Hi. I made this dish today for dinner using Arborio rice. I waited 12 minutes before adding the shrimp and then about 7 minutes for the rice to absorb the liquid. The rice was still al dente. so was perfect for us. I think I'll wait 14 minutes next time before adding the shrimp and cook the shrimp for a shorter period of time. I live at 1890 meters above see level, so recipes need to be adjusted for high altitude. The dish was very flavorful and we really enjoyed it. It was also quick and easy to make. Thanks very much for posting. I'll be making one of your paella recipes soon. I've ordered a 12 inch Garcima paella pan and the Matiz Valenciano Paella Rice linked in your notes.
Albert, I don't know about Spain, but rice is kind of at a premium here in the States. This recipe looks so good that I am changing next week's menu to include it (yes, I write out a weekly menu for my wife and I-don't judge me). Keep up the great work.
lol.....nothing wrong with a weekly menu, I actually think that is AMAZING!!!! here in Spain prices for rice are the still the same, such a popular ingredient here and we have tons of it, much love Jeff
Made this tonight and it was deliciouso! Cooking the shrimp separately ahead of time makes a huge difference. Substituted chili powder for the peppers and the paprika. Your voice is so passionate and lyrical. You can hear how much you love what you do in your voice. Muchas gracias por la receta!
Wow brother you have no idea. My grandparents were from Spain never spoke English so I never had a relationship with them. Sadly they past when I was a very young boy. All your dishes bring back memories when I would see my grandmother cooking. Absolutely incredible broskies 🤙🏼🤙🏼👍🏼👍🏼

I was wondering why you prefer to use the saffron from Turkish / Iranian farms vs Spanish for your dishes. Would the Spanish work as well? So much to learn !

Yum. Just ate this, but I had to cover with foil and kitchen towel and let it sit for 5-10 minutes to finish off the rice. Also, I made it backward! I cooked the shrimp while the rice was cooking, plenty of time. Nicely caramelized rice on bottom. Used Bomba rice, but what's the difference between that and Arroz de Valencia?
Bomba rice is just a variety of Spanish round rice, which happens to be the most popular to make paella, and arroz de Valencia is a different variety, but still round and can be used to make paella as well :) much love
I'm making chicken tinga on Friday, and I want to serve it with some saffron rice, but with slightly different ingredients. I'm not using shrimp or peas. And I might be adding some black beans. You used 3 cups liquid here, but only 2 cups in your saffron rice with mushrooms, so I'm thinking different ingredients affect how much liquid you use? If I'm just using onion and garlic, and maybe 1/4 cup of black beans, how much liquid should I add? (I'm using bomba rice.)
my first try at this recipe was not all that successful. long grain rice is a tricky animal. I'll have to try again with varying liquid and heat adjustments. and then I'll use a "round" rice .....

How is your rice so yellow? Do you add turmeric? My saffron only gets so far.
