    hey Quang it's not "SIGSIG" it's "SISIG" haha. and for more info: Pork Sisig is a popular appetizer that originated from the culinary capital of the Philippines : Pampanga. Traditionally, sisig takes all the good parts from a pig’s head - specifically the cheeks, snout, and ears - along with the liver and belly, simmers them in water, and then they're chopped into small pieces and fried. The mixture is spiced with chili peppers and calamansi, a small green citrus fruit that resembles a lime, and finally mixed with egg, onion, and sometimes mayo. :)
    Pancit Bihon Guisado - or simply "Pancit Bihon" is the type usually associated with the word "pancit", very thin rice noodles fried with soy sauce some citrus, possibly with patis (fish sauce), and some variation of sliced meat and chopped vegetables.
    Longaniza is a Spanish sausage similar to a chorizo and also closely associated with the Portuguese linguiça. Its defining characteristics are interpreted differently from region to region

    Hey quang. Thank you for doing a Filipino food mukbang. :)
    In the Philippines, during celebrations and fiestas, we roast whole pigs, this is called lechon. This is served whole at parties. The head of the roasted pig is usually cut of skin, meat and fat and used for a variety of dishes. One of those dishes is SISIG. the meat is chopped finely and it is usually served on a hot plate. This is popular drinking food and people usually order this when they're drinking or have them as a meal with rice. :) So to answer you question, the crunchy / rubbery textures you may have noticed while eating it is probably cartilage from the ear of the pig.
    The LONGGANISA you were eating with fried rice and egg is what we call (LONG-SI-LOG) Longganisa, Sinangag (fried rice) and Itlog (Egg). This is a common breakfast food. The -silog prefix is usally attached to other kinds of breakfast food like (TO-SI-LOG) Tocino (sweet meat), sinangag (fried rice) and itlog (egg). There are various kinds of -silog food and this is a usualy Filipino's go-to for breakfast. :)
    Halo-Halo is translated as Mix-Mix because Halo means mix. This is because you need to mix everythin together before eating it. The Philippines is a tropical country and it gets quite warm during the summer. This is one of the go-to desserts (usually all year round) but most appreciated and sought after in the summer. Its a mixture of shaved ice, ice cream, flan, ube (sweet potato) jam, different kinds of beans, nata de coco jelly, condensed milk and evaporated milk, sometimes with banana and caramelized jackfruit.
    Filipinos LOVE to eat, and if you noticed, our food is quite flavorful because we eat everything with rice! I hope you enjoyed Filipino food. Thank you for trying! I love your videos! :)

    As far as the Halo Halo is that it is made with Evaporated milk and condensed milk, shaved ice, palm fruit, nata de coco ( coconut gelatin), palm fruit, leche flan, fresh jackfruit, mangos and sweet beans,. Every place makes it different and the Ube is on top then it is Ube Ice cream and if it is in the middle then it is Ube Halaya which is ube root grated and cooked with sugar, milk until it becomes a paste.

    I am glad you squeezed the calamansi on the dishes cause it elevates the flavor, Calamansi is like Lime with a hint of orange flavor . and Sisig is made with pork head chopped up with onions, garlic and chilies. sometimes topped with an over easy egg and mayonaise. The bihon is made with pork, shrimp and vegetables with soy sauce.

    calamansi
    Salt and pepper
    Eggs
    And thats crisy texture is made up from pork skin called "chicharon" and maybe from the crispy liempo.

    Sisig is usually made of pig face, pig ears and "bagnet," which is deep fried crispy pork belly. The one you is the one with either pig face or ears. Those white bits are the soft bones from the pig ears.

    I’m Filipino!!! It’s pretty funny how u described each dish and try to say it lol. That sweet lime is called kalamansi. And it’s pronounced (Pun-set) or pancit. Which I love. 💕

    So yeah, pork sisig is deepfried pork, crunchy on the outside and jouicy on the inside (that if it's pork rind or pork belly) but if it is pork mascara, the pork face with the cheeks, snout and ears, well that is the white cruncy soft bone like thing you just pointed out. It usually is mixed, the mascara with the pork rind.
    Now after friying it. Chop it up and shred it, sauté some garilic and white onions then add some pepper and that asian chili (minced or diced) then add you shredded meat. Then add vinigar and salt to taste. Should be leaning towards the sour tasting side. Finish if with some more white onions on top, chives and chili minced, for garnishing add your kalamansi, with a little slice, serve (best with rice and beer).

    Sisig is a fried pork ears, belly and a mask of a pork wich is separated to the head bone. They chop it and cook with a knor seasoning, onion, garlic, a little bit of mayonnaise and egg. The little sitrus or lemon that you put in the sisig and panait bihon is called calamansi.

    Hey man! Just to enlighten you a bit with the sisig (si-sig).
    Originally it's made out of charred pieces of pork, vinegar, ginger and salt.
    Generations past, we Filipinos made some authenticity twist to it, like the one you ate, that was deep fried and added some chicharon (fried pork skin) to it.
    The one with intestines are just the cheap sisig that we make haha!

    from what i can see. their sigsig is made from a mix of lechon and bulaklak [ deep fried intestine ] chopped, mixed with diced onion jalapeno and spiced canesuger vinegar .

    Sisig is usually parts of the pig head sometimes organs with onions. But some "higher end" places also use belly sometimes. And the topped part is grated chicharon which is deep fried pork skin with fat haha

      Aldrin Rodriguez Longanisa and Tocino comes in different flavor variations...depends what region of the Philippines it’s from. I’ve had the sweet and also the Vinegar flavored variation.

    Sisig is made with face meat of a pig with ears and sometimes pig's tongue.
    The one made with intestines is called dinugu-an or pork blood stew. Both are well enjoyed with rice.

    QT: Sisig is made of Pig Face, Ears and Brain.
    There are 2 ways to do sisig you can boil the Pig face and Ear season it with salt, pepper and Garlic. After boiling it you can either Grill or Drip fry. Once done grilling or frying the meat use you food proccesor to mince the meat.

    Original pork sisig does'nt need intestines and other pork internal organs, sisig is made from the cheek and ear cartilage that was braised until soft then grill and fried till crispy, whereas the cheek is also grilled and fried then minced(same goes for the pork ear) it is then assembled with vinegar in a sizzling plate

    Sisig is pork head parts, just take off the bones from the pigs head. Boil it then grill it...slice it into small diced sizes then put it on a hot plate with butter...should season it with salt and pepper before then add atleast some onions too.

    SISIG is usually Pork face, pork liver, pork ear. And yeah, its more fun and delicious when you eat it on a sizzling plate and add some fresh egg and soy souce!

    Its chicharon, deep fried pork. sisig is composed of pork meat with pork skin and fat, sometimes they put intestines in it. Its best served with rice and chili pepper on the side. It is also eaten as a "pulutan" while drinking beer.

    Sisig is griled chicken liver, pig skin, pig ears, minced pork and the crunchy one is chicharon. The best one is served om a sizzling plate topped with egg. Fefinitely favorite of not only Pinoys but foreigners as well. Even my Singaporeans colleague love it.
    Longganisa trumps all the sausage. Even Koreans love it. Damn I miss Filipino food.

    The crunch in the Sisig is cartilage from the pig ears and also since it is served on a sizzling dish it the pork skin and meat become crunchy as well......:) Glad you enjoyed it!!! Try pork adobo, or chicken and Lechon Kawali and Kare Kare.......:)) Also order Garlic rice!!!
