Many thanks for a lovely demonstration. I made Danish pastry once. My squares had only two corners folded in and I filled them with custard and home-made jam. They were delicious but I wasn't surprised they were a bit more bun-like than pastry-like because I found I wasn't able to roll the pastry as thin as I thought it should be. I remember I froze most of them and brought them out two at a time, (because there are only two of us) sprinkled water on top and reheated them in my small bench-top oven. They tasted as though they had just been baked.
When I was young and living in Iceland the bakeries had vinarbraud... it was similar to this but had almond paste or filling in the middle. I wonder what I would use for almond filling? Been looking for a recipe for over a decade, and this gives me a good start. Thank you!

I have an almond filling recipe but it's not for Danish pastries. It was for Dutch almond cookies. Therefore, it probably isn't suitable for recipes like this. I made the almond cookies twice and they are lovely. I looked online for a recipe for these because the packets of almond fingers they import from Holland now don't have butter in them. As if that wasn't bad enough, the bakers now use apricot kernels instead of almonds, which makes the cookies horrible. They ruined something I didn't buy very much because they were too expensive for anything but an occasional treat.
