Hi, I was in "isolated selection mode" to select and delete the faces. Then, pressing slash, I exit isolated selection. Remember that I duplicated the balloon object, that's why I have a copy of it. In the video I use the term "unhide" but it would have been more correct to mention the isolation mode, I guess. let me know if this helps, ok?
Great video, thank you! I've encountered an issue with cloth sim tho: my balloon pieces shrink in a weird manner every time I run the sim. I suppose there's something to do with the scale of an object. Do u have any ideas how to fix it without applying scale transformation so it doesn't mess with the key frames?
Not sure what you are asking me, sorry. When you have a selection of faces and you want to delete all the others, you can "inverse" your selection with "CTRL + I" and then, delete them. Let me know if this helped, good luck!
Hi great video. I have a problem, every time I set origin to the surface of the balloon part it moves to the centre of the original balloon. I cant figure out why.
it also helps adding a location keyframe to each piece of the balloon right after you created it. You'll have to adjust keyframes later, but at least you won't have to move those pieces manually back to their spots.

Mmmm... difficult to understand from here. Be sure that your separate parts are not inside some hierarchy. If you can, try giving me more details.
