    This is the way I learned; crack 1 or 2 eggs (leave shells in two pieces - like a little cup) into a bowl. Use half an eggshell and fill the half shell with cool water. Add to bowl with eggs and wisk it all together till light yellow and frothy add a modest pinch of salt and pepper. Heat skillet to medium high and melt a tbs of butter in bottom of pan. Once butter is melted quickly add egg mixture and gently swirl it in pan to cover bottom. Add cheese or savory veggies to one side of omelet and immediately begin rolling up. As you roll the cheese will melt. Roll it right off the pan and onto plate, which you have close by. Garnish with butter and a half tsp of parsley.     What I appreciate about eggs is that they are filling. If I eat 3 eggs, two slices of heavily buttered low-carb toast, and a cup of tea for breakfast I don't get hungry all day. I can skip lunch, in fact, I forget about eating until dinner. Plus, those annoying food commercials on TV don't entice me to snack or indulge at all! I am slowly losing my excess weight (I'm 74), and I am very happy about my Keto-friendly diet, thanks in part to you ladies and your love of eating sensibly but deliciously! BTW, I bought 2 Dash waffle makers (the 4-round and mini-single), plus the 8" round Express Griddle! They are great and inexpensive products and very useful! Bravo!

I want to also make their homemade ice cream made with cottage cheese. Iam also going to make the cottage cheese chips made in the microwave. Sounds like it will get me through my problem times of wanting to crunch in the evening that’s my really hard time of the day

    If you leave the whisked salt and egg mixture for 10 minutes before you cook and give them a quick whisk again before cooking, it's even fluffier. French style omelets normally have herbs or other ingredients mixed in with the eggs while cooking and are rolled in 3 sections. Mexican style omelets cook the egg alone and then add the fillings inside a half fold.

But very happy that I found you now. I watched Julia Childs years ago when she first started out and 0:37 one of her first tv shows THE FRENCH CHEF, she made a french omelet, it was perfection.     use a wide spatula to help roll the french omelet. for the Ricotta Scramble, there's a fine line between them being able to be "thrown" and them going all over the place lol. i think less stirring will allow them to form into one big clump that can be tossed easily. Looks great either way though

    depending on your chopstick skills, you might want to try using chopsticks with the spatula to roll it up to avoid hurting your fingers. similar to making gyeran mari/korean egg roll.

    My husband makes a really tasty African style eggs. He sautes thinly sliced onions, thinly sliced tomatoes, a 1/2 tsp of finely diced habanero and some knorr or Maggi seasoning cube. He pours the beaten eggs over it all and lets it cook undisturbed on med-low heat flipping it when basically cooked on top.
    My eggs-essential favorite is egg bread.
    Similar to the start of the other one, but put marble cheese or tex-mex shreds into the beaten eggs and some chopped chives. Pour over the sauteed onion, habanero and tomatoes have your low carb bagels or low carb bread ready to place on top of the eggs, filling in all the gaps as best as possible and cover for a few minutes....flip and slightly brown the bread side for a minute or two. You can serve folded or open faced.

    I just tried the ricotta scrambled eggs and I'm sooooo obsessed!! Thank you so much for posting this. It's very easy actually, and I am not an advanced cook whatsoever. I rolled this up in a keto tortilla and YUM! I'll need to get some truffle oil.

    I blend cottage cheese into a cream and add 1 tablespoon per egg when scrambling, SO GOOD!

    I make that "omlete" frequently! I use rubber head tongs and a spatula to toll it. I just add cream cheese or shredded cheese to one end and then roll it. I even used mashed avocado and cream cheese as a filling! Good job rolling!

    Add a bit of sugar than it becomes japanese omelette from french. Tip if you keep your eggs in the fridge, add a bit of water (like 1 tsp per egg) to make it soft and fluffy.

    If you haven't tried it yet, add cream cheese to your scrambled eggs. Cut up some cream cheese and add it to the scrambled eggs, add to hot pan, and cook. SO yummy!

    I don't often buy ricotta, but do use plain old cottage cheese like this and I love that, so I'll have to try with the ricotta!

    I use an immersion blender to froth the eggs very quickly. Much easier and less work than using a balloon whisk. I will give both of these a try.

      Just started using my hand held frother, it does a great job.. Also, use it to whip up limited cream (think 1/4 of a cup) it has 2 speeds. I used the cream on my single pumkin pie (keto of course).

    Just made the 2nd egg recipe. Definitely a keeper. It was restaurant quality. I gathered the egg together encouraged it into a log, and using my spatula rolled the egg in sections. Came out very fluffy, I think it was the ricotta.

    I separate the egg yolks from the whites, then whisk the whites to soft peaks, then beat the yolks and fold them into the whites. It makes a very fluffy omelette.

    Thanks you to!!! Well I learned something today! I've been making French Omelette for years and didn't know it! 😂😂😂😂😂. I do put a ham slice in mine once in a while. I just tilt the pan away from me and place a slice of ham while some of the egg slide down the pan and just keep rolling works great! Thank for enlightening me on the French omelette. and tomorrow I'm putting ricotta in my eggs. You guys did a great job!

    Make sure you add some salt while frothing the eggs up. The salt will help break down the yolk and help to froth it up.

    Basic omelet / scrambled egg starter = 3 eggs + 60g Cacique's Crema Mexicana (Mexican Table Cream) ... then add-in whatever you want. Cheese melts better in the egg and cream mix.

    Here’s my recommendation for keto fries. On the last Sunday of each month go to Mac Donald’s and order a large order of fries. Once a month won’t kill you. That’s how keto works for me, and I’m down from 215 to 140. And you will probably discover the fries aren’t as good as you’ve been imagining.

    These egg recipes sound delicious! Growing up Mom made scrambled eggs with cream cheese. I didn't like them when i was younger, but as an adult they have become a favorite. I need to try them with ricotta. I bet marscapone would be delicious too. Herbs de Provence is very good on scrambled eggs. I love eggs 😊

    I wanted to add one more thing. In my French omelettes, I sometimes add just a tiny pinch of dried or fresh tarragon. Sometimes I also add 2-3 precooked small shrimp without the tail. Happy eggs to you and yours! 😎👍🏻

    I love eggs and it’s a staple for me on Keto or Carnivore. Even when they got up near $4.00 a dozen it was still a super cheap protein. I used to always keep a dozen at work. Crack a couple in to a mug of hot water then microwave 30 seconds at a time until poached to your liking……easy peasy.

    Spring garlicinstead of the first one is great! Simple and if cooked over a low to medium heat works great in most every pan except from cast iron. ( Not that I don't love other cast iron recipes!)

    Good job…most people cook eggs on too high a flame which seizes the protein. That’s why omelets in cheap Diners are “tough” and dry.

    The second recipe is what we in Australia call scrambled eggs. People make it different ways. So leave the egg to cook then mix and toss to one side of the pan like you did. While others stir constantly breaking the egg completely. That lets the water out of the egg and it goes tuff. I don't like scrambled eggs done that way. I prefer the way you did it. But a very nice light meal. Although I would prefer it with a nice piece of toasted olive sourdough! But we can't have everything in life, can we?

    I do eggs every day and I do them in the microwave, my tips are break yolks, cook in glass, cover with vented cover and cook slowly at half power and add time to find your ideal timing, as extra large eggs need more time than reg size small eggs and you need to account for that, also let eggs be room temperature before cooking... and the best thing is fresh local eggs are outstanding. Love your show, glad you have revisited your egg recipes.

    You should try creamy scrambled eggs. Just butter and eggs that you scramble on lower heat that come out creamy and delicious

    After you get the French Omelet rolling, I would use silicone tipped tongs instead of my fingers :) But good job accomplishing that French Omelet!

    I added a litlle bit of what I call Zing on top ,,,, just a touch of grated cheese, dried onion bits for light crunch, bacon bits and a very light sprinkle of chives,,,, microwave just to start to melt the cheese and enjoy. Yowza!

    hi ladies, catching up on watching videos. The ricotta egg recipe looks awesome!
    I really miss lasagna making this might do the thing? Im Italian a d a fan of pepper 🫑 & egg sandwiches. I could eat this with a garnish of red gravy (tomato sauce) and open face on Lewis Keto bread (sold at Jewel).
    OR no bread at all. I will definitely try this 👍🏼

    Keto Twin Powers - ACTIVATE!
    I just saw a recipe for a homemade Wendy's Frosty. My immediate thought was "Will this Keto?" And my second was, "Could the Keto Twins do it?"
    So I'm asking - can you Keto this? (No harm, no foul if it just cannot be done!)
    1/2 gallon of chocolate milk
    1 (14 oz) can Eagle Brand Milk
    1 (80z) Cool Whip
    Mix well and freeze Mixture does not get hard, it's like a thick milk shake.

    Try making some fried fish/salmon/crab patties. You can use egg almond flour and mayo and cheese to give them body. Many recipes in the computer for Keto patties.

    Okay. You guys truly need to make Tamagoyaki - Japanese omelette. You need that rectangular pan. They are the best.

    I'm curious what the volcano egg recipe you tried was like? I will look through your videos to check. My mom often made a volcano egg for me when I was growing up. I loved them and made them for my kids. Yours has to be way different from ours.
