@Flo Lum - I bought a cookbook for myself a few months ago & instantly connected with it. Your format is awesome. Various Meats, rice...so easy to manage. (I had them all spiral bound and plastic put on front and back to be easily washed.) I can not imagine how you could improve on it, but I will eagerly snatch the new one up asap. It's so fun to help these young married children hone some good cooking skills. 1st you have to have the tools...thx.

When I was a kid, long before Shake and Bake, my mother used a paper bag to put the flour and spices in then added the chicken pieces. Then it was up to either my sister or myself to shake the bag until the chicken was coated. Dredging with flour, salt and pepper in a pie pan was for pork chops, liver, etc. I still do it that way. Funny how this video reminded me of why I do that.
When I fry fish, or chicken, I put spices, such as pepper, garlic salt and seasoning salt in with the flour and put it in a gallon size ziplock freezer bag and shake my chicken or fish in that. I then date and label the bag and put it in my fridge to use the next time I fry fish or chicken. I have also made a mixture that had grated parmesian cheese in it for fish, and my boyfriend loved it!!!
I remember using shake and bake with my mother.. that was when I was really young.. long before she became the amazing cook that she was she made such a mean fried chicken! But I remember how excited she was when the shake and bake for pork came out.. no more breading the pork chops and the seasoning tasted different!

You make us novice American aficionados of Chinese cuisine believe we can cook Chinese recipes similar to the wonderful Chinese restaurants found in the Chinatown areas of our nation’s large metropolitan areas. I discovered my love of Chinese food in WashDC’s restaurants. I’ve passed this along to friends who enjoy Chinese.
Walnut Shrimp is my favorite, and now I can make it myself. Thanks Flo.
Flo, on the shrimp -- check the underside for an additional vein (digestive tract) of the shrimp. It should be visible. I find that all the shrimp I purchase (usual sizes of 16-20 or 21-25) always have the vein both sides, so I always remove it.
I use sweetened condensed milk to make rice pudding with cinnamon and raisins. Last year, at Christmas, I added craisons (dried cranberries) and served it in individual bowls with a sprinkle of green cookie sugar as a garnish. I expect the larger cookie sprinkles would work great also. The cinnamon was already mixed into the pudding. It was very pretty and festive, as well as great tasting!!! PS, For Valentines day I could see using a heart shaped stencil to put a red cookie sugar heart on top, or a green four leafed clover with green cookie sugar for St. Patrick's Day, etc. It would be fun to see what someone could do for the other holidays.
That almond chicken looks interesting. I've never eaten it since I spent most of my life in a Midwestern region that had its own Chinese-American dish very similar to it. The dish was so popular in SW Missouri that there was no need to offer almond chicken. It is called Springfield-style cashew chicken. It was developed by a Chinese chef who immigrated to the US and had to figure out how to get locals to come eat his Chinese food in his restaurant.
He knew that Midwesterners like fried foods and gravy so he created his version of cashew chicken which was *nothing* like the more widely known dish of the same name. Thus the 'Springfield-style' but it isn't like the people in SW MO knew what that dish was either. Hearty fried pieces of boneless chicken, smothered in a rich oyster sauce gravy and topped with toasted cashews and scallions.
I grew to adore that chicken meal so moving away made it difficult when I needed a fix. I've been working on finding the best ratios for the gravy and making chicken with crispiness that survives. I'm getting closer but still not quite up to par with Mr. Leong's tasty dish.

Flo, I discover a truck to remove the heat from your hands after handling any fresh chilies. 2 tsp of baking soda on the palm of your hand. Squeeze 1tsp of dish washing soap. Rub hands together with both mixture for a minute. Rinse and hands are go as new.❤

Thank you for these recipies! Some of my favorates. FYI the chicken did come first because God created the chicken then the chicken laid the egg! Also, I would use the leftover condensed milk to make ice cream without an ice cream maker, make Dolly Madison bar cookies, and to use in iced coffe!

Love your recipes Flo. There is a tool I guess you'd call it, it's called a Better Batter Pro and it's for breading catfish but I use it for breading everything and it makes it so much easier than using the ziplock bag and you can do dry breading or wet breading either one. Just make sure you get the lids on tight before flipping.
