the sugar content of the syrup or water makes a big difference in how ice crystals form. and syrup also likely has some corn syrup which further contributes to very small ice crystals (creamier texture). egg white can also help make it more fluffy.

If the protein creami comes out well, I'd recommend trying some of the powdered protein from Boba Nutrition! They have a really good taro flavor (I also bought their matcha and milk tea, but I have so many protein powders open right now and I'm trying to finish them first 😅)

To help the crystals, try mashing the fruit with an avocado masher before freezing. It will mash down but just add milk or something to the fill line
