- There are many Peking Sauce recipes on the internet that are complete NONSENSE - virtually all are a version of hoisin sauce - or using hoisin sauce and pepping it up! I haven’t come across one recipe that shows you how to make real Peking Sauce. There is one Secret Ingredient that is missing from all the recipes posted, Tian Mian Jiang is a sweet fermented wheat paste, unlike the Hoisin sauce which is from soybean. If the recipe does NOT contain Tian Mian Jiang IT IS NOT PEKING SAUCE!

Ingredients
¼ cup rice wine vinegar
6 tbsp Golden syrup/honey / brown sugar / white sugar
2 tbsp Shaoxing wine
½ tsp sesame oil
2 tbsp Tian Mian Jiang - fermented wheat paste
1 tbsp soy sauce
1 tbsp dark soy sauce
1 tsp oyster sauce
80 - 100 ml ketchup
100 - 125 ml water
1 heaped tbsp corn flour

Rick, I’ve never been so excited to replicate this sauce. It is exactly what I’m after looks identical to the Asian restaurants that makes it for the Peking duck!

I have been chasing this shredded beef in Peking sauce for around 20 years and would drive from Melbourne to Adelaide's chinatown to eat it, Thank you I hope to make it in the next week and will report on my effort. Its interesting that for the whole time every place as ask says its Hoisen sauce I need well now I have the answer and the secret, thank you ❤

My wife ordered Crispy skin Peking duck in a "red wine Jus" Last weekend. I HATE DUCK! But I tried a bit dipped in the "Jus" I'm sure there wasn't much red wine, BUT it was amazing I would eat cardboard gumboots with this sauce/Jus! I'm gonna try this because I think you're on the money. My wife asked the chef; "what was in the Jus? " Duck bones, liver of a horse kidney of a cat filling up the sausages....." chef wouldn't say . Neither would I (Trade secret, It's your lively hood.) I'll keep y'all posted.
