Only recommendation I’ll make is use a cheap Marsala wine. Using expensive ones didn’t produce a better meal. But did teach me that sweet Marsala is better than dry.
A. I think Vidalia’s are superior for this over shallots B. Use a lot more wine, it’s called chicken Marsala, not chicken stock Just my thoughts, looks great though otherwise.

For a quick clean a desinfectant is fine if everything he chops after the chicken/desinfectant gets cooked at high enough heat any bacteria will be killed anyway. Afterwards you clean it with hot water and soap, can even boil some water and pour it over the board first to kill any bacteria.
I never seen cream added my family owns a really famous Italian restaurant where I used to work as a sue chef.flour egg was flour it's look like you used rice flour.

How have you made your stainless steel pan nonstick?
It's not non stick, you can see the bits sticking to the pan after cooking the chicken, which is why he de glazes it.
To make a steel pan non stick you have to preheat it before adding fat

I have a separate cutting board for meat. One side is chicken, the opposite side for beef and pork. Wood is too porous and easily cross contaminates.
And? If you're not eating it raw but cooking it off, what diff does it makes what protein was on what board?
