Rice Cheese Balls
(makes 12 - 13 pieces)
2 cups cooked rice
2 eggs, beaten.
1 cup grated carrot
1 cup finely chopped green beans
1 cup grated mozzarella cheese
1 tsp salt
1 tsp parsley
1/2 tsp pepper
2 tbsp or more of all-purpose flour
Mozzarella cubed, as filling.
2 cups bread crumbs for coating
Oil for frying.
Dipping sauce to serve.
Add cooked chicken, shrimp, ham, etc. as you prefer into the mixture.
After coating, store in the refrigerator for at least 30 minutes or until ready to fry. Or make ahead to fry for the next day.
