The technique of browning the sugar properly will get better with practise. There really is no need to add oil when doing this. Once again, personal preference and any type of sugar will do. Hi Mellow and Co, great job on the History of my country 👍 Just a few Chef tips, Marinate the chicken the night before with the Matouks seasoning, see if Matouks has without the scotch bonnet, creates a greater flavor in the chicken. Sprinkle the sugar in the pot so that you get an even caramelizing of the sugar, then add the Chicken alone, allowing it to grab the color of the caramelized sugar. Good job with not burning the sugar which is key to the color, flavor and sweetness of the dish. Don't add any water at this point so that the color remains on the chicken and the chicken soaks up the flavor. Measure two parts water to rice if you use parboiled rice, so that you won't need that much Coconut milk, fresh coconut is nice too. Try to get Pigeon Peas next time. Use pumpkin and carrots instead of all the bell peppers etc, and add them with the water, no need to cover the pot whilst cooking, it may make the rice soggy. Good job on this dish, most people take ages to master. Trinidad and Tobago is full of culture and great food! Come anytime!

Trini living in Canada, I cooked this many times for pot luck lunches and international food days at work, it was always gone before anything else was even touched at the table. It was the most requested dish at any event I went to that included food. Good version and best substitutes. looks very delicious.

Glad to see you try your hand at making this dish 😉 You should try the more traditional recipe which excludes the bell peppers & carrots, but includes a bit of diced pumpkin, canned green pigeon peas ( not the brown processed pigeon peas ), par boiled rice and only fresh seasonings including the pimento chilies ( which add flavor but not heat ) and chadon beni ( similar to, but stronger than cilantro ). And use less coconut milk which should be added in at the last 10 mins of cooking time. Your finished dish should be moist but airy and a bit fluffy, not wet with that porridge like texture. Despite this sounding like criticism, i truly enjoyed the content and wish you safe travels and endless adventures ☺👍

@@MellowCo Just saw a comment that you live in Florida.. If you can find a Caribbean supermarket, then they’ll have everything you need. I think there are a few in Orlando, Ocala and other areas. It’s worth finding and then you’ll have everything you need to make Trinidadian and other dishes.
Thank you for trying our dish. It was a great attempt! I especially loved the seasonings you used! Pelau is something that can be complex to cook if you're not used to it- even in our own country there are people who don't do it so well. 🤣Especially when we're just learning- it takes some practice. That being said: 1, Pelau is dark in color. So the burning of the sugar process is crucial because you don't want it too dark either. Maybe practice stewing chicken first or look at some videos where people are making that so that you can see what the sugar is supposed to look like before adding your meats. 2. If you can't locate dried pigeon peas, you can substitute using black beans. It's not common in Trinidad but because of its similar texture and dark color, it's a great substitute. Pro tip (If you're using canned- add at the last 5 -10 minutes of the cooking process so it's not too mushy. If you're using dried then pre-cook and add 10 minutes after the rice). The idea is that it remains the right texture. 3. Allow the liquid to evaporate a bit more

When you do you must go to Maracas on the north coast and have yourself and fried bake and shake. also choosing carefully one most popular street food "doubles" also to have a roti 😀😀😀👏👏👏👏however your pelau has too much water

Practice makes perfect, I remember once I did a pelau with black beans and lamb, just to be different and it tasted real good , next time add about 2 bay leaves and not so much coconut milk. This meal might become a regular with you, we cook it once a week.

Good effort but you needed to bring the sugar some more and cook the chicken alone for about 25 minutes then add the rice, peas veggies and coconut milk the dish would not have been as mushy. Check out Trini Cooking With Natasha pg

It needs to dry down some more. it is toooooo wet. that is not our palau it is toooo wet. it was to much coconut milk. please try it again. look at cooking videos that we have up on how to make it. Look at foodie nation . please . It will be sweet because you did not let the sugar brown properly.
Hi cool channel, I am from Trinidad..The country is basically only two islands. Just to let you know, you don't have to use brown sugar, regular white sugar will do too. Make sure you have enough oil in the pan when you brown the sugar.

U need to let the water dry down a little more and add your salt and other powder seasonings for taste let your sugar brown just a little more and defiantly no red beans bro

Practice makes perfect, I remember once I did a pelau with black beans and lamb, just to be different and it tasted real good , next time add about 2 bay leaves and not so much coconut milk. This meal might become a regular with you, we cook it once a week.

Good effort but you needed to bring the sugar some more and cook the chicken alone for about 25 minutes then add the rice, peas veggies and coconut milk the dish would not have been as mushy. Check out Trini Cooking With Natasha pg

It needs to dry down some more. it is toooooo wet. that is not our palau it is toooo wet. it was to much coconut milk. please try it again. look at cooking videos that we have up on how to make it. Look at foodie nation . please . It will be sweet because you did not let the sugar brown properly.

You forgot the oil. First, put the oil on medium heat, then add the sugar. Wait until it's black, then add the chicken.

Hi cool channel, I am from Trinidad..The country is basically only two islands. Just to let you know, you don't have to use brown sugar, regular white sugar will do too. Make sure you have enough oil in the pan when you brown the sugar.
