert accurately??

    Hi, we always use extra crust to make cinnamon twists or rolls! Use couple tablespoon of cinnamon to brown sugar! Butter crust lightly, sprinkle with cinnamon sugar mixture! This is good to do with bread dough or biscuit dough scrapes! My Mom and Grand-Mom always did this! I have done this since childhood! If you like to glaze, 2- tablespoon powdered sugar to 2-tablespoons soft butter, mix! Then add 1- teaspoon milk, 1/2 teaspoon vanilla! Hope this hint is helpful?! Love your show!     You really should put that on your computer so that if your book gets ruined you don’t loose part of your heritage.
    Why don’t you measure your butter in ounces or grams then you wouldn’t have to mess about keep squashing it into a jug measure.🤷🏻‍♀️

    Thank you for your video.
    But I can't, .... I just can't.
    My aversion to the holidays grows greater every year as Mum's All-The-Timers gets worse and worse. She will come downstairs obsessing about the tree until she see's it's all set up, ... then the obsession with the presents over and over and over every freaking day.
    I make her a list, she loses the list, so I make her three lists, one for me eh?
    I swear, I don't care if I ever see another Christmas tree again in my life.
    I'd never believe in the past that I would become such a curmudgeon, but here I am, ... So I quietly celebrate the shortest day of the year with the knowledge that every day is now getting longer with the promise of the spring. No lies of Santa Clause and flying Reindeer required, ... just the truth.
    God, I just realized that it's time to make our traditional Meat Pies. That's what I give everyone for Christmas. And I don't scrimp on the meat either.
    We were given a small Meat Pie last week and they must of hid the meat because it was such a thin layer in all that crust.
    I keep my eyes open for good sales on the Beef every summer and fall so I can buy what I can to freeze just for my Meat Pies.
    I have to eh? It's the only way I can afford to make and give away such things in this day and age.
    It's the same with my canned Beef, I buy the "old" discounted tough cuts and freeze them until I have enough to fill the canner and then I go at it. There's no such thing as "tough" canned Beef, .. not from my experience.
    Took out some of the last of the canned potatoes from 2019 and canned sausage from the same year with canned beets from 2020 and made a very tasty meal. I have to get that stuff used up before I get into the newer stuff eh? It's all about "rotation".
    This was the first year I bough canned meat from the stores in bulk, .... But I pretty well had to because I couldn't afford to buy the meat to pressure can like a normally do.
    Ahhh, the joys of being a full time resident here in the great Canadian gateless, and guard-less prison of despair I call the Gulag of Poverty.
    I tell you, it's a good thing to be a resourceful person here in the Gulag of Poverty.
    OK, enough of my dysfunction, ... have a great Holiday and many more, .... *sigh*

      I'm sorry, its sounds like you are having a difficult time. Alsheimers is a really difficult disease and it sounds like you are dealing with it the best way you can. I will keep you in my thoughts.
      The costs of food has skyrocketed and everyone is feeling the pinch. I find we are eating alot more salmon cakes than we used too and spam as well! The world is crazy and those fortunate enough to know how to can and preserve will make out better.
      I do hope you can find a moment to find a moment of joy over the holiday season. Take care, Colleen

      As long as I'm here to complain about it, I'm happy. lol. Now how convoluted is that?
      Believe it or not, I have it made.
      I was asked today how I was doing and I replied, "If it gets any better it's death and heaven".
      I have a weird sense of humour eh?
