    I would love to see a how to video on the canning process next year. I'm new to gardening myself so the whole preserving and dehydrating process is overwhelming. It's impressive how much you were able to save while growing and working/studying full time!

      It can be so overwhelming! I think the best thing is to take it one step at a time. Make a list of all the things you would love to do, and then check each one off as you have the time, focusing on the things you’ve done, and not the things you have left.

      Aww thank you!! One step at a time. The amazing thing is there’s always more to learn so you’re never done learning.
      If I have a lot of tomatoes, I research how to make sauce. If I want ketchup, I research that. I do all the research as the need arises and over time I gain a lot of new knowledge that I then share!

    We are plant based and it is great to see a vegan homesteader! In the near future we would love to be at least 80% self sufficient, we are a family of 6 and have a 57 acre farm, love to get tips and encouragement from other vegan homesteaders!

    We have a short growing season also but you are right, you can still preserve plenty! Great video!

      Yes definitely! We have a full orchard of 25+ trees but they are babies so it will be some time 😊

    Here in Finland i rely much on growing a huge amount of potatoes, which is almost the only crop that every year yeilds like crazy, no matter what. I have an amazing root cellar where the taters keep in perfect condition till mid May. Even my chickens get their share of boiled potatoes in the winter..... so everything else that the garden gives, is like a bonus 😅 normally lots of apples, currants, summer squash, nettles, dandelions, chard, onions, garlic, random root veggies... its really not a big deal growing enough veggies in a cold climate to be selfsufficint in those.. you just gotta figure out what works in your growing conditions and how to preserve it.

    Cut the cayennes back and put them in a large pot over the winter, they will grow more peppers faster when you put them back in the ground the following year!

    I just want to tell you how inspiring you are. Everything you and Chris are doing on your homestead is what I have always wanted, as well. It’s so great to watch the videos and 1) see that it really is possible and 2) see what steps to take to get there.

    I am so proud of you and I could totally live off of that. I just ate my dinner of roasted sweet potatoes and butter nut squash and a tiny bit of rice with cabbage on top. Yummy 🤤

      You can totally do it! Takes a lot of commitment and creativity with time management, but I was able to do it working full time and taking 3 hour courses in the evenings. 👍🏻

    Hey! I think your garden is very neat and I love how much effort you spend to grow a lot of your own food. However, I would look into how to properly can vegetable broth, as it isn't suitable for water canning. Vegetable broth isn't acidic enough to stop the growth of botulism. Botulism can kill you in small amounts and isn't detectable through appearance, taste, or smell, so it's important to make sure you are safely preserving each type of food.     Oh my goodness!! This is what I need for my large family..... we never save any just eat it all...so this year I will make everything bigger!! May I ask how much you guys spent?? I can see how much you guys got and you mentioned that you are off it all summer almost 80% so amazing!! How do you store your potatoes and onions etc??

      This was our first large garden, I imagine we spent around $500 on seeds, soil, canning jars, other equipment, but it could be anywhere from $300-$800, we really didn’t spend anywhere near as much as we saved! 😊

      & we store our potatoes and onions in our finished and heated basement (low heat, around 55 degrees) 😊

      @@GraceFilled well, we used to spend about $600 a month on groceries, now we're at least half that, around $300, so maybe around $3600 a year as of now? In the summer we only spend about $200 a month on groceries, so could be more like $5000 a year

      Next year instead of the $500 you can reuse everything and mabye spend $50 in seeds??
      We are looking into a mini horse, 4 chickens and location for our beds.... We are soon leaving .03 acres for 3 acres so I'm excited but doing the research now on what to expect. We will go from 60 ft of growing space (6 raised beds) to probably 1/4-1/2 an acre similar in appearance to what you did at the community center ....I love beauty order and symmetry lol..... However, my top priority will be how to grow the most possible. Its a lot financially starting out fresh this year (spring) but it will save

    My mom (grandma who raised me) we live with (she can't live alone we moved here to help her and live in a place with more space. Helps us all on bills and mom doesn't want a stranger in her home she asked us to come). She puts the onions in the fridge thinking it's preserving them but goodness they don't last long in the fridge how do you keep them preserved for use for so long without getting kinda rubbery etc.

      Leave the dry skins on the onions and store them in a cool dry and dark place. They will be fine outside the fridge or freezer, there are lots of lists online on what produce to put in the fridge, freezer, vs. what to keep outside of either. Hope this helps! They will last us many more months just in our pantry 😊

      @@SunshineFarm Yeah I keep leaving them out intentionally since it seems to make them weirder in the fridge but I look again and they are in there drives me nuts I just wish I had some alternative to say we should do and apparently leaving them on that spot on the counter is just going to end up with them in the fridge lol. These are store bought but still I'd like them not to go to waste and want to grow them next year and if we waste those it might even make me more cranky lol.

      @@SunnieDIY definitely don't leave them out in the open. I had the same issue. Have you tried an old bread bin or recycled food tub in a less frequently used cupboard . If they don't see them they can't go in the fridge.

      I cured them well, chose varieties known to have long storage, and kept them in a dark place. 😊
