Today we're going to do a deep dive on "healthy whole grains". Are they really healthy?
You'll often hear that whole grains have 2 to 3 times more fiber than refined grains. The problem is that grains don't have a lot of fiber to begin with.
Even brown rice only has about 4% fiber. However, 1 cup of spinach has 50% fiber and only 4 g of carbs. It's important to get your fiber from vegetables, not grains.
Many people don't realize that products with whole grains often come with refined grains, refined sugar, and different chemicals. When whole grains are ground into flour for these products, they also lose nutrition just from this process.
80% of the grain in a flour-based product made with whole grains is starch and will spike your blood sugars. When starch is heated, ground, or processed, your digestive enzymes turn the so-called healthy complex carbohydrates into simple carbohydrates (glucose molecules).
The big problems with whole grains:
    1. They're high on the glycemic index
    This will:
    • Affect your blood sugar
    • Affect your mood
    • Affect your cognitive function
    • Cause weight gain
    • Potentially lead to a fatty liver
    • Spike your cholesterol
    2. They're high in phytic acid (an anti-nutrient)
    This will:
    • Block various minerals
    3. They contain gluten
    This will:
    • Cause gas, bloating, and inflammation
    • Potentially cause SIBO
    • Potentially increase your risk of developing allergies or Hashimoto's
    4. Wheat contains glyphosate
    This will:
    • Affect your microbiome
    • Potentially increase your risk of celiac disease
    5. They're fortified with synthetic vitamins and iron
    This will:
    • Cause them to sit for longer in your gut
    • Expose you to types of vitamins that the body is not designed to absorb

I believe that the situation is as follows: People have been eating those and similar things for centuries without any issues, but so many things have changed over the past 100-300 years - things that changed the quality of our plants and foods and the way we prepare or consume foods, which aside from lifestyle changes etc., resulted in mankind developing unknown, new illnesses and allergies and whatnot.
Those are the collective consequences of our all's mistakes and ignorance.

My dad is a very sharp, slim and healthy 92 year old who still drives, uses a computer, goes up and down the stairs in his home many times a day and spends as much time puttering in his garden as he can. His diet has only ever been mediterranean based with lots of olive oil, and with every meal he will have a piece of bread, total three a day, whether it's white(his favorite) or multi grain. The only supplement he has been taking for years now is fish krill, omega 3. Am I going to convince him to change to no bread or pasta now lol? No. His sister died recently (from a fall) at 95.5yrs,same diet. But processed and fastfood was never part of their life or ours.

Some years ago, a nutritionist insisted that I needed whole grains in my diet, even when I tried to explain that I experienced a lot of issues with whole grains and actually did a lot better when I restricted their use in my diet. Even when I presented her with the research that existed regarding low carb and keto diets, she dismissed them saying they were fad diets. That was my last visit to her. I continued doing my own research on the internet and following a keto and intermittent fasting lifestyle and all my health metrics have dramatically improved. Thank you to channels - Dr Berg, Dr. Sten Ekberg and Thomas DeLauer.

Thank you for ALL the time and research you've put into finding out this vital information and explaining it to us. I have literally watched ALL your videos over the past 2 years since I discovered you were here and your information has been 1000 times more helpful to me and my health than all the medical doctors I pay big bucks to visit. I've struggled with Insulin Resistance my entire life (and I'm old !) but I only have known what it is that I'm dealing with the past few years. I've made progress but still struggle. I'm currently dealing with high blood pressure that I haven't been able to bring down very far with natural remedies, so the MD's started prescribing pills and I developed allergic reactions to ten of them...yes 10...and now am on the 11th drug, which is causing other issues but not lowering BP. To bring a long story to an end, I was at the ER today for extremely high BP and nobody knows what made it spike or return to a decent, although not normal, number today, but the hospital sent me away with literature telling me I should be eating 8 servings of whole grains, 5 fruits, 3 nonfat dairy items and 3 protein choices every day, but I should avoid fats and salt AND I was stunned to read "You don't have to deny yourself sweets. You can have one small slice of cake or pie, 2 or 3 cookies, one scoop of ice cream or one 1/2 cup of pudding five days of the week." Oh, and never go more than 3 hours without a snack because you'll get so hungry you will overeat. So basically they gave someone with Insulin Resistance and a borderline glucose level the instructions to become diabetic by tomorrow. With the rate of obesity in the country growing on these "balanced" diets, where is the disconnect that makes medical doctors continue to spread this awful info to patients?

I quit smoking a few days ago. Not drinking for a few months either to detox. Went out last night with friends and had non alcoholic drinks at a bar. Drove home and considered fast food but remembered all I've learned on this channel. Went straight home instead and made a sandwich with all healthy ingredients. A handful of cashews too. Will be switching to pecans today as they're also tasty but have a better profile. It was delicious. I know carbs aren't particularly good for you but this was a huge step up for me. Check out Dr. GREGOR. And there are a whole group of health conscious people who eat whole grains and no refined grains. Yep no pasta, bread or pastry of any kinds. I have a pot of steel cut organic oats on the stove right now. Add 2 tablespoons or fresh ground organic flaxseed to reduce the glysemic effect. I have been tested for celiac and gluten sensitivity 4 times, the last time I was asked to eat more wheat leading up to the test. I ate a half a bag of whole wheat flour ( garlic bread, cinnamon buns, pizza) and they did biopsys and found I had no sign of gluten sensitivity. Everyone has there own amune system and the lectins that trigger a response in one person can have no effect on others. There's a test for food sensitivity, but none of the doctors I've seen will authorize it, as it might help me solve my health issues and put them out of a job.

Bakewell Slice, Manchester Tart, Apple crumble, millionaires shortbread etc etc...
I have made some of the Keto desserts and I wasn’t disappointed but almond flour and sweetener are very expensive to buy in the UK.
I have HIIT twice a week when I go to ice hockey training so at this point in my life I’m benefitting from the fasting and the HIIT keeps the excess carbs being used so I don’t get over weight.

@@robinkelly7787 Looking back prior to October 2021 I see that probably 75% of my daily intake was carb and sugar laden and vegetables were possibly two or three times a week depending on what meals we had if we got time to make a quality evening meal.
A lot of sugar snacks, lots of pasta and rice and consuming a lot of bread based products like eating buttered toast, crumpets and bagels regularly. Cereal every day, mostly minimum of 70g in the deep ikea bowl with lots of milk, occasionally porridge, plenty of crisps, milk chocolate based treats, multiple home made fruit crumbles throughout the summer so dessert every night.
I’ve started fasting last October, eating a minimum of 2 eggs every when I get chance (sometimes with rosemary, basil, oregano and paprika plus Himalayan pink salt), with the following vegetables steamed - spinach, bell pepper, garlic clove, courgette, cucumber then covered in butter on the plate and then add crinkled pickled beetroot.
I only drink water most days anyway but now occasionally (maybe once a fortnight) I’ll have a blended lemon in water, if I have any throat or nose issues I’ll have a hot lemon and ginger at night or make ginger milk in a pan.
I barely drink milk except for a post ice hockey training nesquik milkshake to reduce the wind down time before bed since I train anywhere between 8pm-12pm on a Friday and Sunday evening.
I have started taking vitamin D minimum 10,000 IU most days if I remember to take it at a good time before I might consume some pro-biotic yoghurt which is once or twice a week if I remember.
I eat salted pistachios, salted cashews and salted almonds now pretty much daily. I have also cut down my water intake to between 1-2 litres whereas before I used to have a 1.5litre bottle I used to refill from my filter tap and I’d have anywhere between 1-6 litres a day, especially in the summer.
I’ve never bothered with alcohol and fizzy drinks are rare, I took myself off those when the dentist told me at 8 years old I’d have no teeth at the rate I was going.
I have never liked or consumed coffee and I stopped drinking tea when I was a teen, never liked it and it was very milky and full of sugar so I dropped that.
As a side effect of fasting I have unintentionally lost around 10Kg in the 6 months since October 2021. I was down to this weight in January pretty much.
I’m still susceptible to cold and flu but I’m not doing Keto so I won’t have the purported super immunity that is afforded by having little or no sugar feeding the bad stuff.
I mainly decided to make the change by accident because I’d seen some Dr Berg videos in September 2021 and I started a job in early October and didn’t have food with me and I’ve just kept going to work without food and eating whenever I get home between 2pm-6pm.
I do have weekends occasionally where I’ll break fast earlier like 10am.
I also still have desserts before bed like sticky toffee pudding with Madagascan vanilla custard because my partner isn’t doing any fasting or dieting.
I’ll still be having crumbles through the summer because I’ve got 2 pear trees and 5 fruiting Apple trees as well as 2 younger trees that will be productive in the next few years so I’ll be consuming most of those as well as the rhubarb, raspberries, loganberries, tayberries and blackberries.
Well done for making it this far 😅

The only things that have gone wrong with me is that I started developing a smallish tummy about 10 years ago, and this year I developed arthritis which limits my ability for brisk walking and other activities. However, I have found that if I start to feel weary a slice of bread and butter picks me up quite well. I do not go overboard with carbs, but they do help me. On the brighter side I have several birds who have been hammering on my window in the morning for many years, and although they do not get over friendly, they do appreciate the fact that I serve them a few slice of bread chopped up in my kitchen whizz. Yeah I hear you, I'm no expert at all but what I get consistently from people who study nutrition literature based on actual tests made on people is that plant based is supreme over all diets for optimal health and its sustainable unlike ketogenic which is a good way to get healthy and lose weight in the short term because it eliminates a whole lot of unhealthy processed foods that cause sickness and weight gain. But as I said I'm Christian and what convinced me that plant based is best is Genesis 1:29.

I did some research some years back and came to the conclusion that true sourdough long fermented grains are a completely different food from the commercial crap on most shelves these days. If you compare the glycemic load of fast rise yeast bread to sourdough there is a significant difference in the insulin spikes (sourdough's is almost non-existent and fast rise is basically sugar). There is also evidence to suggest that turning sourdough into rusk (or croutons or what have you) would additionally reduce the glycemic load AND increase insulin sensitivity (a good thing generally) by converting up to 25% of the sugars in the sourdough bread into resistant starch. If you long ferment and then further process to rusk/croutons you end up with something like a 1:2 protein to sugar content whole food, as opposed to a 1:4 protein to sugar fast rise toxic cocktail.

Dr Berg brought up the point of grains being very different now than they were in the past. They may have lived and thrived in some ways but I know they suffered in quality of life. Egypt ate lots of stone ground bread and certain tribes of Indigenous Americans ate lots of stoneground grains; you can see in their dental records that they suffered various maladies from consuming so much grain. I believe there was even evidence of many Egyptians suffering from symptoms of insulin resistance and diabetes.

I can definitely concur with this...I'm 41 and have been weight lifting since I was 18. My pre-workout usually consisted of a big bowl of Grapenuts, Chex, Raisin Bran etc. In the beginning I got tremendous energy...until around maybe 27-28 when conversely it started triggering a energy "crash"/repeated urination trips, elevated blood pressure, waking up at night "bone dry" thirst despite always drinking plenty of water. I literally had no choice but to start moderating my carbs to continue being muscular/fit. One thing I will say good fats provide more "slow" energy in my experience, I'm Def not as explosive...but I'm physically stronger than I ever was in my 20's.

Little did I know that Phytic Acid may have been responsible for the cause of osteopenia and/or osteoporosis as those mentioned minerals are not absorbed. But there is a question: why in some websites they say that Phytic acid is an antioxidant and actually helps bones and prevent cancer? I am confused in dealing with foods that have that anti-nutrient. I am a fan of Millet and Quinoa, but I see that Millet has some Phytic acid, and Quinoa Flour (which I DO NOT take) may have it as well. Is there a way how to take out the phytic acid from nuts and grains? Or, is there a series of supplements or vitamins that counteract the effect of Phytic acid?

Stay with me that weight loss is due to a caloric deficiency that wasn’t possible when you were piling on carbs. People don’t understand it’s not these carbs that are bad its the associated eating habits with them. You lost weight because you were eating less than you expended in this case through less food and fasting.

I enjoy the comments as much more times than not....they back you up bigtime! As a trail runner, I do have some whole grain pasta however the bulk of the dish is garlic, Broc and Cali and also sardines but I do go out and burn it up. (2-4 hour jaunts) I just stopped with melatonin and Var root and I do notice...less groggy-from a pervious video.

Hey Dr. Berg, any advice on what to do about scalp residue? I find whenever I scratch my head I have some excess residue under my nails and I feel like this may be contributing to some of my recent hair loss. Even if it’s after I’ve recently showered, my scalp seems to produce some unnecessary flakes and stuff on my head. The skin on my head is not the healthiest I imagine and I want to master scalp health. For whatever reason, this was not an issue I had 2-3 years ago. My diet is unchanged over that time (I indulge in the occasional treat and sweets but mostly it’s pretty solid: eggs, cheese, avocado, chicken, protein, large salads) so I’m concerned Bc I don’t wanna lose my hair! I tried your scalp serum and so far have found not much of a difference 🙁 but I want to believe it will work!
Anyway, point is, I think my hair thinning has something to do with the condition of the skin on my scalp and feel like addressing this excess sebum and flakeyness will be helpful. Any tips? 😅

Thank you for sharing. I had severe bloating for yrs despite being OMAD because I was eating whole grains. Since I turned to keto no more of that. 🙏🙏🙏 Maybe you can do "underweight" as well? I'm just curious how low can we go without harming ourselves. I'm losing too much weight on keto so I'm forced to eat twice a day to maintain but I'm still losing. I was never fat. I feel healthier and happier with keto diet but I'm just curious and concerned about being underweight. This standard BMI just simply confusing. I hope you can share some advice.. Thanks 🙏🙏

Thank you so much for your wonderful videos with so many precious informations . Watching at this video I started asking myself if is possible that you can make a video about how carbs work in the children’s bodies ? Because especially in the early ages ( elementary school ) it’s so difficult that we as parents can make them eat the healthy food ( they tend to prefer pasta , rice , pizza etc. instead of the vegetables ) . I wandered is it dangerous for kid’s to eat so many carbs , is their body processing the carbs in the same way as adults , or because they are growing up it is more likely their body can accept better the carbs ?

In the early 2000s, my X had a "class" on how to eat as a diabetic. The PA that was hosting told everyone that they should be, not only eating several small meals but that breakfast should include no more than 15 grams of carbs.
I asked how upping carbs by 100% would help anything (from the no breakfast intermittent fasting pov) and never did get a good answer - because there isn't one.
I remember it was something about maintaining a certain level.. not crashing or some crap like that.

These dietitians and school teachers have no real knowledge. What I’m assuming is that they think that anything with a GI lower than that of glucose is classified as being able to “control diabetes.

I ate only white rice for two months as a college student. I ate once a day. I put nothing on it other than the salt it was cooked with. I only drank water as well. I would have to travel by foot or rollerblade at least 2 miles a day if I traveled that day. To get to classes.
It maintained me. I did lose weight but not much. More from the exercise. I felt for all intents and purposes normal.

Your ability to eat once a day, as well has only doing it for two months, was most likely the reason for you not seeing adverse effects. When you graze on grains all day and don’t exercise for multiple years and even decades (which is what everyone does), the effect is extremely prevalent. Alongside vegetable oil, it is the key part of diet thats causing metabolic syndrome, acne, rosacea, IBS and cancer.
