Chocolate Birthday Cake

  • Chocolate Birthday Cake, the flavor that never ages!
    ------------------------------
    Serves 20
    Ingredients:
    170g x Butter (softened)
    1 1/2 x Cups Brown Sugar
    2 x Eggs
    1 1/2 x Tsp Bi-Carb Soda
    1 1/2 x Cups Plain FlourMilkter Sugar
    2 1/4 x Cups Plain Flour
    3 x Tsp Baking Powder
    1/2 x Cup Cocoa
    Buttercream Icing
    250g x Butter (softened)
    2 x Cups Icing Sugar Mixture
    1/2 x Cup Cocoa
    1/4 x Cup Milk
    Method:
    1. Beat together the butter and brown sugar until pale. Add eggs, and beat until smooth
    2. Stir and dissolve the bi-carb soda into the milk, then pour into the mix.
    3. Sift together the cocoa, flour and baking powder - then beat together until the perfect consistency
    4. Pour into a butter lined and baking paper-ed cake tin. I used a 20cmx20c Square, and the result was SOLID GOLD.
    5. Pop in the oven and bake at 160c for 60 mins/ Allow to cool fully before applying the buttercream
    6. To make the buttercream, beat the butter until pale and smooth, then add the icing sugar, cocoa and milk, and beat until fluffy.
    7. Decorate as you like!... and be sure to lick the bowl ;)
    Personal note: I expected this cake to be heavy and very moist. It was SO light and fluffy! Very moist, and plenty of flavour. The buttercream, was quite thick in places, and I feel that I could have used less on the final product.
    Warning: Your significant other WILL eat it all at 2:00am and blame it on your housemates.
