    You can make a good substitute for buttermilk with regular milk. Stir 1 tablespoon lemon juice or vinegar into 1 cup (240 ml) milk. Let stand 10 minutes at room temperature and it's ready to use.

    Yes, you could use a different fillings. A ganache sounds delicious.

    I was planning to bake macaroons but after watching your video on whoppie pies I have changed my mind. You should have your own tv show, thanks for all the fab videos I want to bake every day. I would if I didn't have to work full time.

    Hi there.. juz wanna feedback that d recipe is marvellous.. I tried it and my husband n 3 lil boys love them. I accidentally made dem a lil tad bigger thenmit shud be so my 6yo called dem whoopsie instead of whoopie.. tq soo much for such wonderful recipe ♥♥♥

    I love whoopie pies I make them a million different ways but my fave is chocolate with a chocolate ganache filling sooooo good!!!

    The scoop I use measures about 1 1/2 inches which is about 4 cm.

    Dutch processed cocoa powder, also known as Alkalized unsweetened cocoa powder, is treated with an alkali to neutralize its acids. It has a milder flavor than regular unsweetened.

    The sugar in the whoopie pies is granulated white sugar. The sugar in the filling is confectioners (powdered or icing) sugar.

    I store the finished whoopie pies in the refrigerator because of the cream cheese filling. You don't need to refrigerator the batter before you bake the cookies.

    Because the filling contains cream cheese, I always refrigerate the whoopie pies. I've never stored them overnight at room temperature.

    must whoopie pie be kept in the fridge at every interval when the batches is baking? Can I reduce the icing sugar for the icing frosting. Why is my red velvet break on the top? Is it my fire too hot? I followed your instruction for the temperature. Thank you.

    Hi Stephanie!! I just made this recipe and the taste is amazing!!... In my country I don't have buttermilk, so I used the milk substitute you suggest(milk and white vinegar), but the batter became a little bit liquid/thiner than yours, and cookies stayed thin and didn't grow as yours... Do you have any suggestion so I can get those beautiful whoopies?

    I'm sorry, but I'm not sure exactly how long. You want to bake them until a toothpick inserted into the center comes out clean or until when lightly pressed, they spring back.

      For 1 cup buttermilk, take 1 cup of milk, stir in 1 tablespoon lemon juice or vinegar and let it sit 10 minutes at room temperature before using.

    i really want to make this but can you make it without the baking soda? i was wondering if you can just put more baking powder in and don't use baking soda.

    You really need the baking soda (bicarbonate of soda) in this recipe because of the buttermilk. So I don't know how the whoopie pies would be without it.

    Hi,
    I was wondering why both of my attempts to make these whoopie pies have gone wrong.
    The first time I tried these I used a doctor otecker gel food colouring when I coloured the butter milk it came out a light pink colour I then added more and more and the buttermilk was still pink I ended up using the whole tube of it and it didn't turn red at all I still added it exactly how you did to my batter and the batter came out a reddish brown colour but still very brown I baked them and they were totally light brown, they also tasted very tough and bland. Which I could not understand as I used the exact same ingredients and method as you.
    The second time I used a liquid food colouring that was a store brand in the uk, but the only difference in ingredients was that my unopened buttermilk had expired by two days I still used it as I thought it would not make a difference but not only were my whoopie pies NOT RED but they also tasted very bland again. Please give me some advice at what to do because I did measure and use my ingredients as well as mix them exactly how you did. Is it because I live in the uk?

    you can also use a tablespoon of sour cream for every cup of milk. I think it gives it a little more thickness and it tastes more sour like buttermilk
