    Steph, the casings are pig intestines and they are very long once they are soaked. You will not need them all, just one or two. Be careful when taking them apart you don’t want to put holes in them. You’re cracking me up with this. Meat cutters daughter here who helped with the sausage making. 😂 Seasonings get mixed in after grinding. I give you a lot of credit for doing this. Next time just fill the whole casing and once it’s filled just twist it at the length you want your sausage. Once you twist them in segments you can cut them apart. You also want the sausages to be cold and poke a few holes in them so they don’t explode. Please unplug it when changing the blades.

    I used to help my Dad, who was a butcher, make sausages using a crank run grinder. You did a great job. Have fun using your new toy. You can par-boil the sausages before putting them on the bar-b-que, about ten minutes max and they will cook up beautifully, especially with organ meats and pork.

    Steph, my Grandma use to cook pig knuckles which is pig's feet. Going out with Keith and brought him over to my Grandparents house for dinner Grandma made pig's knuckles. Keith's face was priceless!!! My Grandma made Keith steak. Grandma thought Keith being from the South, they eat alot of pork, but not Keith!!! My Grandparents came to this country from Hungary and they were very poor. You never refused to eat what was put on the table. My Grandparents came to the States bc their Father's were killed in WW1. My Grandfather got a restaurant in Manhattan from his Uncle and that set my Grandparents up for a good life ❤. Thank you for this special memory 💜. Joan

    I hadn't used my grinder in about 20 years until carnivore. Then I found leg of lamb at Costco and started grinding my own lamb to make lamb burgers with Greek seasoning and feta cheese crumbles mixed in. OMG! I could eat those every day with a big butter pat melting over each patty. I'm so excited you are making sausage and I'm really enjoying reading all of the comments. Great video!

    My butcher husband said your links have too much air in them & that’s most likely why they busted open on the grill. You did great for your first time, practice makes perfect.

    Our grinder was manual; I know you don't eat bread but that's what mom and dad used to "clean" the grinder; the meat and fat stuck to the bread; they gave the bread to our dogs . Their arms had to be sore as 200 lbs. of pork were ground and then stuffed; lots of kielbasa to be smoked.

    LET ALONE attempted to make sausage!
    The sausages were BEAUTIFUL--- and you learned that next time, to knot each individual sausage as you filled them---

    When cooking if wanted too do on the bbq put folk holes for the steam too come out so they don't burst

    I have a meat grinder attachment that goes onto my kitchen aide mixer. I love it. I use it to make chicken salad and ham salad and westerns.👍🏻💓

    You did really well for the first time, We make our own mince because I throw up if I get gristle, so I like it lean. We have a hand mincer (grinder) but we have also now got one that fits on my kitchen-aid that my husband loves as he just puts the meat in and it minces (grinds). I have only recently learnt that the meat should be really cold and that mincing it two to three times will give better results, your last mince was definitely how it looks from the shop. I have not tried sausages yet but I would like to 😬 got to try them. Well done Steph. ❤❤

    If you don’t want to eat the casings, while cooking sausages in the frying pan add a bit of water. You’ll be able to slide the casings off using a fork. Cook them until golden brown.

    As someone who cut meat for 40+yes do yourself a favor. Make all your sausage into patties. You will save time aggrievation and money. Buy yourself a hand patty press. Casings are a PITA.

    Poke pin holes in casings before grilling to let steam out, then the won’t blow up.

    Ohhhh😂😂😂sweetie 😂😂😂I’m sorry I really don’t mean to laugh but the look on your face was priceless! Those pig intestines threw you for a loop😂 Oh I love you for being so adventurous. You don’t have to triple grind the meat, just use the size you want, grind, season then stuff. Just a little tip, rub fat from your hand all over the tube before putting the casing on the tube, slides on much easier. Air frying would be the way to go. Usually you would smoke the sausage the next day after the gut had time to dry out a bit, then you can bbq it. Never quit experimenting, you’ll get it! God’s grace be with you two. 🙏🏻💖from me to you.

    Great job Steph! When I was between the ages of 4 and 7 yrs old I would help my Mom grind meat up using the old hand crank meat grinder that you clamped on the edge of a table to hold it steady. If I am not mistaken I still have that grinder somewhere in my storage unit. Love you Guys 🥰

    The colder the meat and fat is the better. Even partly frozen. It will keep the fat from smearing

    Interesting Channel. Very comical too. I been carnivore for about 6 months, I ran across a great channel you may find interesting : "Butcher Wizard" I like his presentations and cost analysis of cuts of meats and many tutorials on how to cut up different bulk meats, such as the chuck roll.

    That looks good. Once you can have spices you can customize the flavor to your liking and tastebuds. You did great. I think the casing is from pork. Beef casing I think would be to big in diameter. EYL and sausage

    When washing inside the casing are you able to use the black plastic tube things to keep the casing opened and you can slide it on while washing/rinsing the casing.

    I'm from south Louisiana. You did a great job. We make boudin like that. Before grinders we would take a cut cow horn and put the meat in the casing by hand through the horn into the casing. Was fun.for your first time, never doing it before you did a great job. Have fun.

    Great job. It is not as easy as it looks. I helped someone make sausage links years ago. Mine did not turn out as well as yours did.

    Hi Steph I've watched this loved that, you did great I've watched sugar free farm when they did it I think that's was amazing what ever you got got from shopping too make the sausage you did great if cook the sausages you made till there golden brown all over you could cut them in half like it do just too check their not pink in the middle well done steph

    My son n law and daughter had a processing shop for several years. They did so much processing that they were too busy. Most of the work they did was venison and pig. I watched them make sausage one day and couldn’t stomach it. I never did again. I also do not eat sausage. Lol. It just the thought that you are using pig intestines. Bowel and all. I guess that sounds silly but I have never eaten much sausage even as a child I didn’t like it. I grew up in the south where puddin and Chitlins were sold. Nope not me. My step dad used to tease me as a child and say that I wouldn’t eat sausage because I was worried about finding a piece of corn from the casings not being washed well enough. Well that finished it for me. Nope no sausage for me. I have helped my daughter grind meat. But it was on an industrial size grinder. Since it was venison we had to buy beef fat and ad it to it because venison is extremely lean meat. They bought fat in 50 lb boxes from a processing company. I also used to buy beef bones to make bone broth. They would sell me a big box of them for like 15.00. That’s been a few years now so I don’t know what they charge now. Stay safe and God Bless

    You should so some with liver and some without and then do a taste testing. I am sure there are plenty of videos out there about making sausages - but I really enjoyed your way.

    I saw you make sausage and they fell apart you need to boil them four about 5 minutes to close the casing tite then you can pour on the BBQ it will work out

    When stuffing casings remove blade and plate. No need to grind again

    Your grill was too hot. I’ve never seen hamburger in a casing before. Sausage has different meats (stores also use filler, yuck) and various seasonings depending on the type of sausage. The Carnivore Diet is really an adventure. I’m loving your gadgets. 😊❤

    That meat grinder is pretty much the same as what my grandparents used to make sausage and souse meat when I was growing up. Shouldn't be hard to learn how to use it all. Have fun! Makes me think maybe Sevens side of the family could've helped with a whole lot of the stuff y'all been doing probably. 😊 have fun!

I used to have to crank the darn thing when I was a kid. I have been looking for an old crank for a long time. However with my arthritis I probably wouldn’t be able to do it.     I was wondering how it would of worked out if you just fried them in a skillet instead of trying to grill them. It looks delicious though. You’ll figure it out that was just the first time. 😊

    I've always wanted to make sausages, have never done it. I hate when I get fresh ground sausage and find hard bits or bone in it and I don't like the flavoring in a lot of sausages. Maybe when I retire!

    It was fun watching you make sausages from scratch..but i think you are suppose to maybe give them a quick cook before frying them 😬🤔🙄 and maybe use lamb instead of pigs intestine strings 🤷🏼‍♀️ , but please ask a butcher about that cause im not 100 % sure 😊😊👍😉

    I'm going to have to stop watching you Steph. Your costing me too much money LOL.
    I got the waffle maker and love it.
    It was time consuming, (It's just me so only 1 waffle maker) but I made some waffles with the carnivore bread recipe because I'm not finding that I like that and had 1 more batch left. I actually like the recipe cooked as waffles and it made 12 so I froze some to take out as needed.
    Now I'll want to try this. Gotta find some beef and fat...HAHAHA.

    Maybe if you boil the sausages for a bit before grilling they would stay together even if the casing pops open. Just a thought. I have no experience with any of it.

    I would have cut them individually and froze rhem first then tried to grill them on a grill sheet. I put a special grill sheet on my grill. Or you could have used a foil pan. I would try adding panko into the mix as well as some hard boiled eggs right into the mix. Or I would try to cook the ground beef seperate then ground it into the sleeves freeze it the grill it from frozen. It's more work but it can be enjoyable.

    Better to have grind your own meat that way you dnt have worry about extra ingredients or poor quality meat and or pink slime

    Haven't you ever made raw brats before? Simmer in beer or water, then grill.

      Other way around grill then simmer in beer and onions it softens the casings. If you simmer before grilling it extracts all the flavor and natural juices out .
