  • Beef curry is awesome. I love making beef curry and this Rendang is easy mad mega tasty. Respect.

    RECIPE
    Ingredients
    For the curry paste
    Large thumb of galangal, peeled
    Large thumb ginger, peeled
    1½ lemongrass stalks, outer leaves removed
    ½ a red onion
    3-4 garlic cloves
    2 red chillies (retain the seeds for extra heat)
    1 tsp vegetable oil
    For the curry
    ½ tsp ground cumin
    1 cinnamon stick, broken in half
    2 lime leaves
    ½ tsp turmeric
    Seeds from 1 cardamom pod, crushed
    200g diced beef
    400ml coconut milk
    Sweet soy sauce
    1 tsp tamarind paste
    Fish sauce
    ½ tsp palm sugar
    Handful desiccated coconut
    To serve
    Rice
    Coriander
    Deep-fried shallots
    Method
    Blend the curry paste ingredients in a mini food processor to form a smooth paste.
    Heat an earthenware casserole over a medium heat with a tablespoon of vegetable oil. Introduce the curry paste and cook for 3-4 minutes. Add the cumin, cinnamon stick, lime leaves, turmeric and cardamom seeds and cook until fragrant.
    Add the beef and cook until browned all over, then pour over the coconut milk with a generous drizzle of sweet soy sauce and the tamarind. Stir well to incorporate, and leave to simmer with the lid on for 1½ hours.
    Season with a dash of fish sauce and the palm sugar, stirring well, and add a generous pinch of desiccated coconut.
    Serve over rice, garnished with coriander, deep-fried shallots, and the remaining desiccated coconut.

    I'm from Indonesia so I'm very familiar with this dish. It originates from Padang in West Sumatra. In my city you can find it every 20 meters or so a restaurant selling these. If you visit Jakarta you'll be very excited I guess.
    I rarely cook this (because it's very time consuming), the right way to do it is simmer it for at least 4 hours!! Until the beef is soft and flaky. So I just buy instead (for only $1.5 for each rendang)

    Guys, it is your option to put this and that in your food. Not everyone like a strong taste on their food, especially when they coming from another country.
    Most people don't like spicy, they pretty much avoid it and some people love the taste of sweetnes.
    I don't get it, wheter it is or it is not authentic recipes.. in fact that if you ever went to many asian (+indonesian) restaurant everywhere in US/UK/EU they all taste bland far away from their origin country! And there is a reason why, because every region + country have different prefference of taste.
    Oh and not in every country you can find some specific ingridients for your "very authentic recipes"!!
    Anyway, thank you Food Busker for sharing your recipes :)

    The "Sweet Soy Sauce" he mentions is called Ketjap Manis, crucial to Indonesian cuisine. purchasable at Asian Supermarkets or even Sainsburys. That being said it's relatively easy to make your own.

    Pretty good rendang, I'm impressed. Only thing missing was a little grated candlenut at the end to aid thickening and add a little something something. I learnt my tricks in Padang, the home of the best Indo food! Keep doing what you're doing, good stuff going on here!

    fyi....the longer it cooks the better the flavour....same for the leftovers....just leave it in the fridge/refrigerator....had mine in there for a week and it taste much better than the week before

    This is not authentic indonesian beef rendang.. We never use sweet dark soy sauce, soy sauce and fish sauce to make rendang.. Dark color of rendang made of coconut milk in caramelization because we cook that very slowly and never stop to stir. Btw.. Your dish look delicious..

    rendang with kecap manis ( sweet soy sauce)? you must visit sumatra island , and you will know how the traditional way's to cook rendang ! good job

    Indonesia and Malaysia both claim this dish belongs to either one of them. Haha. Beef rendang is a must to Malaysians celebrating Eid. Your recipe is slightly different to my mother's recipe. She put kerisik (coconut flesh browned up in pan without oil then you pound them until the oil came out) after the beef cooked down. My mother also put thinly sliced daun kunyit for flavour. Dont know what is daun kunyit in English.

      To settle this once and for all, Rendang i a traditional dish of Minang people of West Sumatra, Indonesia. But, Minang people were famous for travelling to distant places and some of them ended up in Malaysia and settled there. Rendang itself was created because of this habit, since the spices and coconut milk preserve the beef, thus making it a perfect food for travelers.

    Aww~~I love Rendang!! Actually, its a well-liked dish around Indonesia, Malaysia and Singapore!! One may replace the beef with chicken, mutton or fish too. Try using fresh coconut cream as it taste the best. Happy cooking ;p

    the fish sauce and soy sauce is wrong. but at least you used galangal and tamarind paste. not many people use those two ingredients and they are essential

    What's up with the soy sauce and fish sauce? Rendang doesn't need those seasonings. It needs more chilli peppers. It won't be spicy as you'll cook it for a long time. An easier recipe is to omit the spices (cinnamon, cumin, cardamom, turmeric) as the main flavour comes from the paste. As others have mentioned, grate some candlenut to thicken the gravy and put some chiffonade of turmeric leaves (if available) before serving.

      Usually it's min.4 hours, but the longer u cook the better (softer n tastier). And if u have leftovers, just put it in the fridge and when u feel like eating it again, u can just reheat it, and it will taste more delicious.
      Rendang is usually a lot tastier the longer u cook or kept, since the oil n seasoning are more n more sinking into the meat. It may not be the healthiest way, lol, but DAMN it's worth it! Trust me ;P

      +raymandelope its okay doe, if you wanna the authentic one, visit the place of origin of the food. i do really like rendang cuz if you bite the meat , the texture of the fiber is the most subtle and original also the oil and grated coconut.

    owh my god, this is not Rendang in my opinion. this called Kaliyo. The color of your food is still light brown. FYI Rendang color's is more darker than that, and lil bit more dry. But overall i love this food... 😋

    Ooooooo sweetheart.. No cinnamon, no tamarind. And PLEASE! NO SOY SAUCE! Ginger, young gallangang, lime leaves, candlenut, garlic, shallots (we don't use red onion in all indo dishes), chili. Sautéed all this. Add beef and coconut water from old coconut with water. Braised it till it dry. If you want more sauces, add more coconut milk

      That'd be how you make a traditional rendang. While this evidently is his own take on a quick, easy version with ingredients you can find in a british supermarket. But whatever.
