SOFT ALMOND COOKIES RECIPE - ΑΜΥΓΔΑΛΩΤΑ - ΕΡΓΟΛΑΒΟΙ ΣΥΝΤΑΓΗ

An easy and very tasty soft cookie recipe !
INGREDIENTS:
260gr (2cups) Raw Almonds
160gr (3/4cup) Granulated Sugar
2 Egg Whites
1/4 tsp Almond extract
1tsp Vanilla seed extract

These look yummy! I wish to have seen the middle of the cookie at the end. I'm trying to find a recipe for a cookie I've had in Greece. I think these might be them. Are they very soft on the inside and a bit crunchy on the outside? =)

I don't own a food processer to chop the almonds, can I use almond flour and if so how many cups would I use?
