Healthy Banana Pancakes that are only a few ingredients, dairy-free and gluten-free too. They are so easy to make and absolutely delicious. I am sure you have been seeing me enjoy them on my stories so I wanted to make a recipe video for you all. I nailed this version out of the few I tried and personally liked it the most. This recipe makes 7 mini pancakes or one portion so feel free to double or triple it. You will need:
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1 ripe banana
    1 large egg
    pinch of salt
dash of pure vanilla bean paste or vanilla extract
1/3 cup oat flour - see notes below
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Please note: If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flower like consistency. I did use rolled oats the other day and I personally like this texture way more as it’s definitely more fluffy and less mushy.
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a bowl mix the first four ingredients and make sure your banana is nice and mashed. Add the oat flour and incorporate until you have a thick batter. In a pan on medium heat add some cooking spray and let it heat up a bit. I made mini pancakes because the smaller they are the better they will cook. Cook them on each side for 2-3 minutes or until golden. Enjoy with any toppings you love and follow for more.

I tried it an it ir really nice! I would recommend to anyone who loves banana, but if you dont like bananas, it is very bananary so be warned (edit : ok yes ik this is obvious but before you write a comment about it, just stop, take a deep breath, calm down, and ask yourself, is this actually important, am I really getting this worked up over bananas?). Also I would add baking powder if you want more of a pancake texture ❤

I’ve done this for years with no floor. Two eggs per banana. 1/4 to 1/2 teaspoon of baking soda. Cinnamon. It might seem like too much egg, but if there is any less it won’t stay together well. Love this for a very healthy breakfast alternative.

You can also make these without eggs. Just banana, oat flour (or oatmeal ground in blender) salt water or plant milk of your choice. I also add a little oil to mine. The oatmeal and banana is viscous enough to bind on its own. This recipe is vegan and unleavened for anyone who wants a sweet treat while fasting. ❤️

I’ve been making these since I was a kid! You can just use straight up regular oats if you don’t have oat flour or you can grind the oats up yourself. There’s all kinds of quick and easy variations you can do from there like adding chia, flax, protein powders, etc. this also works with plantains if you have those lying around or any other veggie or fruit with a similar consistency when cooked. Sweet potato “latkas” made like this were one of my faves growing up. Also squash and zucchini work great. They are super good warm with some Parmesan or other fave cheese mixed in or cold with a cream cheese spread and everything bagel seasoning or just a dollop of sour cream with a little hot sauce or whatever you prefer. PERFECT for kids too!!! Super easy way to get them to eat their veggies plus you can make them into shapes and they are fantastic for on the go snacks cause they are small, hand held, and they aren’t messy. Yum! Definitely encourage everyone to try this out a couple different ways. It really is an awesome healthy snack that’s super easy to make. I usually throw together one breakfast version and one non-breakfast veggie version at the beginning of the week and I just pull the batter out of the fridge and cooked it up for an easy meal. Or I will make them and freeze them and you can pop them in the toaster or microwave for an out the door breakfast when you really need something in your stomach but don’t have the time. Plus you won’t feel quilts about handing one of these to the kiddos for an extra little snack because it’s good for them! Bonus points if you purée a little spinach or avocado and toss it in there to get some extra greens or iron in! Lol
Also you can sub out the oats for things like tapioca powder, arrowroot flour, etc if you have celiac or an allergy or something. I’m not kidding when I say there’s like a million different variations you can make to tweak it to your liking. Oh grits/polenta works instead of oats in a pinch as well but they will be a little more fragile and will crisp up more than with other flours
